很久沒去九龍城找朋友,今晚放假又找她吃泰國菜。今次她介紹我到金蘭花用餐,她說金蘭花已有廿年歷史,可算是九龍城泰菜老字號,而且還不用加一,蠻便宜的。朋友嚷著很久沒吃泰式生蝦,那今晚就全交給朋友吧,反正我甚麼都吃😂生蝦底層鋪滿冰塊,冰鎮讓蝦肉更為結實,而且蠻新鮮。一口連蒜頭與辣椒吃下,沾上醬汁,別有風味。 另外生蝦旁邊少有地有炸蝦頭,聞起來很香,沒有把它炸焦,顏色很漂亮,口感很酥脆,裡面蝦膏的部份,精華也還在頭裡,且全部都可以吃。蒜蓉法國麵包香蒜濃郁的香氣馬上聞到,每一片麵包都烤得金黃酥脆。濃厚的蒜香味,與麵包搭配在一起,鹹鹹的不衝突,加上烤得脆口,讓人吃得滿嘴蒜香停不下來。馬拉盞炒通菜不會過鹹,但吃得出馬拉盞的惹味,再搭上爽脆的通菜,這盤通菜很快就見底了。九層塔香茅泰汁炒花蛤大火快炒,上桌時香噴噴的,花蛤吐沙吐得蠻乾淨,吸附微辣微酸的醬汁,非常開胃。在嘴裡咀嚼時慢慢散出九層塔香茅泰汁的香味,將花蛤的鮮味襯托出來。辣椒膏炒大頭蝦一股辣椒味瞬間飄出,大頭蝦以辣椒膏,青椒,辣椒,洋蔥等多種天然蔬菜炒香。蝦子很大尾,感覺鮮甜無比,肉質很有彈性。我們細細咀嚼,鮮甜甘美的蝦膏與辣椒膏交織,充滿菜蔬的香味,看似很辣的大頭蝦,或許添加洋蔥,青椒,口味不會覺得很辣,反而香辣中帶點新鮮感,嚐起來充滿迷人的泰式風情。鮮蝦冬蔭功湯蝦的數量給得大方,還加入了不少的草菇在其中,喝起來帶有明顯的香茅,檸檬葉香氣。湯的濃稠度比平日喝到的高,而酸辣程度也是加倍的,我大口大口的喝,最後喝了兩碗。看到別人喝鮮椰青,朋友也來一個。椰青稍微剖開,清涼暢快微甜的椰青水,令朋友口渴的感全消去。附上的匙羹,還可以用它挖取享用這肥美與甜美的椰子果肉,吃起來淡淡的甜味,但味道很香。椰汁三色冰色彩繽紛,濃的椰汁香氣,裏頭配料十分豐富,多款啫喱,還有大樹菠蘿很紅毛丹,口感還蠻有層次,鬆,綿,脆,彈都有。…Read More

九龍城大大小小的泰國菜館相信有數十間之多,但要找到一間廿多年 的老字號,就不是一件容易的事,皆因香港租金增幅驚人,加上經營成 本高昂,要保持水準而屹立廿年不倒,實有着一定的難度,所以一向 支持小店的筆者,每隔一段時間來到九龍城食泰菜,都必會優先考慮一間用心經營的泰菜小館。這店位於龍崗道,沒有華麗的佈置,裝修跟一般地道老派泰菜小館無異,傳統簡約, 蠻有泰國風味,亦算坐得舒適,帶著點點昔日九龍城的懷舊風情。較早前跟朋友又到九龍城覓食,想當然第一時間再訪這老店,踏入店 内已有一種熟悉的感覺,裝潢沒有多大變化,老闆都是一貫的親民, 打開餐牌,菜式價錢仍是較一般相宜,還是免收加一,筆者當然點了 必叫的泰式生蝦,還有蒜蓉牛油雞翼、什錦沙爹串燒、招牌脆皮烤豬手及 馬拉盞炒通菜。泰式生蝦,一向是筆者這個蝦痴的至愛,每次食泰菜都一定少不了,那爽甜的蝦身加上酸辣濃香的醬汁,實在令人回味。而這店的生蝦外表晶瑩光澤,除了爽甜還外加上一種黏軟口感,用料新鮮,配上生蒜片、 辣椒絲及自家調製的泰式酸辣醬汁,開胃刺激; 而店家更將蝦頭炸脆一同上碟,完全不會浪費,咬落香口卜卜脆, 蝦腦蝦膏入口甘香惹味,跟生蝦一清一濃,構成了對比的口感, 一次過滿足了兩種口味,感覺特別。蒜蓉牛油雞翼,雞翼炸得金黃微焦,外脆內入味,味道剛好很惹味,但以蒜蓉牛油雞翼來說就略欠蒜蓉牛油香,跟越南餐廳吃到的有很大出入,可能是筆者先入為主吧。什錦沙嗲串燒,這店的串燒order很有彈性,$13元一串即叫即烤,有雞、牛、豬、雞腎、魷魚鬚和雞軟骨等選擇,每次最少點六串,可每款一串試齊6種,雞牛豬經香料調味略醃過上了底味,燒得微焦香身,不沾醬佐吃已肉香味濃,點上甜香濃厚的沙嗲醬汁,更覺惹味。而雞腎、魷魚鬚、雞軟骨搽上了泰式烤醬調味燒熟,雞腎的煙韌爽脆,魷魚的軟香彈牙,雞軟骨的脆香可口,夾上香料及沙爹的濃厚花生香氣,一口一塊大小剛好,每啖都為味蕾帶來新刺激。泰色燒豬手,外皮炸焗得薄身酥脆,大部份肥膏已溶掉,像在吃乳豬皮一般,入口鬆化骨膠滿滿;内裡的豬手肉已全部起骨,啖啖肉完全合乎筆者的懶人原則,肉質軟嫩帶纖維,味道鹹香不膩,蘸上泰式甜辣醬汁,帶起了鹹香的味道,個人意見如能提供多一款酸醬選擇例如黑醋佐食,幫助去膩及更具層次,應會更受女士歡迎。值得一提這豬手應是新近推出的菜式,現在以 $158 這價格,還會送上兩枝啤酒或汽水,實在是優惠抵食。馬拉盞炒通菜,吃了這麼多肉,當然要來點菜蔬中和一下,而食泰菜通常都會令筆者想起馳名的泰國飛天通菜,在香港當然沒有這類表演,但那馬拉盞炒通菜的風味還是可以的。這店的通菜炒得都頗夠鑊氣,微辣鹹香,爽口脆嫩,濕潤得來不油膩,做得不錯。 這店的質素及滋味這麼多年仍舊沒變,徹頭徹尾都讓人感覺是一間正宗地道而用心經營的老舖,清一色的泰籍廚師應可記一功。期望小店能繼續在傳統地道與創新變化當中取得平衡,跟上時代巨輪堅持經營下去。…Read More
