一揭飯盒蓋,炭香同蜜香齊齊撲鼻,「雙蜜豉香脢叉飯」一上枱就好搶眼。叉燒用咗脢頭豚肉,油脂分佈平均,外層微焦泛亮,睇見已經知火候啱啱好。入口先係蜜味輕甜,再滲出豉香微鹹,用炭烤過嘅焦香去收尾,味道層次一浪接一浪。

肉質咬口紮實之餘仲帶柔韌,唔會太肥,油香喺舌上化開,啱啱平衡晒甜味同鹹香。白飯揀得好,粒粒分明,吸咗叉燒汁之後更香更潤。配埋少少青菜,剛好沖淡甜膩感,節奏舒服又自然。

呢款叉燒飯最難得嘅地方,就係「火候」、「蜜度」、「豉味」三樣嘢啱啱扣得準。食落唔浮誇,卻耐人回味,像係一種熟悉而穩定嘅香氣記憶。成碗飯唔單止係飽肚,仲有份屬於港式燒味嘅自信與細節。
