冬至正日做節搵地方難,想食得好更難,酒樓食肆要做生意,做兩輪亦難免,縱使願意花錢及成功訂到間貴賓房,時間可以不限,可惜廚房只得一個,今晚我們來到御寶軒,上菜暢順,但烹調失水準,本來很有期望的招牌糯米釀脆皮豬失準,簡單的紅豆沙湯圓亦唔得,幸好黑胡椒焗大肉蟹力保不失,成為今晚的亮點。 北京道一號是甲級寫字樓,配合聖誕,大堂設置巨型聖誕樹,吸引了不少家庭在冬至晚飯前或後拍照留影,我們亦不例外;而且有鋼琴師現場演奏,節日氣氛濃厚,行過附近的話不妨上去大堂走走。 御寶軒是我們近期發現的新貴,符合商廈定位,走中高檔路線,高級粵菜的格局。 我們的貴賓房內,有落地玻璃,可以飽覽 Heritage 1881及維港景色。 家人慷慨,帶來香檳及紅酒,尤其近排喜歡玩老酒,這一支產於1961年、來自法國 Chateau L'Arrosee 酒莊,56歲之齡的紅酒,真的經典!即時上網 check 售價,承惠$9800,酒的主人說唔使一萬蚊,唔貴喎!千金難買心頭好,他說若然仲有的話他想多買幾支,你話我係唔係有食福呢? 酒身有些渾濁,沒有壞,無需 Air,可以即飲,1961 是好年份,算順滑,但我認為還是10多年的法國酒最理想,只好怪我唔識貨囉! 這支香檳都是好貨色,只不過大家的注意力皆放在經典紅酒上。 今晚一行16人,10道菜式,埋單$14000,即是每人平均$900有找,節日海景貴賓房,性價比合理。 小食 特定小吃兩款,腰果及蜜糖合桃,皆新鮮香口,第一印象良好。 御寶三小碟: 黃金焗秋葵 黃金焗秋葵最特色,焗至金黃酥脆, 炸漿薄,蛋黃香、秋葵本來味道一半亦變得好吃,秋葵多吃有益,理想的健康食品。 金牌蜜汁叉燒 賣相失分但味道可以,表面有些焦燶,幸好肉質鬆軟肥美,鹹甜味道豐富平均。 蜆介炸鯪魚球 蜆介炸鯪魚球對辦,吃到風味,炸至香而不膩。 秋冬滋補蛇羹 確實是秋冬滋補養生佳選,材料足,蛇肉豬肉絲比例正常,調味適當,口感豐富,但始終不是專門店水準,風味稍欠。 糯米釀脆皮乳豬 過節吃吃有米豬,既好意頭又美味,賣相型格,預先分件,一件件企立式排列砌成原只豬形,見樣子已經非常期望。 豬皮酥香脆口薄如紙,但皮下脂肪對我來說過厚,糯米飯味道豐富但不夠香,而且略乾身了些,整體組合來說,只是一般,大失所望! 黑胡椒焗大肉蟹 今晚的亮點,黑胡椒焗大肉蟹,御寶軒本源自星加坡,所以這一道如期望中沒有失準。 因為我們的當家來過,知道飯店遷就香港人的口味而減低了黑胡椒的濃度,我們要求增加,據說好得多,不過還是不及星加坡吃到的香濃。 肉蟹新鮮,鑊氣夠,炒得香惹滋味,啖啖肉,吃得我非常滿足!蟹殼已經預先弄至撕裂,並有膠手套供應,食得並不太麻煩,服務周到。 油浸筍殻魚 新鮮肥大筍殼魚,炸得俐落清爽恰到好處,表面看來不似炸過,口感卻是酥脆,出色之處是魚皮魚骨酥脆,但魚肉保持鮮嫩多汁。 金牌鹽焗雞 雞皮薄而香脆,皮下脂肪不多,肉滑味道好,不過不失。 蝦子柚皮扒豆胚 柚皮做得有水準,沒有苦澀味,炇得夠腍飽滿,豆苗新鮮翠綠。 白松露菌油靈芝菇燜中粗麵 我並喜歡假松露,其實亦覺得松露與中菜不太夾,這個菜除了有松露香之外,味道太清淡,我不怎樣喜歡。紅豆沙湯圓 最失色的一道,湯水稀,湯圓個腍,沒有煙靭感,以高檔食肆來說,這個真的不合格! 有得又唔得,我們的當家說平時不是這樣的,個大節,人太多,冇辦法! 食味有點失色,但環境服務都得,我們還是享受了一個舒適愉快的冬至晚餐,因為年初一晩有位,下一次來,可能又再碰上節日!…Read More
