剛去完旅遊回來,相約友人在其公司附近晚飯兼送手信。友人選了在港鐵站附近的一間酒樓,說是有抵食小菜,由他們訂位。酒樓是屬於一個連鎖集團,我們到的是觀塘區位於港鐵站附近的一幢人流相當旺的廣場上,因為他們放工即來,所以訂得比較早,我到的時候較早,見還有很多位,但到我們人齊時已經差不多滿座了。酒樓有供應火鍋及小菜,而我們就選擇了小菜。人齊後就先點菜,再慢慢說旅遊的經歷。我們一共四人,點了每位一份蠔皇八頭鮑魚扣金錢($9.80 X4)、金銀菜燉白肺 ($128)、豉汁蒸白鱔($108)、泰皇蝦球通菜 ($78)、鐵板黑椒德國豬手 ($108)及生煎菜肉包6隻 ($38),另加白飯。真的,蠔皇八頭鮑魚扣金錢只賣$9.80,差不多比一份三文治還要便宜,又怎可不試呢?每位一隻八頭鮑魚、一隻冬菇及一些西蘭花,鮑魚大大隻炆得夠腍,嚼口煙韌,如果是在西式食店,真的可以用刀叉來品嚐。冬菇亦厚身爽脆,而蠔汁都相當好味,我們吃完鮑魚後還留起來撈飯。金銀菜燉白肺不用杏汁來燉而用金銀菜,較為傳統。除了豬肺及金銀菜外,湯裡還有豬肉、雞肉、雞脚,杏仁及紅棗,燉得都很甘香,四個人每人都可以有兩碗。豉汁蒸白鱔的豉汁不會太多太鹹,白鱔也有鮮味及肉質爽脆彈牙,做得很好。泰皇蝦球通菜味道不錯,不會太辣,蝦球也很爽脆,唯是稍嫌鑊條不夠。而全晚最精彩的要數鐵板黑椒德國豬手,估不到竟然會在中式酒樓吃到這道菜色,豬手做得夠腍,豬皮爽而煙韌有嚼口,不覺肥膩。豬手的瘦肉部份亦夠腍軟而不黐牙。伴碟白色的洋蔥看似很生,但其實已經煮熟了還帶點甜味。醬汁帶有醋味可解肉類的飽滯感,味道恰到好處,果然友人的介紹不錯。最後是生煎菜肉包6隻,雖然是漏了單,但總算即時補救到,上枱時是熱騰騰的,味道不錯,但可能是趕製的關係,感覺上是不夠乾身。這一頓豐富的晚餐,平均每位$160,有這麼多菜色,應該是很抵食的了。…Read More

自小常到酒樓吃飯,因父母覺得坐得較舒適,不過因有茶芥下欄,選酒樓時都要看看有甚麼吸引的特價菜式。是晚去接父母收工,看上了富臨這期的推廣優惠,$9.8有一隻八頭鮑魚呢!不說不知原來觀塘廣場有十五樓,要乘電梯直上。平日七點到來,已經很旺場,火鍋小菜均有捧場客。是晚為著鮑魚而來,再點了數個小菜和一個湯。鮑魚先來,雖是特價但也不欺場,比湯匙還要大。 鮑魚有嚼勁,但也炆得夠腍,不是罐頭品質的「腍滋滋」。花菇十分大隻厚身,用鮑汁炆得入味。西蘭花也爽脆翠綠,沒有泛黃。家裡做豬肺湯很花功夫,難得見酒樓有,價錢又合理,絕對是省時省力。豬肺雖然沒有想像中雪白,但也洗得乾淨,證明沒有用漂白水加工;口感鬆軟,一齒即離。金銀菜是新鮮白菜及菜乾,令湯頭味道濃郁。雞件、雞腳、豬肉也加入在內,湯味更為豐富,但也沒有過份的油膩感,依然清徹易入口。竟然在中式酒樓會有德國豬手吃,做起來也有板有眼,用燒得熱辣的鐵板上,淋上分開的黑椒汁,加添港式風味。店員將原隻連骨豬手切開才端上,方便食用。豬手不是德國炸豬手,而是港式的黑椒豬手,豬皮煙韌彈牙,不覺肥膩。配上黑椒燒汁,很是惹味,送啤酒一流。豬手份量頗多,肉也不少,四個人分十分足夠。菜是泰式的蝦球通菜,用上香辣的參巴醬,爽脆的通菜也變得很惹味。蝦球爽脆彈牙,不會霉口,加上醬汁裡的蝦米,一乾一鮮,令味道更為豐富。豉汁蒸白鱔的豆豉醬份量下得剛剛好,不會過鹹,剛好足夠調起白鱔的鮮味。白鱔肥美,皮下脂肪有油甘香,魚肉嫩滑,平時不多吃鱔的我也吃了不少。白飯不想吃多,但又有點意猶未盡,看到晚市餐牌有生煎包吃,也就點了一客。生煎包竟然即點即做,所以要等上些時間。包做得比較濕潤,但勝在包皮很薄,肉餡足料,也不錯的吃。在傳統的中式酒樓竟然有德國菜、泰國菜,中式也有上海包點、廣東燉湯,十分多元化。 要在連鎖酒樓的競爭中生存,實在需要花點功夫增值自己,才有招徠。…Read More
