紅磡廣場附近開咗間黃埔小廚,聽講啲嘢抵食大件有鑊氣,今晚就去試吓舖頭轉咗上條橫街反而環境幽靜,而個Menu就非常多選擇一坐低先送上一碗無味精老火靚湯,起窩心揀咗避風塘炒蟹,蟹走油嘅時候唔過火唔會太乾身,咬落去仲有汁水,調味嘅蒜味辣度都啱啱好,果然係有鑊氣嘅小炒店,第一碟已經有驚喜成日聽人講如果要試一間中菜館嘅水準,試佢嘅咕嚕肉就略知一二。所以我哋揀咗鮮菠蘿咕嚕肉。咕嚕肉嘅粉漿我估應該加咗啤酒去調製,非常非常鬆脆,而肉係揀咗半肥瘦,咬落肥瘦適中唔會太乾。而個汁啱啱好掛哂上啲肉度,食到後段個皮都仲係脆嘅,呢碟咕嚕肉合格有餘最後揀多個蠔仔肉碎粥,蠔仔份量多又飽滿,加埋肉碎唐芹冬菇絲大頭菜,口感豐富味道有層次。湯底仲有啖啖嘅大地魚味,非常好食

懷舊芝麻雞(需2日前預訂)
這個芝麻雞比平常的雞大隻一隻,煮到剛剛好熟,骨還帶一點點血的,所以肉質很嫩滑又有彈性,雞皮布滿了芝麻,吃起來特別香脆,而且有很濃厚的芝麻香!吃的時候再配上芝麻醬,味道特別惹味,鹹香的雞肉多添一份甜香芝麻味!

玻璃皮炸乳鴿
用的不是BB乳鴿,所以尺寸是比較大隻的,但就更考驗師傅的手藝,煮過火肉質容易變老!這個玻璃皮炸乳鴿特別外脆內嫩的,玻璃皮跟平常的炸乳鴿不一樣,會多了一層的脆漿在表面再去炸的,所以表皮特別香脆!肉質比想像中的要嫩滑多汁,亦因為大隻的關係,所以特別多肉!

朋友聚會,預訂了紅磡的[黃埔小廚]晚膳。餐廳新裝修,門面燈飾閃閃生輝,非常搶眼。部份菜式製作需時,為了保持新鮮,需要早一兩天預訂。先來一碗老火西洋菜豬骨湯,清甜潤喉,這個天時最合適。「懷舊芝麻雞」需要兩天前預訂。一大隻黃油雞斬件奉上,份量不少。雞件肥美厚肉,肉質嫩滑,外皮是一層炸香芝麻,特別香脆可口,啖啖滋味,帶來了驚喜。「玻璃皮炸乳鴿」非常脆皮,脹卜卜的外皮,口感脆得如同玻璃,真是名副其實。裏面肉質鮮嫩,保持肉汁,真正外脆內軟,雙重口感。「菠蘿咕嚕肉」新鮮即炸咕嚕肉,加上夠鑊氣,吃起來份外香脆,配上新鮮菠蘿、酸甜芡汁,酸酸甜甜,特別開胃。「蒜蓉炒菜芯」翠綠菜芯,爽甜無渣。「揚州炒飯」有鮮蝦和叉燒等材料,炒得香噴噴,鑊氣十足。這裏的烹調認真,菜式有創意,夠鑊氣,下次再來嚐其他菜式!
