群記牛丸豬手可以說是遠近馳名,聽聞不少人專登駕車入粉嶺吃麵,區內更加是無人不曉,今天中午,本小姐又和這位老友舊聚。這家店是傳統麵檔格局,鋪面內外裝修都沒有跟著時代變遷,店內就連冷氣都沒有安裝。一坐低店員就走過來放下一小碟辣椒油,兼且落單,今天想吃牛丸,於是點了大牛丸米粉($39)。不消5分鐘就端上來,一碗丸米整整有12粒牛丸!很足料!牛丸是手打的,結實彈牙,而且牛味濃郁;米粉爽口幼滑,不會太淋,軟硬適中。這裡的湯底其實沒有特別,因為眾所周知,這裡的辣椒油才是好吃得令人戰慄。辣椒油應該採用了多種材料,導致吃下去的味道豐富,香辣之餘也很香口,富有其他食材的味道。堂食的話,這裡的辣椒油是任裝的!於是我把辣椒鋪滿牛丸和米粉上,務求每啖都嚐到辣椒😏。群記裝潢已經保留舊式風味,味道當然也盡力傳統。現在,新派的餐廳湧現,這種傳統小店已經買少見少了,大家有時間就要去嚐嚐了😭。…Read More

甚少踏足粉嶺,當天參加了「馬寶寶有機農莊」的導賞團,原來農莊與聯和墟只是兩條馬路之隔。中午是自由的用餐時間,老公跟我別無他選,因為三年前在給「群記」的食評裡,除留下了滋味,還埋下了伏筆!別來無恙的「群記」,依然是人山人海,舖外的人在等外賣,舖內的人在等吃、等位和專注於美食中。我們當然是等位,兵分兩路,老公率先等到一張三面的四人檯,由於這檯一面已靠牆,剩下三面讓四人分坐,雖有點劑迫,但總算是可以坐下來。剛坐下已聽到侍應在喊:「只剩牛丸和牛腩。」!有些剛進的食客聽到,立即回個頭便離開,我還是心靜如水地坐著不動,想想伏筆可能要逾期才能完成!落單後,男侍應隨即送上兩小碟辣椒油。「群記」的辣椒油是以香甜為主,辣度輕微,相信愛它的人就是為了那股如磨豉醬與秘方混和所溢出的香氣和甜甜的味兒,雖然刺激度不高,但則富有特色,相信非獨有的話,在香港也難找到類同的了!我要了細的牛丸米。「群記」湯底的韻調簡單,就是一點點的鮮味夾雜輕鹹,入口暢順,襯托爽口的米粉,感覺撲實。而著名的牛丸,則以爽口幼滑、透出自然牛香見稱,雖與我喜歡粗丸的質感、風格與口味完全不一樣,但各具優點,各有捧場客。老公要齊了當時僅有的牛丸和牛腩,襯上他喜歡的滑溜河粉。這件原汁牛腩帶有筋膜,而且筋膜還有如軟骨般,非常爽脆;牛腩肉亦燜煮得軟腍,足證選料與做功也並無馬虎。至於所謂的原汁,經品嚐過後,認為介乎保留牛腩的原味與輕量的調味之間,入口可嚐到丁點醬汁的道味,但還是以牛腩的原味為主道。多得年青侍應的幫忙,搶先為我們奪得這碟家鄉炸卷,正因三年前未能嚐到的家鄉炸卷埋下了伏筆,今次可一償心願了!家鄉炸卷以牛肉作餡料,腐皮捲包作外層,加上喼汁調味,令我想起廣東點心的山竹牛肉來,一蒸一炸,兩者有著異曲同工之妙。入口腐皮半脆,饀料的牛肉較為粗糙,擁有如純手琢牛肉的嚼感,跟牛丸的幼滑形成強烈的對比,而牛味則相當突出,再蘸上喼汁,令家鄉炸卷更為醒神!剛過下午兩點,其中一位侍應大喊:「豬手可落單。」!頃刻彷彿有千萬隻手舉起般震撼,有的食客還擔心落空,要跟侍應再三確認!我們的大豬手來了,打從家鄉炸卷到美味豬手,一切都來得失而復得似的。美味豬手以白滷水的方法烹調,我最喜愛它難得的爽彈與煙靭。無論豬手的瘦肉、皮層、脂肪或筋膜,絕不會軟乎乎得毫無個性來,就連脂肪都是爽脆的,愈吃愈有味道,而且也不會產生膩意!當天的美味豬手可能因趕功的關係,入味程度沒有三年前所嚐的佳。一別三年,「群記」的佈置、辣椒油的標語及擺位,和一切一切皆沒有絲毫變化。人說香港人善忘愛變,但「群記」不變的正能量,把低下頭來專注玩弄手機的低頭族或品嚐麵食的客人,統統給抬起頭來,顯然「群記」的吸引力並非來自新鮮感,證明舊的可貴和價值。究竟香港政府還要以住屋問題作擋箭牌,剷平多少具本土特色的樹木、果園、農地,拆毁幾代人辛苦營造的家園,催毁富有本土特色的鄉郊景色、農業、漁業及禽畜業,要香港窮得只剩下石屎來,何不認真檢討房屋和移民、人口政策,確在令人痛心!只懂將舊物拆毁,眼前的香港已經面目全非,變得愈來愈俗氣!…Read More
