上到去餐廳坐滿一圍又一圍枱的食客,我哋坐的位置可以望到大廚係開放式廚房度拋鑊 — 超級大隻鑊呀😮*:.。..。.:*・蛇宴・*:.。. .。.:*🐑 雙冬生碧羊腩煲.大大煲,好足料,羊腩夠腍,枝竹入味.仲有新鮮生菜可以加入去淥熟𠻹🥦 瑤柱扒西蘭花.每人得幾棵仔,感覺份量少一啲🐍🍲 菊花五蛇羹 (共兩窩半!).多雞絲、多粉絲、連蛇肉也切得很絲,唔係好食得出來,不過幾好味,本人食咗2碗😋🐍🍢 石榴炸蛇丸.炸得像石榴,乾身不油膩,口感爽彈,我覺得味道有啲似蝦丸😂🐓 原隻密實貴妃雞.滷得入味,雞肉嫩滑多汁,沒太多皮下肥🐓🐍🍲 響螺、淮山、杞子、烏雞燉三蛇.清晰嘅燉湯,味道非常之濃厚,很好飲,一碗唔夠,要飲2碗起😋🥬 蛇湯浸娃娃菜.娃娃菜入味又甜美,我食咗很多條菜呀!🐟 原條陳皮蒸蟠龍鱔.蟠龍鱔因為太肥厚肉,初時上枱嘅肉似乎未熟,有啲咬唔到,店員再送回去蒸多一陣就ok啦,入味嘅,很多豆豉和蔥👍🏼🍖🍚 臘味糯米飯.粒粒飯都軟糯口感,入味,又多臘肉臘腸粒,炒得幾好味🍯 香芋西米露.西米不太多,但暖暖的,滿椰香,香芋粒粉口,味道不太甜,就吸引到我食咗2碗😋埋單都係 HK$3,280 (10位用),另收加一服務費,都幾抵食喎。…Read More

曾經同班「死佬」朋友搞過兩年蛇宴飯局,由於依家比較少酒樓會晌秋冬推出蛇宴,所以,近兩年都無搞咯。繼三聖海鮮夜同大埔私房菜,一班老細一時興起又話想搵番次蛇宴,先後問過深水埗嘅蛇王協同蛇王業,大家覺得有點貴之餘,主因喺菜式太「蛇」:(,10道菜有8道都喺蛇菜,覺得「負擔」太大。後尾搵到富臨都有做蛇宴,但未計茶芥加一,亦唔包酒水,都已經$3,480,即喺埋單四千起計 。最後,有提議「星廚管理學校」嘅蛇宴。聽個名就知喺間烹飪學校,來頭喺點,小弟就唔多講,反正人家有官網(www.starchef.edu.hk),網頁有齊學校歷史、創辦宗旨、傳媒報導……等等。總之,教學之餘,秋冬會辦吓蛇宴,過年會辦吓團年、春茗。飲食,好多時會講到「不時不食」,即喺食材要夠時令,今晚嘅蛇宴更喺近乎「煮完即食」,夠晒新鮮熱辣,點解?一睇現場環境你就即刻明晒,幾步之隔就喺灶頭,「開放式」廚房就在眼前,我哋就喺對住個「廚房」開餐,仲要被安排坐到正對住嗰張枱,故此,一邊食,一邊睇大廚做菜,雙料娛樂。再講多少少現場環境,將平日上烹飪班做菜實習用嘅大鋼枱拍為長形,鋪上膠枱布,就成為我哋用餐飯枱。因為地方所限,拍好6張「飯枱」,留番少少通道,再多點地方都無,但逼得嚟好有氣氛,又有啲地踎感。原來「星廚」嘅蛇宴頗有人氣,所以,是晚爆滿收場!蛇宴共有10道菜($2,380),當中只有4道菜包含蛇嘅成份,送汽水、啤酒共12罐,無任何雜費,圍起每人都唔便嚿水,非常之抵食:)。每年10月搞到翌年2月,逢星期日晚供應,分兩輪,6:00-8:00pm及8:30-10:30pm。由於專注只做全場6枱客嘅生意,煮完即食,一道菜接一道菜接,節奏明快,食完所有嘢都只不過喺10:00pm左右。雖然蛇宴包咗12罐汽水、啤酒,唔夠飲可即場買,每罐$6,不過,訂枱時講明只有可口可樂及獅威,所以,歡迎自攜飲品。我哋一班死佬就最心多,搵幾個人買嚟兩打汽水,樣樣有啲,實行人哋「隊」酒,我哋就「隊」汽水,一於盡興而歸,高高興興除舊歲!校方再三叮囑,記得準時出席,絕對唔等人就開餐,果然,一到8:30pm就大廚出馬,開爐起鑊。除咗晌街邊大牌檔之外,相信都無乜幾何可以睇到廚房做菜嘅場景,仲要一次過煮6圍枱份量,真喺唔嘢少。佢哋又唔介意你哋影相,睇住煮菜全程,個大廚好似玩魔術咁,兜吓炒吓,第一道菜咁就可以出場。第一道菜上枱都會比較氣氛熱烈,好似去咗飲咁,全場爆滿,「飲杯」聲此起彼落,好不熱鬧!最難得喺搞咗咁多次死佬飯局,依次「夫添」最齊人,所以,就更加熱鬧。瑤柱扒西蘭花整晚菜式都跟番菜單一道道菜上枱,先嚟嘅瑤柱扒西蘭花,西蘭花仍有少少爽月脆,茨汁無過漿,內裡有唔少瑤柱碎、瑤柱絲,味道剛好。石榴炸蛇丸是晚第一道「蛇」菜,以一圍12人計,人人兩粒。外層沾上麵包粒,賣相猶如石榴。蛇丸炸得好香脆,新鮮熱辣放入口,一咬彈牙又爽口,正呀!菊花五蛇羹(3窩)蛇丸上枱無耐,隨即就捧嚟3大窩蛇羹,份量絕無欺場,人人兩碗已經走唔甩,晌蛇鋪食一碗都幾十蚊啦,依家小弟就前後食咗3碗,真喺翻本呀。兜一兜蛇羹可見真材實料,加啲薄脆、菊花瓣同食,啖啖蛇肉、木耳絲,口感柔滑,果然行氣活血,食罷成身暖晒,個個死佬除淨件 T恤!(註:如想再添薄脆,需另付$10碟,而且數量有限)密實貴妃雞唔知點解叫「密實」,總之喺隻好食嘅豉油雞,鹹甜細緻,皮下脂肪又少,雞肉好嫩滑,師傅手勢真有一手。雙冬生碧羊腩煲一大煲羊腩煲,同樣份量十足,便攜式氣體爐滾住食,食得我哋更加熱血。雙冬指冬菇同冬筍,加埋一大碟生菜,啲羊腩炆得好食到不得了,軟腍微羶,醬香滋味。就連啲生菜,沾滿醬汁後都寧捨好味,只喺奈何無白飯供應,而生菜想俾錢食多碟都唔得,因為被之前第一輪食客搶購一空。響螺、淮山、杞子、烏雞燉三蛇大家食得興起之時,已送上一大盅燉湯,撈一撈驗明正身,原隻烏雞,仲有響螺、蛇肉,又喺童叟無欺之作,好嘢自然無得呃。烏黑嘅燉三蛇湯,溫醇清香夠火喉,啖啖精華入口。蛇湯浸娃娃菜幾味香濃嘅菜式,喺時候以一道較清淡嘅菜式作間場。平時超市幾蚊一包嘅娃娃菜,經蛇湯浸一浸,再淋上玻璃茨,有種升價十倍嘅效果。娃娃菜食落很清甜,帶點點鹹香味。陳皮蒸蟠龍鱔蒸鱔恰到好處,肉質爽脆而油潤,又充滿幽幽陳皮果香,兼且惹味非常,食得大家都讚。碟底嘅陳皮豉汁,相信如有白飯供應,我哋實可以幫手食到清澈見底。臘味炒糯米飯平時去飲或食一啲酒席,去到尾聲嘅粉麵飯,大抵都喺作為墊肚之用,不過,晌度卻喺一場表演。雖然糯米飯唔喺生炒而成,但煮好嘅糯米飯,由下鑊炒,加醬油,加臘味,以至調味,如要炒得夠「勻巡」,睇落認真唔喺一件易事。晌依個環節,都有好多趣事發生,以上所有菜式都有大廚負責,而糯米飯先由幫工阿叔露兩手,一次過炒一大鑊糯米飯真喺不易為,見佢炒得幾辛苦,有少少力有不逮,再由大廚示範一吓真功夫,之後連在場「監工」嘅校長羅有昌師傅都忍唔住表演吓,果然功架不凡,睇得大家好開心。好睇還好睇,但好唔好食先?糯米飯炒得分明,上色均勻,飯粒煙糯入味,可謂平凡中見真章。香芋西米露酒席敬送嘅糖水,通常都喺預到啱啱好一人一碗,不過,「星廚」真喺唔志在搵錢咁,樣樣都大大份,就連最後嘅香芋西米露,都整一大大大窩你嘆,有幾大窩?有相為證,滔完一轉,都仲可以人人再添。質素雖無驚喜,但絕對唔差,西米無話黐埋一嚿嚿,芋頭夠粉香,又夠椰汁味。美心壽比南山蛋糕班大佬話好耐無搞過食壽包或生日蛋糕,所以,訂咗個美心「壽比南山」蛋糕嚟賀一賀依幾個月生日嘅老死,蛋糕嘅食評,另文再寫,但想藉個蛋糕講吓依度嘅5星服務。你見之前啲相,就知枱面好街坊,鋪張白色膠枱布就開餐,食到尾自不然污污糟糟,滿枱唔喺醬汁,就喺雞骨魚骨,但啲阿姐唔單止幫我哋清理好晒個枱面,仲拎咗啲碟同叉,以為兩把餅刀俾我哋用,實在喜出望外咁好招呼,而且,喺分文不收,絕無切餅費,所以,點可以唔講幾句讚一讚佢哋吖。雖然地方淺窄,但勝在夠氣氛,而且,啲阿姐、阿哥招呼非常好,有求必應,快手快腳樣樣自動波,值得一讚再讚。我哋13件死佬,加埋自攜汽水,每人唔使兩嚿水,食到捧肚走,仲要好好食咁先真喺叫抵嘛!要食又要等年尾,絕對值得下年再嚟過,真喺想搞番次死佬、死婆慶團年呀!…Read More
