前幾日去深水埗見到有間蒸氣海鮮,食飯時間好旺場,去到9pm都仲有人嚟食~ 門口有幾個大魚缸,養咗好多海鮮,包括斑馬賴尿蝦,肉蟹,波士頓龍蝦,鮑魚等等,全部都好生猛~入到去係傳統中式菜館嘅設計,梳化位坐得幾舒服~餐前送酒小食有蕎頭同脆炸黃豆,黃豆炸得好香脆可口,少少辣好惹味燒魚干 $48口感香脆,惹味可口,除咗鹹香中帶點魚香味同醬油味,點埋沙律醬食非常夾,送酒一流~刺身拼盤通常火鍋店嘅刺身拼盤都係麻麻哋,估唔到呢度嘅刺身拼盤質素唔錯~ 有三文魚、北寄貝、帶子、油甘魚、象拔蚌~ 三文魚肥美鮮美;帶子厚身鮮味;象拔蚌刺身都唔係度度有得食,好爽口鮮味👍🏻波士頓龍蝦蒜蓉開邊蒸龍蝦最正,肉質爽口彈牙,好鮮味~鮮海蝦海蝦新鮮,蝦肉結實鮮味,肉質爽口彈牙~鮑魚鮑魚大大隻,洗得好乾淨,肉質爽口完全唔韌~扇貝蒸完都無縮水,入口啖啖肉又鮮甜,配上粉絲吸收咗扇貝嘅精華最夾~貝殼三寶包括蟶子、青口、蜆肉~ 蟶子新鮮有咬口;青口大隻飽滿;蜆肉鮮味,一粒沙都唔會有~農家四寶蟲草花蒸雞配烏冬雞件一啲都唔肥,配上養生蟲草花好入味~農家四寶包括南瓜、芋頭、粟米、節瓜,食咗咁多海鮮食返啲菜平衡下~ 烏冬好滑溜,吸收咗蟲草花同雞肉嘅精華好入味~元貝粥底粥底煲到好綿,加入元貝、排骨,再加上之前蒸完嘅海鮮精華,味道鮮甜,推薦一定要留肚食粥~呢餐食得好滿足,海鮮份量同種類夠晒多,海鮮新鮮鮮味~ 店員都非常細心,每樣海鮮都把握最佳時間蒸同起鍋,令海鮮啱啱好熟又唔會過火,而且非常快手~ 食飯時間真係幾爆場,記得訂定枱就唔使排隊等~…Read More

晚上帶同外國朋友去試下香港美食,友人介紹下去小漁港,原因係質素穩定地好,唔洗左諗右諗食咩之餘,星期一至四免加一!成個食法係一開始食刺身,之後一路蒸海觧,之後底部就有粥底吸收海鮮既味道。刺身就一般,象拔蚌唔夠甜,有少少腥,北寄貝夠厚身鮮甜。到蒸既海鮮方面整體黎講海鮮都好新鮮同鮮甜。首先有蒜蓉蒸帶子粉絲,帶子好甜但稍為老左少少,整體都有8分。然後到蟶子,蝦同龍躉算係不過不失,叫做合格。比較要食真D既係隻蟹同埋馬刀貝,沙白同另一隻貝類,完全冇沙得黎十分鮮甜,自己去街市買都唔係時時買到咁靚,而且蒸得岩岩好,爽身得黎又出到鮮味。由於海鮮係比較季節性,所以其實大家再去食可以都未必次次一樣,但呢間店提供既都算係好唔錯。仲有係雞件蒸烏冬加蔬菜,雞油去哂D烏冬到,其實幾香,但係由於比較油,我唔係太鐘意。最後精華當然係煲粥啦,十分鮮甜,冇味精,一定要試。服務方面都幾好,有禮貌,仲會送少少甜品,但大家都飽到食唔落啦! 總之下次會番轉頭,或者休漁期之後啦!…Read More

天氣開始轉涼,又想起食海鮮蒸氣鍋,既暖身又健康。今次到訪的是在太子區的另一食店,開業兩年多,以著重選材,務求令客人覺得舒服及平靚正為目標。來到時是大約八時半,比我慣常的晚飯時間為遲,雖然已訂了位,但仍要稍待片刻才獲得安排。入到店內,但見樓底頗高,裝潢是帶著懷舊的氛圍,牆上的畫是新舊香港風貌的對比,而牆磚、木枱、木架以至碗碟及鍋蓋都很有懷舊氣息。座位闊落不覺擠迫,每枱旁邊放有木製多層小几以便放置食材。餐牌很簡單,主要為每位$298或$398的套餐,我太太的食量小,所以就點了每位$298的廚師是日精選套餐,包括有象拔蚌刺身拼盤、元貝、草蝦、鮑魚、貝殼三寶、蟶子、深海泥鯭、蟹、農家四寶,還有蟲草花蒸雞烏冬底及南瓜排骨元貝粥,都很豐富,據說會因應當天的食材供應而由廚師作出調整,並會於Facebook上通告。先來的是象拔蚌刺身拼盤,象拔蚌有少少硬身,但鮮甜爽脆,每人可以有多片,其他就每人一件,生蠔相當肥美,魚生及北寄貝都鮮味十足,令味蕾都準備迎接之後的海鮮。餐廳提供了豉油及山葵醬,為何我這樣說?不是所有餐廳都是這樣的嗎?因為雖然餐廳內設有調味區,但店長建議我們最好是原汁原味去品嚐新鮮的海產。蒸海鮮之中就只有元貝是加了粉絲及調味,元貝大隻而新鮮,粉絲也沒有加太多油,味道已經很好。草蝦也不細小,而且肉質紮實爽口,鮮味濃郁。鮑魚味香而肉質腍滑,煙韌有嚼口。貝殼三寶中以刀貝較為大隻,味道非常鮮甜。還是第一次食蒸北寄貝,肉身較為細小,論鮮味已經不錯,但在是晚的海鮮來說,算是要敬陪末座的了。蕃薯貝體積較小,所以每人有兩隻,但味道不容少覷,相當不錯。蟶子更是鮮甜無比,無需調味已經非常出色,情景就如韓劇中吃著美食時只會點著頭發出“唔唔”的聲音一般。深海泥鯭可能因為店員正在忙碌中,稍為多焗了半分鐘才拿出來,略嫌熟了少少。蒸蟹多膏多肉,每人一隻放在面前真是相當吸引。店長先給我們奉上滿載蟹膏的蟹蓋,還提醒我們最好不加調味。吃過蟹蓋後就輪到蟹身,正準備如食大閘蟹般先扭下蟹爪來食以保持蟹身溫度之際,店長就來教我們食蟹的方法:先將蟹鉗扭出來,然後用剪刀將蟹身從中間位置縱向一分為二,如有需要再橫向一剪二分為四,先食蟹身的肉,再食蟹爪,最後輪到蟹鉗,但不要用鉗來鉗開,因為會弄碎蟹殼以致藏於蟹肉之內,最好是將蟹鉗用紙巾墊著平放枱面,再用鉗平放來敲打蟹殼,這樣就不致於敲得太碎了。正如我寫食評的自我簡介中所寫,懂得欣賞也需要不斷學習,又學會些飲食心得了,我們也就依樣葫蘆地去品嚐。跟著是農家四寶,有粟米、梅菜釀翠玉瓜拼南瓜片、勝瓜蝦米,還有紅薯。而蟲草花蒸雞烏冬底,雞肉很鮮味,而烏冬及蟲草花吸索了雞的味道也十分好吃。太太吃過了蔬菜後,再拿開烏冬去看看那個南瓜排骨元貝粥,吃了兩碗粥也就已經投降了,剩下半煲粥及烏冬,我亦孤掌難鳴,無法完成任務。雖然店內還有幸運海鮮盤的玩意,轉中有獎,但已經無力再拚了。…Read More

為慶祝親戚生日,選定了吃蒸氣火鍋在芸芸蒸氣火鍋店中,見到這家的評價不錯決定訂座光顧我們一行八人,獲安排坐sofa位不會太迫..舒適度不錯!menu除了散點或套餐外原來也有隱藏menu,就是「是日廚師精選套餐」($298/位)靠店員介紹才知道啊~~前菜有花生和蕎頭!好久沒見過食店有蕎頭了~~酸酸甜甜又爽脆,好開胃!!小食選了避風塘豬手&脆皮豆腐避風塘豬手,炸得夠脆又不乾身避風塘煮法的辣度令豬手更惹味!!所以encore了呢~~脆皮豆腐,炸得外脆內嫩熱呼呼的,好滋味!!象拔蚌刺身,鮮甜又爽口!迅速被大家清掉大家也讚這裡提供的wasabi夠嗆雖然都只是小包裝的一款,但入貨入得好啊XDDD餘下的菜式,每人各分到一隻蒜蓉粉絲蒸元貝,蒜蓉粉絲雖不夠多蒜蓉&豉油亦未能提升惹味度但勝在扇貝本身夠新鮮,清甜爽滑!雖然餐牌寫的是黃蟶子,但size那麼大隻,似蟶子皇多些蟶子,乾淨沒沙店員幫我們蒸的時間剛好,所以不會蒸過火,肉質爽口彈牙而不韌味道清甜!廣島蠔,只是清蒸,蠔味已十分濃,甘香鮮甜蒸熟後沒有縮得很小,肉質不會變韌加上廣島蠔本身飽滿creamy,所以一咬下去是超多汁!!!正!!卜卜蜆&刀貝,雖不及前述的貝殼類那麼鮮甜濃味但這兩款的質素都不差,都是新鮮爽口的蒜蓉中蝦,size夠大隻,又有膏蒜蓉令其更鮮味只是略嫌蒸過火一點點!大連鮑魚,新鮮又爽口彈牙!雖厚度十足,而又不韌沒調味,更突顯其鮮甜!!膏蟹,一人一隻,但size也不小呢!超多膏又鮮味!大家都很欣賞呢!蟹螫夠大隻,也有肉食呢~~還有蟲草花蒸雞&農家四寶蟲草花蒸雞,配烏冬,加醬油撈勻,又吸盡雞汁烏冬是爽爽滑滑的那一種,好吃!雞肉嫩滑,而且帶蟲草花香農家四寶,有粟米&釀節瓜蔬菜類也夠清甜最後就是吸盡所有精華的南瓜瑤柱肉碎粥蒸過那麼多鮮甜的海鮮,粥底的甜度可想而知!非常飽足的一頓晚飯!! 服務方面,店員都算周到老闆更是好客又風趣!在這用餐很愉快啊~~…Read More

【海鮮都係蒸嘅好】上星期喉嚨唔舒服,但係又約咗朋友食飯,靈機一觸,揀左呢間小漁港「蒸海鮮」,海鮮都係蒸嘅好,除咗可以保留海鮮原本嘅鮮味,仲可以約一層層嘅精華留底,整返碗【鮮味粥】或者【鮮味烏冬】一入座,就望到座位隔離有個小漁船嘅模型,而且牆上好多海港嘅牆紙,睇得出想制造出漁港嘅環境同感覺。未點食物,店員已經非常快手上咗花生同喬頭,我唔係好食喬頭,但係脆卜卜嘅花生就比我食曬。我哋兩個人,每人都叫咗$268嘅套餐,唔需要加一,非常均真。個餐包咗一盤刺身拼盤,有三文魚刺身同埋蟶子刺身,三文魚普普通通,但係蟶子就好爽口,認真唔錯。每個蒸爐係有電子計時器,一開著就會即刻霧上蒸氣,呢到同其他店嘅最大分別係其他店會一次過幾層一齊蒸,雖然精華會一層一層咁滴下,但係好容易會蒸過頭變老,所以我都幾欣賞佢逐層分開,而且海鮮精華都係會儲到最底嘅大盤中,唔會浪費。主角終於到了,第一層係生蠔、北寄貝同馬刀貝等等,非常鮮嫩!一啲都唔會腥。第二層係蒜蓉蝦、元貝及鮑魚等等,蝦同元貝我都非常滿意,但係鮑魚相比之下有啲腥,呢到有少少扣分。值得一提嘅係粟米好甜好爽口!第三層係大羔蟹同埋我覺得最正嘅「蟲草花蒸雞烏冬」,羔蟹係非常多羔,但係蒸熟咗有少少過硬!蒸雞超嫩滑,而烏冬亦都吸收埋所有調味同雞嘅鮮味,勁正!今次無食到粥底,因為粥底需要另外加錢,而我哋已經好飽,所以無Order到。…Read More
