To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 遇上家裡沒飯開的日子,這晚下班後,我就獨個兒來到上環熊拉麵醫肚~店面不大,裝修風格簡約,卻不失日本風情。餐牌亦是獨沽一味賣拉麵,選擇不多,但重質不重量,這樣才能夠專注於食物質素之上。除了以上的常規款式,最近的期間限定款式是特濃芝士蕃茄拉麵。不過吃拉麵我總是喜歡選擇傳統一點,所以最後還是選了豬骨湯底。招牌熊拉麵 $85熊拉麵本身就已包括一塊叉燒、一隻溏心味付蛋及木耳絲,一上枱熱騰騰的拉麵便已經散發著陣陣濃郁骨香。豬骨湯底顏色乳白,湯身略帶濃稠,可以見到浮油不多,少了一層厚厚的油花,香濃但不油膩,食開日本拉麵的就會覺得這裡的湯底已算是清淡,不會因太重口味而覺得口渴涸喉。我選了1.5mm中幼麵,麵條幼細而吸湯,口感彈牙,不會煮得過軟,麵量對女生來說已經很飽足。火炙肥叉燒叉燒肥瘦相間,脂香滿瀉,肉質軟嫩不死實,加上表面經火炙後,帶有焦香味,稍嫌每碗只有一塊確實有點少 溏心蛋的軟嫩蛋白包裹著半熟晶瑩的蛋黃,一咬開正在流心中,滿溢香濃蛋味。另外亦加了$10追加紫菜。將紫菜浸湯後,充分吸收湯頭精華,木耳絲鮮脆爽口。枱上亦放有三款配料:芽菜、高菜和紅薑絲,給客人自行添加。
