不知不覺已經兩年無去過旅行,真係好掛住日本嘅美食,好彩香港都有好多正宗嘅日本菜。睇到蔡瀾介紹中環呢間新開嘅炭燒鰻魚專門店覺得好吸引,所以嚟試下。首先上枱嘅係啤酒,wine menu上除咗日本清酒燒酎之外,估唔到有draft嘅手工啤酒分別係大阪Minoh Pale Ale同香港少爺啤飛雲。Minoh Pale Ale啤酒花香氣同苦味明顯,帶有柑橘香味。少爺啤飛雲同樣都有柑橘香味,但感覺更清爽而且苦味輕微鰻魚厚燒玉子係以充滿高湯嘅雞蛋包住蒲燒鰻魚,微甜嘅蒲燒鰻魚配埋鬆軟濕潤嘅玉子燒,係個完美嘅組合八幡鰻卷賣相精緻,用鰻魚捲住牛篣以炭火慢燒。鰻魚表皮燒得香脆,肉質有彈性,配埋爽脆嘅牛篣令口感更豐富淡路島名物洋蔥比一般洋蔥甜度高,洋蔥並唔係烤到非常熟,保留到洋蔥嘅辛辣味,食落惹味好適合送啤酒。一條鰻魚只有一個肝,一串已用上五粒鰻魚肝。第一次食鰻魚肝,原來口感同味道有少少似雞肝,味道帶點甘味但邊位有咬口,相信因為夠新鮮所以無半點內臟異味。我哋坐喺廚房玻璃窗前,可以睇到鰻魚由生慢慢炭燒至熟嘅整個過程。鰻魚膳包括沙律、海膽溫泉蛋同鰻魚飯三吃。鰻魚飯用上整條鰻魚,飯量足足有兩碗,適合兩個人分享白燒鰻魚只灑鹽而無加其他調味,比起蒲燒更能食到鰻魚本身嘅味道,所以對鰻魚本身嘅質素要求更高。炭家採用日本養殖鰻,由日本空運到港嘅活鰻,由於成本高,香港好少餐廳食到日本活鰻。白燒鰻魚肉質鮮嫰,由於係活鰻所以肉質比一般更結實有彈性,唔會過份鬆散鰻魚皮慢燒到微脆,其中尾位最香脆鰻魚肉香濃郁完全無泥味,而且啖啖炭燒香氣除咗平時食鰻魚飯必定會加嘅山椒粉,仲有即磨山椒提供,即磨山椒香味更加突出。鰻魚飯三吃意思即係三個食法,首先品嘗原味,然後加埋蔥花、wasabi同紫菜,最後加日式高湯做茶漬飯。前菜海膽溫泉蛋賣相吸引當中有幾件鰻魚,鰻魚凍食肉質更結質。除咗就咁食,將鮮甜嘅海膽同溫泉蛋用嚟撈飯都好好味沙律新鮮而且份量足,豚肉薄片配以微酸和風沙律醬汁好開胃。鰻魚膳揀咗白燒,想試下蒲燒鰻魚,可以點蒲燒鰻魚串試下。蒲燒汁微甜,唔會搶過鰻魚本身嘅鮮味,醬汁同鰻魚原味兩者相當平衡整體嚟講食物好有水準,除咗食材本身質素高,再加上以炭火慢燒令鰻魚同串燒都充滿炭燒香氣餐廳環境同服務都唔錯,呢餐食得好滿足…Read More
