神燈海鮮酒家一直以來在我心目中都是全港首屈一指的粵菜餐廳,憑着一道黑松露玻璃燒鵝打響名堂,繼早前於銅鑼灣開設分店後最近又再下一城進駐尖沙咀,環境寬敞舒適。除了最為人所知的招牌菜黑松露玻璃燒鵝之外,不論是魚香茄子煲、懷舊蝦多士、即燒古法金錢雞等經典粵菜,抑或是法式蜂蜜芥末蝦球、蜜煎煙鴨胸配蝴蝶餅、紅油千層峰小卷等特色小菜,以至於鮑參翅肚都一應俱全。蜜汁脆燒鱔 ($278)有別於經典淮陽菜式「無錫脆鱔」般會將鱔切條並炸得鬆脆,而是將鱔切段煎至金黃後再裹上蜜汁,表面形成一層焦香甜蜜的脆皮,魚皮爽滑厚實而肉質鮮嫩彈牙且毫不帶腥。即燒伊比利亞叉燒皇 ($258)選用西班牙伊比利亞黑毛豬梅頭肉,油香豐腴而又不失肉味,肉質軟嫩多汁而邊位焦脆,蜜汁甜度恰到好處。黑松露玻璃燒鵝 1/4隻 ($238)鵝皮烏漆墨黑但絕非燒焦所致,據知先以黑松露及秘製醬料醃製再經風乾,雖然脂肪及骨量相對較多而肉量不算相當飽滿,但依然皮脆肉嫩之餘肉汁充沛,陣陣黑松露香味撲鼻而來。另外附上燒鵝汁及法式松露醬兩款特色醬料,前者彷如鵝肉精華般濃郁提鮮,而後者將黑松露揉合經典酸梅醬,酸甜解膩亦令松露香氣更上一層樓。港式特濃雞湯翅 ($888)真材實料用上足足八両翅絕對物有所值,雞湯既清而濃,味道有如將整隻鮮雞精華濃縮一樣,濃而不膩,而雞肉肉質亦保持細緻並不粗糙。有米佬豬手 ($298)即點即製需時約20分鐘,炒飯加入豬手炒得乾爽且粒粒分明,每一口都有如飯焦一樣香口鬆脆,味道以紅椒、豆豉等香味為主,豬手軟嫩彈牙而鹹香十足,雖然整體鹹度偏高但口感實在相當豐富。…Read More
