「牛肉麵」作為台灣經典,耐不耐就飛轉寶島的香港人又點會錯過,連帶專門店也漸多,包括這間「鐵牛」,密密攻港。 門口的招牌寫著:「鐵一般的熱血,最原始的感動」,甚有台灣風的口號。我們好像很少說這樣肉麻的句子 XD 年初小弟遊台北期間,吃了不少米芝蓮牛肉麵店,對地道牛肉麵叫做有些心得。不論牛肉、湯頭、麵質、配菜等幾個環節,都是重要且互相呼應,缺一不可。 地道牛肉麵店少不了自助醬料架,放辣醬、紙巾、酸菜之類。「鐵牛」也有個,放醋、辣椒醬、鹽、豉油, 也齊備杯、水、紙巾等, 卻欠了牛肉麵的神髓:酸菜。對我這個極愛吃酸菜的怪人來說,是個何等大的打擊! 我光顧的是中環店,落地玻璃,非常光猛。窗台上放植物攞設,感覺柔和放鬆: 放眼看出去是中環街景,是「重慶森林」王菲與梁朝偉的那一段天橋: 麵店採用半自助形式。首先是入坐,由店員帶位: 餐牌看得出花了心思,做得像一本故事書, 賞心悅目。逐頁生動地介紹食物, 讓視覺帶動味蕾。 打開餐牌,除牛肉麵外,也有其他地道小食,例如鹽酥雞、夜市小吃等,做得像本地圖,有走訪夜市的感覺。 揀好食物,剔在點餐紙上,自行到收銀櫃檯付款。食物準備好後,就會送到你座位前。「招牌紅燒牛肉麵」$62,我沒有點牛筋,只淨牛肉,加杯「洛神花茶」$16。 先說優勝之處。牛肉是出色的,用了牛肋肉, 相比一般使用橫切牛𦟌,炆的更腍更入味。亦因為是肋條位,每口鬆軟且不失濃郁肉香: 每家麵店都會有自家湯底。這個該有用牛骨熬製,牛味頗濃,不錯。 酸菜的份量就太少,有些失望。酸菜實在是牛肉麵的其中一個重點,原材料價錢也不貴,卻好提香提味及帶動成碗麵的立體感。即使不放在自助醬料架上,落手也毋需太吝嗇,可以大方多放些啊 XDD牛肉麵的麵底,花款也甚多,例如有自家拉幼麵,粗條麵,刀削麵不等。 這個用類似日本的拉麵 (? !),顯得有點怪,掛湯能力不強,卻容易發漲發大,有改進空間: 開餐前望過少許網上資料,知道此店飲品一般比較甜,「洛神花茶」就較清新。在30度的炎夏,飲一杯微酸凍飲料,爽皮。而且洛神花能抗氧化和高血壓,比一般汽水健康: 當日是 6pm, 人流不算多,坐得舒服, 店員服務亦殷勤。返工返得累,真係流住鐵一般的汗。。。吃個麵坐一坐,看看街景 relax 下,在夏天涼涼冷氣來一刻柔情,也不錯。 continue reading

因為同媽咪一齊放假於是帶佢去豪食台灣野 聽朋友講呢間鐵牛嘅牛肉麵好好味 就同佢一齊試下七點幾去到爆曬場,等左一陣先入得。由於好肚餓,兩個人共叫咗兩碗麵加兩個小食媽咪揀咗推介既主廚私房牛肉麵黎到先飲一啖湯 好香濃既牛腩湯底 面都好彈口,煙韌、軟硬度啱啱好我就叫咗麻辣大塊牛肉麵 一上枱就聞到好香嘅麻辣味 加埋少少酸菜 辣中大一點酸 幾特別我更鍾意食呢個麻辣湯底 配面食一流因為兩個都太鍾意食牛,於是叫多咗個牛三寶拼盤小食入面有牛肉、牛腩同牛筋 基本上同牛肉麵嘅餸差唔多啱晒勁鍾意食牛嘅我哋三款我最鍾意食牛筋 好林好入味再嚟一個香口嘅鹽酥小拼盤有花枝丸、黃金梅子脆薯同埋鹽酥雞個花枝丸真係好好味外脆內彈口 如果可以想叫多一份花枝丸可惜食唔晒另外脆薯都好特別入面係番薯 外面有少少梅粉 食落去酸酸甜甜又炸又香口唔錯最後叫咗兩杯野飲 荔枝紅茶同埋芋香珍珠奶茶 荔枝紅茶比較甜 芋香珍珠奶茶甜度岩岩好,好香芋頭味總括而言 性價比好高,食物同環境質素唔錯 埋單每人唔使200蚊唔錯 continue reading

之前食過旺角既「鐵牛」印象麻麻今次就試試中環新開的分店餐廳主要賣主食和飲品別期望有台式甜品食台灣菜當然要吃它們的牛肉麵,試了原味湯底和蕃茄湯底兩款主打:《招牌紅燒牛肉麵 $62》湯底不油膩而且好香濃沒有太咸麵條口感實在,令人彼有飽肚感紅燒牛肉好腍身而且加入了雪菜吊更香和提味《鮮蕃茄牛筋腩麵 $69》牛腩比牛筋多而牛腩沒有預期中的軟腍亦欠牛肉味所以如果想吃牛筋的朋有可以另點淨牛筋一碟鮮茄湯底味道真實完全不會有茄醬或茄膏的人工蕃茄味此湯底味道天然清香吃麵連湯入口都沒有口渴或咸味麵條方面+$3轉了新竹米粉新竹米粉份量彼多口感爽口而且比一般米粉幼身掛湯非常《奮起湖燒雞腿扒肉燥乾拌麵 $68》(+$3換新竹米粉)個人認為吃拌麵用新竹米粉比用台灣麵更美味新竹米粉更吸汁入味拌上肉燥和湯很不錯但可惜燒雞腿扒肉質乾硬令人失望因為媽媽今天吃素所以點了一份《養生素食便當 配 黃金地瓜飯 $59》黃金地瓜即是甜蕃薯,味道清甜蕃薯粥和蕃薯飯是很台式的家常便飯但可惜這裡的米飯較乾實不太推介便當飯類點了多款小食但只覺得其中幾款比較好吃《香滷滑牛筋 $48》好軟腍入味,啖啖骨膠原《肉燥小茄子 $36》茄子皮燒得微脆口感不錯加上肉燥同和醬汁入味又惹味《黃金梅子脆薯 $36》脆薯用甜蕃薯炸成粗身薯條口袋香感自覺比普通普條惹味灑上梅子粉微微酸香可減膩不好兩杯凍手搖茶和一杯熱咖啡:《百香果QQ冰茶 $28 加椰果+$5》(右)原來QQ就是珍珠整體味道不會太甜清涼解渴《蜂蜜柚子茶 $28》(左)這款有甜《薄荷咖啡 $35》沒有拉花之類普通一杯即沖三合一薄荷咖啡的味道性價比低服務:餐廳是客人自行到櫃臺下單原來餐具都是自行去取行來行去的職員只負責送餐收餐主動性低收餐都只是食客主動要求才收走而且縱使他們站在餐具櫃面前都會叫客人自己出來取有點那個 continue reading

I went there for dine in. First, you need to order and pay at the counter before getting served. a bit unusual for a "premium" noodle place.I took the spicy (大麻辣 - Big ma spicy) beef soup noodle. I was not very spicy. I would say:- soup is way too oily, I think it would be good to de-oil it a bit as it made drinking the soup not of the best experience (- -)- beef was tender (+)- soup was quite bland, mainly salty taste (- -)- noodles were on the hard side and great (+ +)- small quantity (esp on the noodle side) (-)- a little bit of spring onion but nothing else. no preserved vegetables like you can find freely available on the tables in noodles shops in Taiwan (if you take the non spicy option, you can add them for 10$)... (- -)- service (cf above)- nice decoration (+)all in all, I found it below my expectation for $69. continue reading

排隊排成半個鐘…攞左位先發現,原來剔完野食就去俾錢,張單先叫做落左…下次可以差不多有位既時候就去俾錢因為俾錢又係要排隊…不停地排排排…先有野食…哈又幾好味wor.. 唔怪得咁多人不過通風很差,坐左一陣已經流曬汗沙茶醬幾濃郁,貢丸彈牙番茄湯都好味,幾足料跟餐有飲品,暖入心,岩曬大冷天額外加左個油菜,22蚊未免太細碟,仲差過酒樓 continue reading
