今天中午在炮台山辦點事,就腳來了這家Chop Chop 食神叉燒吃晚餐。環境有別一般的燒味店,有一個巨型的霓虹燈招牌,裝潢有花心思,乾淨企理。餐牌選擇十分之多,有各式燒味飯,步入冬季更有時令的煲仔飯,亦有外賣優惠。黯然銷魂飯先點一客招牌的黯然銷魂飯,其實就是半肥瘦叉燒加太陽蛋,但半肥瘦叉燒的確是一絕,肥瘦相間的腩肉,蜜汁焦香腴美芳縈齒頰,肉汁豐盈,甘腴可口,加上半熟太陽蛋,蛋黃滑溜澄黃,亦呈半生熟,入口夠嫩滑,亦富蛋香,拌入粒粒分明飽滿的米飯,層次豐富。日本肥牛窩蛋煲仔飯煲仔飯即叫即做,所以要等大約二十分鐘,原個瓦煲熱辣辣上枱,火喉拿捏恰到好處,米飯甘香口感偏硬,加入微甜的煲仔飯豉油,將雞蛋與日本肥牛粒和米飯攪拌後,每一粒飯都充滿醬味蛋香。日本肥牛粒脂爽肉軟,油香豐富而牛肉味亦濃郁。凍奶茶/凍檸水最後來一杯凍奶茶,能品嚐到茶香及奶滑,十分不錯。…Read More

■食神黯然銷魂飯🍳🍚■■BBQ Pork Belly & Egg w/ Rice.🍳🍚■.Finally got time to travel all the way to Fortress Hill to try out this 黯然銷魂飯🍳🍚 signature dish from Chop Chop.😲🥢.To some of those who might not know, 黯然銷魂飯 is a dish from a movie called 《食神》(God of Cookery) in 1996, and it's literally just some barbecued pork🐽 with a sunny-side-up egg🍳 on top of some rice🍚, and with some vegetables and soy sauce.😋.To be honest, I think I had way too much expectations on this, since this char siu rice is a signature dish from Chop Chop.😂 But it turns out to be quite disappointing though.The barbecued pork🐽 in my dish was quite on the chewy side as you can see from the pic, wasn't that tender at all.😕 But still, you couldn't deny that it was pretty fragrant and savory with the slightly sweetness on the outside though.🔥🥢Other than that, the sunny-side-up egg was so unsatisfying.🍳🤨 Feel like the egg was overcooked and it isn't much of a runny-yolk to mix up with my rice.😢Anyway, the sauce was actually pretty good and flavorful, it went pretty well with char siu and every scoop of rice.😋🍚 The meal also comes with a soup, it was made with wax gourd🥒 and meat and other ingredients; and the meat was unexpectedly more tender than the char siu😂😂 lol.Overall, the meal does look pretty appetizing. 「叉飯就叉飯啦,加隻荷包蛋俾盡你咪廿二蚊碗,黯咩然銷咩魂飯呀?」,相信大家對這句對白一點也不會陌生,周星馳的戲對於90年代的香港人來說,可算是耳熟能詳,就算現時偶爾翻看,也絲毫沒有感覺脫節,星爺的成功某程度上在於能將小市民日常生活的細節,又或是一些經典畫面,加上爆笑抵死的金句在戲內重新演繹出來,令觀眾留下深刻的印象,而其中在食神裏邊的爆漿瀨尿牛丸和黯然銷魂飯,就更是深入民心,飲食界更曾幾度將黯然銷魂飯在現實中呈現出來,均引起了一時熱話。最近在北角就有一間以食神叉燒為主打的餐廳,而該店的顧問大廚正正就是當年為食神電影擔任顧問、入廚經驗達四十多年的戴龍師傅,亦是黯然銷魂飯的始創者之一,實在大有來頭。小店位於城市花園附近,店家以霓虹光管製作簡約搶眼的招牌,加上店內沿用了舊式大排檔的裝潢作為設計概念,一列列不銹鋼的枱面配上摺櫈,餐具用上了雞公碗碟,還有舊日快餐店的黑底白字貼牆餐牌,裡裡外外都充滿着香港的懷舊本土色彩,但論到座位舒適度就真的欠奉,一來座位相對擁擠空間感較小,二來一列列的長枱變相就是要和其他客人搭枱同吃,完全沒有私人空間,但當然這也正正是舊日香港用餐的實況,要體驗還是要享受,大家就要取捨一下了。這裡主打的叉燒分為兩種,分别為製作黯然銷魂飯的半肥瘦腩叉燒和以梅頭肉燒製的玫瑰叉燒,其他的燒味還有燒腩、燒鵝、油雞和貴妃雞,種類算是貴精不貴多。先點來一客黯然銷魂飯套餐,包括了明火例湯,黯然銷魂飯和一杯特飲。套餐以特製木盆盛載,賣相整潔專業,明火例湯湯色清澈不會太油,清甜滋潤,很有在家老火湯的味道。腩叉燒選用了本地豬肉入饌,不含味精、色素和添加劑,肥瘦相間邊位燒得焦脆,色澤深紅,油潤光亮,單看賣相已感受到其濃香美味,而且一口size方便進食,一啖咬下去醬香鬆軟,肉汁脂香徐徐滲出,跟一般叉燒相比確有其獨特之處,雖未算超級美味但亦不遠矣!至於太陽蛋則用上了營養價值較高的初生蛋,煎得外圍脆邊中間蛋黃流心;米飯也講究的選用了韌性較强的黑龍江五常米,還加入了野米和油葱同煮,粒粒清香分明,撈上蛋汁和自家以紅蔥頭調製的醬油,口感粘稠,蛋香味濃,完全將平民簡單的叉燒煎蛋飯提升到另一層次,果然貼題!除了主角黯然銷魂飯外,這店的其他燒味相信也會不俗,筆者點來了燒腩仔一試,一端上來份量十足,腩仔外皮燒得金黃香脆,肥瘦相間不會過肥,充滿光澤,單看賣相已知是一道出色的燒腩仔,唯一挑剔是外皮有點偏硬脆,,令咬落感覺帶點乾身,但其實尚算化皮,加上肉質鬆軟入味,肉香滿滿,令人停不了口,不其然吃完一件接一件。而在燒味之外,這裏的飲品選擇不算太多,大都是地道茶餐廳提供的款式,除了咖啡奶茶檸茶之外,還有支裝汽水維他奶,較特別的反而是另類港產地道飲料~~鹹檸七和鹹檸樂,將支裝可樂倒入已預先篤碎了的鹹檸檬當中,飲落夠氣冰爽,鹹酸中帶甜,十分醒神!今次試過這道算是原著版的黯然銷魂飯(雖然跟電影內的做法有點區別,但起碼是出自同一位師傅的手筆),果然沒有令人失望,質素頗高令人回味,定價八十多元一客的叉蛋飯雖然未必人人接受得到,但試想想現時在某幾間知名連鎖茶餐廳,隨便點來一碗粉麵或是客飯也都要付上近百元,而這裏收費相若卻有著一定的保證,難怪用餐當天見到店家其門如市,當中不乏慕名而來的外國客人,可謂客如輪轉,應接不暇!除了因為食物質素出眾之外,星爺的魅力也真的不容小窺,大家來到北角附近,不妨也朝聖一下,細味一番這個大衆的集體回憶。…Read More

今日冇乜人返工,襯「山竹」未走仲係3號波,預o岩2點幾呢個鐘數,今次終於俾我試到傳說中既「食神叉燒」喇!店舖不大,一入到黎伙記有禮地招呼,見牆上「食神叉燒」個霓虹光管招牌好搶FO又懷舊,裝潢係有點刻意地道感,最正當然係七大武器之首既摺凳啦。我地兩個人黎Lunch,本人望餐牌只一秒,毫不猶豫咁揀左【黯然銷魂飯】,同事揀左【玫瑰叉燒飯】。【黯然銷魂飯】喺電影中幾乎係人間最高美食,當然令人期待。不過電影同現實始終係唔同,呢碗飯證明左呢點。一個【黯然銷魂飯】套餐包一碗叉燒蛋飯(有三條菜心伴碟),一碗湯及一碟醬汁。飯聽說係東北米夾雜日本米,但口感同尋常泰國米相差不遠,米飯中溝左極少量類似五穀米,質感比正常五穀米來得軟身點,但份量極少,唔知加黎做嘜;太陽蛋亦正常過正常,係有少少脆邊;至於主角中既主角,叉燒色靚不會太人造Feel,一碗只幾片薄切,剛好切到「真‧半肥瘦」(半邊係瘦肉半邊脂肪),瘦肉半邊好乾身下,所以一定要連肥肉個半一啖咁咬,感覺就完全唔同,肥油既油香彌補左肉味既不足,而叉燒外面果層亦幾乎不見焦燶,整體只是合格。不過加分點喺個祕製醬汁度!鹹鮮參半,味道好特別,將叉燒既質素提升左一個Grade,即使用來拌飯亦無不可。問醬汁係咩名堂,侍應笑而不語,只透露香蔥係重要材料之一。同事既【玫瑰叉燒飯】就更普通,叉燒明顯同我碗【黯然銷魂飯】既唔同,外表似一般燒味店既叉燒,有玫瑰露既芳香,但同樣欠缺肉味,沒有五穀米、也沒提供湯同醬汁。就係一碗很普通既叉燒飯。如果沒有期望就唔會失望。我承認期望過高,唔知係戴師父冇將真傳悉數授徒,定係本身功力只是如此?明明係有心做好既,希望下次來到會有改進吧。…Read More
