麵包自從裝修之後就轉左Sourdough,其實真係幾失望,同其他米芝蓮西餐廳有好多款唔同種類既麵包比你揀差天共地......Sourdough皮都脆既而入面都算軟綿綿既,不過真係平平無奇。跟Sourdough上得一款牛油,我地另外要求要橄欖油同黑醋,黑醋甜甜地好味道。

前菜每人三揀一。呢道前菜應該係Amber既招牌之一,我第一次黎已經試過。要加$248,絕對唔平,但係真係好好味道!首先擺盤無得彈,滿滿既魚子醬上面放左少少金箔,一個有質感既碗仔放係大中小三隻碟,細碟仲放滿碎石粒。另外仲有一個大兜放左兩大塊脆片,脆片係暖暖地,連裝飾既石頭都係暖既,真係一絲不苟。服務員建議所有配料一齊食。

於是我就用個隻特製用黎食魚子醬既匙羹筆一大羹椰菜花慕斯,海膽,酢橘啫喱同魚子醬放係脆片上面一齊食,首先魚子醬味道真係好香濃,我之前實在係食得太多所謂魚子醬係得個鹹字,呢個係好有海洋既味道。椰菜花慕斯好香滑,不過椰菜花味唔濃,反而有d似雲呢拿慕斯。海膽當然係超鮮甜滑溜。成個組合係非常海鮮,再加上脆口既脆片同慕斯既香滑口感,好正!

另外呢款前菜都好味道。主角鰤魚有三塊,呈半熟狀態,超鮮甜嫩滑,而黑魚皮好脆。另外配有幾塊爽脆Sorrel片,少少西柚肉,仲有非常新鮮既香脆葵花籽增添口感。食落少少酸酸地,感覺非常清新。

主菜每人四揀一。我地揀左呢道羊,要加$298,絕對唔平。賣相又係勁靚,好多唔同顏色嘅大細圓點,好吸引眼球。羊肉係奶飼,廚師建議medium rare,我哋當然照跟。羊肉整得超粉嫩而唔羶,外面包住一層薄薄脆皮同少量脂肪,超好食!可惜羊肉只得兩舊,點夠喉?!服務員建議羊肉同咖啡色既圓點醬汁一齊食,圓點醬汁係松露醬汁,好香,同羊肉一齊食的確好夾。白蘆筍身爲第二主角,用左好靚既小黃花同小綠葉扮靚,而味道當然係鮮甜加完全無根,所以超易咬開,否則一定唔及格。最後,厨師將好多小黃菇拼埋變成一個大圓點,貫切主題,味道則正常。如果想加黑松露片可以另外再加錢,可惜我地荷包已乾。

鱈魚既生熟度掌握得完美,係剛剛熟而絕不過火,所以超滑,眼見晶瑩通透,抵讚!三塊黑色魚皮則非常薄脆,俾你多一重口感。第二主角既綠色蘆筍一樣爽脆無根。綠色既慕斯好滑,感覺好清新,我覺得係用Ramson整。成個主菜好食得黎又健康,絕唔會過油或者過鹹,魚又唔腥又無骨,好食!

甜品就相對令人失望。甜品每人四揀一。呢道Squash既椰子慕斯味道好弱,滑就夠滑。最特別係下底個層應該係用南瓜籽造既厚身慕斯,食落好似花生醬,味道就較爲突出。薄脆上面既橙色慕斯應該就係Sea Buckthorn,味道唔太特別。有d後悔揀左呢道甜品

呢道甜品更令人失望,實在係超酸。主角係士多啤梨雪葩,下面有一塊薄脆,再下底有少少香滑意式奶凍。圍邊有幾塊爽口既形似西芹而我懷疑係Sansho既物體,蜜糖完全唔甜。個人真係幾唔鍾意呢道甜品,不過造型都可以既,以紅色同粉紅色爲主,仲撒上d應該係Begonia既靚靚花瓣。可能鍾意酸既朋友會鍾意既。我就好後悔揀左呢道甜品,唔知另外兩道會晤會好d呢?

跟餐包一杯飲品,我地食完甜品唔夠喉,叫左兩杯凍朱古力,要脫脂奶,唔洗加錢。凍朱古力超大杯,上枱都要用一塊木板仔上,大陣象。不過開頭飲既時候下面既朱古力係唔凍既,上面有冰既先凍。作爲一杯米芝蓮二星餐廳既凍朱古力,唔好意思唔及格。

呢個時候,由於係慶祝特別日子,服務員就送上一個迷你蛋糕仔,係用一個好靚嘅雲石紋盤放好,插住支點著左嘅蠟燭,仲有一塊朱古力牌,好貼心。服務員主動幫我哋影相,然後等我哋吹熄蠟燭之後先同我哋分蛋糕,或者可打包拎走。個蛋糕係輕盈忌廉包住雪芳蛋糕,中間有層水果啫哩夾心,面頭有塊印左餐廳logo嘅薄脆朱古力。蛋糕食落好濕潤,略嫌夾心同雪芳蛋糕分得太開。一人半個蛋糕食完都唔膩。

食飽飽離開餐廳,當然有服務員問候我地用餐感覺如何,臨離開仲每人有一塊朱古力做手信,服務員幫你禁埋lift,送埋你走,等你全程感覺賓至如歸。

總括而言,前菜同主菜食物質素令人滿意,甜品則令人失望。服務基本上無可挑剔,貼心同注重細節位,例如全部客人嘅每一道菜都等好先一齊上,食完麵包幫你清下枱上嘅麵包屑等等。服務員上菜時都會將每一道菜仔細介紹,雖然好多時我都聽唔哂,如果可以講得慢d會更好
。當然,呢餐價錢絕對唔平,但係絕對開心,特別日子先會黎啦

      每年生日都會選2餐米其林餐廳去慶祝,今年選的是米其林1星的ANDO和米其林二星的AMBER。AMBER是唯一一家沒打卡的米其林二星餐廳,非常期待。送上來的麵包,還是熱的,非常好吃。      送的前菜是鵝肝棒棒糖,味道非常純正,做得也好卡,打卡一流。      頭盤魚生那道非常清爽,酸酸甜甜的和魚生搭配真是大愛。     主菜魷魚一般,但是慢煮鵪鶉非常嫩,搭配著表皮的焦香,真是完全不夠吃。      兩個甜品都非常的清爽,可惜就是分量不大。      這餐最經典的一道菜來了,竟然是最後送的瑪德琳,一般來說瑪德琳能做好吃都是比較難的,AMBER真的做到入口即化,而且巧克力中帶著淡淡的焦香,真是吃完還想再吃,搭配著AMBER特調的鴛鴦,為了這一口瑪德琳,一定會再惠顧AMBER,絕對是全香港最好吃的瑪德琳!

      這餐最經典的一道菜來了,竟然是最後送的瑪德琳,一般來說瑪德琳能做好吃都是比較難的,AMBER真的做到入口即化,而且巧克力中帶著淡淡的焦香,真是吃完還想再吃,搭配著AMBER特調的鴛鴦,為了這一口瑪德琳,一定會再惠顧AMBER,絕對是全香港最好吃的瑪德琳!

香港數一數二的法國餐廳,Amber 位於置地文華東方酒店,環境來說已經是一個保證。餐廳裝潢簡潔又不失氣派,貫徹餐廳的名字Amber,整個餐廳都用上了黃褐色格調。選擇了兩個午餐4 courses 的 Extended Amber Experience,包括了兩個頭盤,一個主菜和一個甜品。餐廳亦另外送上餐前開胃小菜 Amuse bouche,和甜品後的小驚喜Petit four ,所以其實是6 courses 呢! 先上了一份Sourdough 和法國海鹽牛油。Sourdough 上枱時是熱的,外脆內軟,配上鹹香的牛油,非常可口,比街外的bakery 還要高水準。開胃小菜 Amuse bouche:小青口配上脆米,淋上法式醬汁;和鵝肝慕絲Lollipop。兩樣口味都比較清淡,為之後的食物打開味蕾。頭盤一: 兩份都選擇了Amberjack。用大量食用花做擺盤,美到不捨得把它弄散。油甘魚刺身,配上蕃茄,淋上酸酸甜甜帶有有少許薑味的醬汁。吃得出油甘魚新鮮高級數,魚味鮮甜。頭盤二:兩份都選擇了Duck Foie Gras。單是香濃法國鴨肝,有多好吃已經不用多說。配上Purple Artichoke

選擇了兩個午餐4 courses 的 Extended Amber Experience,包括了兩個頭盤,一個主菜和一個甜品。餐廳亦另外送上餐前開胃小菜 Amuse bouche,和甜品後的小驚喜Petit four ,所以其實是6 courses 呢!

先上了一份Sourdough 和法國海鹽牛油。Sourdough 上枱時是熱的,外脆內軟,配上鹹香的牛油,非常可口,比街外的bakery 還要高水準。

開胃小菜 Amuse bouche:
小青口配上脆米,淋上法式醬汁;和鵝肝慕絲Lollipop。兩樣口味都比較清淡,為之後的食物打開味蕾。

頭盤一:
兩份都選擇了Amberjack。用大量食用花做擺盤,美到不捨得把它弄散。油甘魚刺身,配上蕃茄,淋上酸酸甜甜帶有有少許薑味的醬汁。吃得出油甘魚新鮮高級數,魚味鮮甜。

頭盤二:
兩份都選擇了Duck Foie Gras。單是香濃法國鴨肝,有多好吃已經不用多說。配上Purple Artichoke 的酸味,洗滌鴨肝的油膩感,多吃幾碟都不膩。

主菜:
1. Suzuki
鱸魚是主角,肉質嫩滑,火候控制剛好,魚香鮮甜。配角為爽口彈牙的墨魚。碟內亦配有大量蔬菜,及蔬菜蓉,配合酸甜的醬汁,感覺健康清新,少有的吃法國菜去到Main Course 還未覺得飽膩。
2. Milk Fed Lamb Loin + $298
我不吃半,無法評論。但看起來擺盤精美,羊肉粉嫩。

甜品:

1. Kacinkoa 85 朱古力甜品
一件甜品有著4種朱古力口感,層次豐富。再配上Olive Oil Caviar, 令甜品更加順滑。

2. Oat & Clementine
甜品砌成一朵太陽花,充滿夏日氣息。卜卜的燕麥,配上柑橘味的醬汁,感覺清新。

小驚喜:
訂位告知他們這次Lunch 是特別的Celebration,他們亦準備了白桃小蛋糕,亦貼心的主動幫助拍照及打包。
然後,用餐時發生了一些小誤會,服務員已經多次致歉,我們亦沒有放在心,結果他們也送上了一份Mille Feuille 以表歉意。Mille Feuille 的酥皮香脆,中間的忌廉吉士充滿乳香,甜度適中。而且此舉亦充分顯示他們一星級的服務質素。

Petit Four:
最後以三款小點: 新鮮水果、Chocolate Madeleines 、Granola Biscuits ,及一款淡淡咖啡味的特調清茶作結。服務員更會到枱邊即時調製手搖清茶,儀式感豐富。

I felt welcome from the monet I stepped out from the lift. every dishes were so nicely prepared, not just only delicious, they were having great presentation too. Every dishes have so much details and layers. All the staff were so professional. They set or took the dishes away at the same time. I couldn't find any negative feedback from my whole experience.

當日主要既serve東南亞藉既,佢既解說同行為都表現到禮儀,但係放低講完即走。係怪怪地,即係有禮貌地急急腳咁走。上每道菜都係。(但呢啲我諗係個人行為,唔可以話間野整體就係咁,同埋佢唔算好劣,)
但有個鬼佬既侍應,佢又好過晒所有咁嘅價錢餐廳嘅😅 (唔係做吉祥物、真係落手做嘢,同埋係努力同你講多幾句嘢嘅)

原本想另一半叫full amber experience ,我就叫最平既。但我迫佢去陪我試呢啲餐廳;佢都開始食唔郁😂

最初佢食到餐前小食、包、前菜、湯、白肉、紅肉、甜品、咖啡同啲送咖啡既Pete four 。

我愈食愈食我食一個前菜同main已頂唔順
因為雖然啲嘢好似好精美好細份;但係有麵包有餐前小食有前菜有咖啡又跟住咖啡嘅甜品😵

好老實,呢種類既餐廳唔係我由細食到大既;而家比較密去食,食到個咀同胃口食到werwer 地同埋我本來就唔係太鍾意西餐😂😂😂。(月頭食完心中第一既robuchon,每一次都係走個時book下個月既。好食係好食既,但每次一樣既麵包、野食一樣個浸除🥲 對上一次係最後埋完單走去廁所嗰時,我決定唔再book下一次住。真係想再打電話)

但整體700尾,三道菜我覺得同robuchon 、petrus 比真係唔抵😅
同環境(裝修同扮野)唔太好。我地不嬲無要求座位點樣既客之類。

今次坐窗邊,一坐低覺得呢個位唔好,但我哋完全唔係為咗環境個種人,是是但但唔要求轉。臨走個時好既位都一直冇人。(窗邊嘅位好頹,應該要揀圓形同埋沙發之類嘅位;因為我哋唔會食到好慢,睇張單既時間都知係食餐飯only😂;唔係慶祝咩嘢、冇要求。)

但講就算坐好啲既位比起robuchon table同petrus都差

當日既環境食物同服務我都想返返去我最鍾意個兩間。
我個日啦⋯⋯準時12點入座,食到四十幾分,全場只坐咗五分二定係一半既人。當然佢12:45後都有人繼續入嚟,慢慢差唔多坐到八九成滿既。

🍄Amuse bouche 1: Mushroom crispy roll + Mushroom soup
蘑菇脆捲配蘑菇清湯:極香蘑菇味! Waiter建議我哋一啖脆捲一啖湯, 成個口香味濃郁

車厘子咁嘅外形但又咬入去係鵝肝mousse, 配薄薄嘅薑餅, 酸酸甜甜嘅醬包圍住個mousse, 好開胃, 味道好豐富

松葉蟹陪魚子醬:蟹肉鮮甜再配埋魚子醬嘅鹹香, 成件事balance得好好, 而執著方面有青蘋果嘅酸甜同埋少少香蔥嘅香味, 全部都好夾, 每一啖都好食得好開心, 配白酒食, 味道亦都非常好

🐟Amberjack + grapefruit
煙燻過嘅油甘魚配上西柚:味道清新又好夾!尤其是配埋白酒飲, 會飲到一啲花香嘅味道出嚟, 好得意😳

🦆Foie gras + tomato + pork belly
鴨肝唔係用煎得好香嗰一種形式去烹調, 反而係食佢本身嘅味道。平時通常d餐廳會配上raspberry醬去食, 今次居然係配番茄濃湯, 成道菜食落去一啲都唔油, 唔heavy👍 (不過我都係鍾意食傳統嗰隻煎香嘅多啲🤣)

🐟Atlantic pollock + green asparagus
西餐嘅魚, 好少會覺得驚艷;但今次呢個鱈魚, 我覺得係食過咁多西餐入面最好味!鱈魚被烹調得剛剛好, 肉質q彈, 居然有魚嘅鮮味!上面放咗幾塊鱈魚嘅皮, 煎得香脆💗 而側邊嘅蘆筍都有兩種食法:就咁食+mousse! 另外仲用咗一啲紫色嘅花花去擺盤, 成道菜好少女😳

🐦Quail + fermented mushroom + zucchini
呢一個主菜就偏濃郁同埋香口! 鵪鶉肉外脆內嫩, 下面仲鋪咗一層用鵪鶉整嘅mousse, 好有心思!啲配菜相對呢就冇咁出色, 純粹配搭, 味道都夾嘅!

🥥Squash + coconut
香噴噴嘅椰子mousse加上南瓜, 同埋一啲薄脆, 係一個好適合夏天嘅甜品👍我覺得設計嘅廚師有特登諗過將呢個餐單係配合季節🥰欣賞💗

🍊Oat + clementine
平時好少食柑味嘅甜品, 呢個令我對柑味嘅甜品留下唔錯嘅印象👍嗰啲燕麥被整成脆卜卜嘅口感, 配creamy嘅mousse, 同埋柑味嘅sauce, 絕對都係一個夏日甜品之選

💕Petit four: Japanese melon and lychee + Madeleine + Chocolate with passion fruit + choya
同平時食開嘅唔一樣, 但係另外一試愛上! 水果唔使講就梗係好味啦,最有誠意嘅係佢哋會搜條一杯梅酒嚟畀我哋用嚟襯!我最鍾意嘅係個Madeleine!!!超好味, 顛覆我平時對佢嘅印象,我平時覺得呢款甜品真係好普通, 但估唔到居然可以整到外脆裏面鬆化, 充滿牛油香!而嗰一粒朱古力就係用朱古力脆脆包住, 脆過金沙🤣, 入面係熱情果醬, 幾飽都要食埋佢啦!

☕Arabian coffee
即席整畀我哋嘅Drip Coffee, 咖啡豆唔錯👍為呢一餐畫上一個完美嘅句號。

🥳最後因為我哋今日係週年紀念, 所以佢哋送咗一個週年蛋糕畀我哋❤️

成餐飯由頭到尾我都食得超開心, 坐得好舒服; 服務都唔錯, 唔係嗰一隻好熱情或者係咁同你講嘢嗰啲🤭 (因為我反而唔鍾意畀人煩住)
