雖然唔係潮州人,但我很喜歡吃潮州菜。凍海鮮、滷水、螄蚶、蠔、蜆..全部都好正。而打冷菜館那種自己人架己冷親切貼地的感覺,亦都是十分可貴,令人可以放鬆豪邁大吃大喝一番。四眼佬打冷小廚除了地下,還有二樓和廂房,非常適合一大班朋友飲酒作樂。除了正宗潮州打冷菜之外,還有海鮮、火鍋和小炒,不過可惜當日沒有生猛海鮮,我們便點了其他菜式。潮州鹵水鵝片(例牌$98),漂亮薄切,給滷水煉得晶瑩,色澤也可以,香料味道平均,左一片鵝片,右一啖啤酒,爽!豉汁蒸大鱔($138),鱔肉結實甘香,調味非常不錯,豉汁很香,又有粉絲等等的配料。去親潮州菜館,例牌都會點方魚蠔仔粥(一窩$95),這裏的蠔仔粥很鮮甜,肥美蠔仔,湯底有芳香的魚味,而且一鍋也很多,足夠四個人吃。最後還點了星洲炒米,微辣惹味,咖哩味濃,$68一大碟,不但米粉多,配料亦很多,很抵食。Read More

今日同屋企人食飯,都係葵芳選擇餐廳,在泊車附近見到間叫四眼佬扛冷又大而且入面都多大張桌,仲有二層,我地最後一行五人去食飯。而每個餸都是大約每款八十蚊左右,除了潮州還有中菜都幾多選擇。我地最後一人叫一個餸來吃,蠔餅入面蠔都不少幾足料但少太細片。大家都覺好食的九菜豬紅,入味而且豬紅少有好滑又濃味推介。另一個好味的魚頭煲,幾大個而且味剛剛好又夠熱不錯。豉椒鵝腸,份量不多,味道普通不差。最後我地叫了一個炒菜,腐乳通菜炒不錯,但腐乳好少,菜的份量都夠,不夠醬的原因所以味道偏淡但炒得幾香口。Read More

這天朋友想約我去喝酒,與其到酒吧喝酒又貴又無野食,我反建議到我家附近打冷吃小菜,不但填飽個肚,酒水亦便宜得多。 這店已經營業了多年,我久不久我就會想到這兒打冷。因為遲到的關係,友人已經早早點了個鹵水鵝,這兒的鹵水做得不錯,應該是拜那多年的鹵水汁所賜。我們一行三人,足足點了五個菜,喝了五支啤酒,非常滿足。炸豬大腸是其中一道必吃的菜,有朋友不吃炸豬大腸,所以我們點了這個炸豬大腸拼京都骨。這店的炸豬大腸是開炸好後開邊切一開二。豬大腸已洗得很乾淨,不但沒有臭味,還不會有多餘的肥膏,表面炸得香脆。京都骨做得也不錯,豬扒炸得鬆化,主面沾上薄薄的甜酸汁,很乾身的。要佐酒嘛,少不了豉椒炒蜆。這店的炒蜆我覺得炒得太濕,我比較喜歡乾身的,但適量的豉椒味非常惹味。唯一要改善的是可以縮短炒的時間,因為這碟炒蜆應該是炒得時間太長,導致蜆肉與蜆殼已分離。我是超級愛吃粉絲的,所以每次吃小菜,都愛點沙嗲XX粉絲煲。本來我想點蝦煲的,但怕吃蝦麻煩,所以最終選擇了沙嗲肥牛粉粉絲煲。煲內除了沙嗲肥牛和粉絲外,還有菠蘿和金菇菜。沙嗲肥牛半來就是很油膩的,加入酸酸地的菠蘿,可以中和一油膩感。粉絲吸收了濃香的沙嗲汁,超好味的啊。後來,有一次我重臨此店,點了沙嗲粉絲蝦煲,蝦的數量少得可憐,而且不夠新鮮,所以提議還是吃肥牛煲較好。另一佐酒美食一定是椒鹽九肚魚拼椒鹽鮮魷。九肚魚炸得剛剛好,有時其他店的九肚魚做得不好,夾下去會散,但這兒的椒鹽九肚魚,薄薄的外皮炸至硬身,保護著那柔軟的九肚魚。魷魚亦是很新鮮,酥炸的時間掌握至剛好,沒有令魷魚因煮過龍以至縮得太小。這店的椒鹽炸物做得很出色,炸皮很薄,蒜蓉、辣椒絲和鹽的份量下得剛剛好,值得推介。Read More
