今日朋友帶我去食好西,去左半島酒度地庫食廚師發辦,餐廳叫釧,就等我好好記錄我呢餐難忘既午餐!🎑環境餐廳門外黑色裝修,餐廳「釧」標誌就好似月亮一樣高掛。穿過日本庭園風格走廊,見到餐廳糅合不同月相形象的設計特色,沉浸於一種詩意與華美的氣氛下享用佳餚餐廳有卡位及壽司吧枱,另設有包廂,為左可以見到師傳的廚藝同埋可以同師傳多啲交流,我當然選擇吧枱位置。當日仲係行政總廚鄭師傅為我地主理食物!📝餐牌午餐有3個餐選擇,分別係川($1,680)、華($1,280)、幸($980),會有不同頭盤同一品料理、壽司等等。我地就揀左入門既幸,有3款頭盤、10件壽司、1件卷物、湯同甜品🍢頭盤 —水雲菜北海道象拔蚌、間八魚配氈酒紫蘇花、法國藍龍蝦茶碗蒸- 第一道菜係清爽帶酸的水雲菜配上鮮甜北海道象拔蚌,醒胃既菜式,為廚師發辦午宴展開序幕。- 間八魚配氈酒紫蘇花用了貝殼紫色碗盛載,配上紫蘇花,燈光影射下既間八魚發出炫彩,晶瑩剔透。- 法國藍龍蝦茶碗蒸充滿蝦油香,慢煮藍龍蝦爽甜肉嫩,內裡仲有鮮帶子,雞蛋滑溜鮮甜🍣壽司 —魷魚、深海池魚、岩手県產石坦貝、池魚、毛蟹、金目鯛、赤身、拖羅、右口魚魚邊、海膽- 由淡口食到濃味既壽司,醋飯調味得宜,師傅話每款食材都係當日新鮮採購運抵香港,亦會揀選時令食材,每款魚類都經師傅配合不同處理方法及調味,例如炙燒、切割方法、加上柚子鹽、醬油等等,去帶出食材最佳的味道!- 最令我難忘既係岩手県產石坦貝,師傅專登問:「準備好未?」,原來師傅會係我面前拍一拍隻貝,貝會好生猛地收縮豎起來,師傅話呢款貝只係7月同8月有得食!味道爽甜,肉質厚實!- 另外右口魚魚邊都好驚喜,作為第9件壽司,呆詭當然好香濃,加上炙燒完迫出油份,魚肉閃令令,入口即融,食完魚油仍然有油香餘韻。🍙卷物師傅先鋪紫菜、要鋪飯、芝麻、炙燒和牛,醃蘿白、拖羅,純熟既技巧將卷物卷好!一口一件,炙燒和牛同拖羅油份充足,醃蘿白恰巧中和到,食落令人好滿足🥚玉子玉子好嫩滑,彈下彈下好似燉蛋一般!🥣湯湯由蜆肉、冬瓜及蕃茄熬制而成,加上少少花椒。蜆肉十分鮮甜,冬瓜亦好適合夏天食用🍧甜品甜品包括時令大糖嶺桃雪葩、豆乳福袋及黑芝麻朱古力。大糖嶺桃雪葩用圓形碗裝住,好似水晶球一樣,上面有粉紅「面紗」包住,打開時先見到粉紅既靚靚外貌,仲會聞到陣陣玫瑰花香,帶銀萡既雪葩下配有自製乳酪、紅茶啫喱、大糖嶺桃肉,職員叫我地要一啖食晒,口感豐富,雪葩既清甜,乳酪奶香幼滑,加埋香濃紅茶啫喱,仲有多汁既桃肉,味道好夾,係食得既冰桃茶!黑芝麻朱古力香濃到食完呼吸都聞刑黑芝麻味,帶住呢陣黑芝麻令我食完都可以回味住整個廚師發辦午餐👨🏻‍🍳服務由門口接待開始,職員笑容親切服務殷勤,令人有賓至如歸既感覺。每一枱客人也有專屬職員照料,所以可以即時回應我地既需求,服務亦十分貼心,亦會為我地介紹食材,令人感覺好舒服放鬆。師傳十分專業,對食材了解充足,我食壽司之餘更學識不同魚類及佢地既合時時令同食材配搭,酒有wine tasting,壽司就係omakase! 雖然以往食既廚師發辦都係日本師傅主理多,但香港師傅唔會有語言障礙,反而交流更好,所以我食完識食左,仲學多左好多魚同具類!🤑價錢$980+1/人🤤總結在一個伴隨月色的優雅空間內,觀賞師傅製作壽司既手藝,享受新鮮食材,同師傅交流同埋職員貼心服務,色香味俱備,食完會令人有滿足感同幸福感。…Read More
