7月有兩位同事生日,我和另一位同事就邀請她們兩個一起吃餐飯,同她們慶祝。偶然在Openrice看見灃味館是主打粵菜私房菜的,食評又幾好,於是便決定揀這間試一試。 在Openrice訂完枱之後,餐廳會用Whatsapp通知我要先付訂金才可以確認我的訂枱, 因為他們的枱不多,怕當晚如果多客人就未必留到枱給我們。付完訂金之後,餐廳就會發餐單給我自己研究。我將Openrice的食評逐一去研究,終於找出幾個多人讚,價格又相宜的菜色。 最多人讚是金沙大刀脆魚皮和新鮮菠蘿拔絲咕嚕肉,食落又真是幾好味。另外,銓哥炒飯也多人讚,但我覺得鹹了一點點。 每上一味菜,我們都會「相機食先」,想不到會有一位姐姐走過來幫我們打燈。整餐飯有人不斷為我們加水,收起吃完菜的碟子,自然也樂意幫我們拍照。雖然用餐時間是120分鐘,我們過了鐘也沒有人過來催促。這樣的服務真是

芥蘭脆嫩,梅菜嘅鹹鮮剛好提味,清爽不寡淡,好吃!

🍍 **鮮菠蘿拔絲脆皮咕嚕肉**
菠蘿嘅酸甜中和左肉嘅油膩,外層糖殼薄而脆,咬開是彈牙嘅豬肉,有創意 😆~

🍖 **脆皮牛腩**
燉得酥軟入味,外皮炸得酥脆,配碗白飯最正!

🍚 **銓哥炒飯、鮑汁花膠撈麵**
都很有水準,尤其係撈麵,麵條採用粗蛋麵,彈牙。濃稠嘅鮑汁包裹著花膠同麵條,層層交疊,鮮香好味。

⚠️ 不過都有幾道菜稍顯遜色
• 🍝 **黑松露蛋白炒帶子**
黑松露香氣過於濃烈,蓋過了帶子嘅鮮甜,而且火候略欠,蛋白稍顯乾硬;
• 🍡 **擂沙湯圓**
外層是細膩豆粉,內餡卻沒有流心驚喜 😅…

不過呢啲小瑕疵,唔影響整體體驗——畢竟,將多數菜做到「超出預期」,已是難得。

最讓人暖心嘅係服務!尤其係喺現今嘅香港。店員不僅主動分菜(特別是湯品與燉品),連客人用手機幫食物拍照打卡,都會貼心咁過嚟打燈補光 📸。

至於價格,稍貴——畢竟用了花膠、黑松露等高級食材,加上25年老師傅嘅手藝精製,叫做「貴得有道理」。值!

魚湯黃金脆米東星: server made a show of pouring the fish broth onto the fish. The 脆米 made sizzling noises. Server noted that 4 types of fish were used to make the broth, including their bones, including 石狗公, 銀魚 etc. Fish and the broth were both very fresh; turnip was sweet; but not the 脆米 unfortunately tho- which gave out a bitter taste. (Preferred the one at Wilmer Lobby.)
