To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 在油塘辦完事情,一行三人與一位初相識的外籍朋友共晉晚餐,好彩現在限聚令放寬了,可以容許四人一枱。外籍朋友就住該區,也喜歡中國菜,於是就選了這間上海菜館。第一次惠顧同名的菜館是多年前在上海,今次就在大本營也找到一間。店內環境寬敞,我們坐的是卡座,而且可以落下布簾,私隱度較高,在疫情下亦較安全。我們點了一個四人套餐,先來的是四人份量的文思豆腐海皇羹,除了切成絲般幼的豆腐及髮菜外,還有魚片、蝦及帶子等海鮮。熱烘烘的端上來,需要放涼少少才可喝,羹的份量相當多,每人準有三、四碗。涼盤四小碟,先是鎮江餚肉,這個是我經常會點的涼盤,因為製作過程需時,自己很少會做的。做得也不錯,只是肉的部份稍嫌不夠滑。味道較為淡口,蘸了鎮江醋就剛剛好。繼而是雞絲粉皮,有雞絲、青瓜及碎花生,粉皮亦算爽口,麻醬濃稠適中。然後有蔥麻油海蜇頭片拌青瓜,上海一帶的人喜歡吃較為爽脆的海蜇頭,有別於廣東燒味常用較為腍滑的海蜇鬚,食法不同。除了海蜇頭及青瓜外,還有雲耳,幾樣都很爽脆,味道亦可以。還有的是四喜烤麩,烤麩是一款素菜,上海菜館做的烤麩多是用刀切的,而且味道是較甜,我家做的烤麩是手撕的,還加了金針結,味道卻是少少偏鹹的,蘇浙人士一食就可以分辨出來。烤麩內有冬菰及雲耳一同燜,還用上了花椒八角等香料。四款主菜,先有糖醋里脊肉,外國人食中國菜都喜歡這類菜色,酸酸甜甜而沒有骨,這個菜的酸甜度適中,獻汁亦收得剛好。京蔥爆花膠用上很多的京蔥,花膠片也有很多,不過是較為爽身而膠質不多,醬汁很惹味。濃湯竹笙浸津白,竹笙與津白本身都沒有味,全靠餵上濃湯才會入味,加上幾粒杞子作點綴。糟溜魚片的魚片十分爽滑,酒糟味濃郁,雖然幾款菜都有雲耳及杞子,但味道不同,只是有初相識的朋友在座,所以不便去試那湯汁的味道。甜品是高力豆沙,用蛋白炸成外層軟綿綿的,但當心熨嘴,而且高力豆沙球也相當大,裡面的紅豆沙也熱,所以適宜慢慢食,況且那些糖粉也有嗆喉的機會。四人套餐份量足夠,餘下的都要由我來清碟。原價$968,用某張信用卡有七折,折實$677.60,免茶芥,另收加一,性價比不俗。…Read More

和平飯店可以話係我同fd子飯聚嘅飯堂,貪佢方便就腳,價錢唔會太貴,味道亦唔錯。我地一行四個人,於是我地今次點左四人餐。依個餐份量十足,可以揀三種前菜、一款海鮮、兩份熱菜,另外仲有每人一碗湯、野飲,同埋一份甜點。前菜方面,我地揀左醉雞、鎮江肴肉,同埋雞絲粉皮。醉雞酒味濃烈,雞肉嫩滑,放起面頭嗰啲食落非常香。但係下面浸喺酒入面嗰啲雞就酒味略嫌太濃,有啲苦澀,沖一沖水再食會好啲。鎮江肴肉不過不失,食落個口感好似硬身嘅啫喱咁,味道偏淡。至於雞絲粉皮,其只要花生醬夠香就會好食㗎啦,所以都唔錯㗎。海鮮我地要炒蝦球,蝦球新鮮彈口,抵讚嘅係有挑腸!至於湯呢,餐係指定跟蟲草花煲豬𦟌,每人一盅,非常足料!熱食方面,我地點左糖醋魚塊同埋花膠紅燒肉。除左花膠有啲腥之外,其他都唔錯。尤其係紅燒肉唔羶,值得加分。後黎我地另外點左個松子黃花魚。其實係因為我地習慣去邊度食上海菜都會點依味餸。我地落完個四人餐先醒起,如果唔係我地可能唔會揀糖醋魚塊🙈黃花魚炸得脆,但係切落去有啲硬。糖醋汁甜酸適中,唔會蓋過黃花魚嘅味道。不過,雖然黃花魚唔腥,但係就無乜黃花魚嘅香味,只可以話係不過不失。甜品方面,餐係跟香蕉豆沙高力。高力新鮮炸起熱辣辣,香蕉豆沙餡唔會太甜,不過都有啲膩,飲番杯茶就啱啱好。…Read More

我家附近的大本型商場由9月29日試業到現在差不多一個月,由最初只有少於三分之一的商舖開業,到現在差不多有一半已打開門做生意,人流越見旺盛。今日終於有機會試新食店,就是這間和平飯店,是擁有 40 年歷史的叙福樓集團打造的滬京川品牌,印象中只開業兩星期左右。我事前是沒有抱任何期望,希望食物味道正正常常就好了。下午六點未夠,晚市還沒有開始,已經有一條小人龍,情況就像前陣子客家好棧剛開業一樣,說明港人喜試新湊熱鬧的心態。到六點就準時放客人進內,我和男友理所當然獲分配二人座位。舖面頗大,有圓檯和四人卡位,圓檯相隔較遠;二人檯則較迫,只相隔一個身位而已。食物方面,新張期內一籠鮮肉小籠包只賣$8(原價$24),非常抵食!且皮薄餡靚,肉質鮮嫩。我握筷子不靈光,吃第一件就不小心弄穿外皮。早前我家收到大本型的宣傳單張,看到有優惠券就即時剪下來,所以這客雞絲粉皮是免費的!抵呀!份量比較吝嗇,以為是因為免費,後來看其他人的食評,反應都是一樣。食味倒是不錯,雞絲嫩滑,青瓜和粉皮都夠爽口,且花生醬味濃,甚至濃得有點過頭。鎮江肴肉是將德國鹹豬手蒸6小時,令皮肉跟骨完全分離,再取其最腍最滑的水晶肉上碟。整體不論口感和鹹香度都適中,如透明部分再軟身一點會更好。花雕醉雞:骨的部分偏多,雞肉也不夠酒味,幸好雞肉還算嫩,僅僅及格而已。火腿津白反而意料之外好味!津白固然鮮嫩無渣,金華火腿也切得夠薄,最最重要是金華火腿香完全滲入津白裡面,因為火腿還火腿津白還津白是很多食店的通病。這裡做的完全滿足了我的要求,吃得我和男友連聲讚好。一入秋轉季,在街吃飯總想喝碗老火湯,滋補一下。看到有三款滋潤燉湯,當然不會放過。三款分別是茶樹菇排骨燉湯、蟲草花豬肚燉湯及弄堂牛肉燉湯。我點了茶樹菇排骨燉湯,茶樹菇營養價值高,有助治療胃寒、水腫等問題,對我這等脾臟虛弱的人極之適合。燉湯很足料,內裡有兩大件排骨和不少茶樹菇及杞子等,絕不欺場。分了一點給男友後,我就獨佔燉湯,喝到最後一滴不剩!因為不太餓,所以沒有點飯麵之類。埋單連加一$202,價錢合理。服務有待改善,主要是寫菜較慢、食物上錯檯的問題。整體「和」味又「平」民,值得一試。…Read More
