卓鮨 Omakase 終於有機會一嚐灣仔廈門街的卓鮨, 店面小小的,更可以拉近與師傅的距離,果然不負盛名啊!這天的コースOmakase從精緻的前菜開始。先付3點的冰頭漬酸甜開胃,沢蟹超可愛的,香脆又鮮味十足;鯛魚明太子天婦羅外酥內軟,滿滿的魚肉鮮味,刺身三點選用了深海池魚、新鮮水八爪魚和大拖羅三種食材。深海池魚肉質鮮嫩,入口即化;新鮮水八爪魚以麻油和岩鹽調味,完美襯托出八爪魚的鮮甜;個人超愛油脂豐富大拖羅入口即化,。-吃完大拖羅記著吃片師傅自家醃的柚子大根, -酸甜清脆,解膩又開胃,在品嚐壽司之前可以先來清爽一下味蕾。-壽司絕對是卓鮨的重頭戲,卓鮨的壽司貫貫精緻,單單是看師傅高超的刀工和握壽司的過程已經很好看。必須要大推地金目鯛, 是金目鯛中的頂級的, -油脂豐富, 味道最濃厚;接著的間八肉質也緊實,鮮味甘甜;當然還有北海道馬糞海膽, 入口濃郁鮮甜,是海膽控必點!--除了壽司, 這頓Omakase的熱葷也豐富味蕾具層次海膽忌廉汁燒帆立貝, 海膽的濃郁和帆立貝的鮮甜完美融合,那個海膽汁的確超棒的, 令人回味無窮;-鰻魚天婦羅外酥內軟,鰻魚肉質也很鮮嫩;-鹽燒安格斯封門柳肉質鮮嫩多汁,充滿
