在紅磡找地方吃晚飯,想起之前光顧過的原味棧,原來已改名為食好D雞煲小廚。當晚窩夫與蝦子餅不吃雞煲,試試小菜,餐牌上有很多推介呢。打頭陣的是「必食」的砵酒美國桶蠔煲($178),美國桶蠔大大隻很肥美,酒味不算很濃,配上乾蔥和洋蔥,十分惹味。冰鎮咕嚕肉($128)絕對是驚喜之作,甜酸度控制得非常好,咕嚕肉的外層很脆,放久了依然是脆的,很想知道廚師的秘訣呢。啫啫蝦乾芥蘭煲($88)份量十足,很有鑊氣。金蒜開邊蝦蒸烏冬($168)很有新鮮感,窩夫與蝦子餅第一次吃用烏冬墊底的蒜蓉蒸蝦,蝦都算大隻,最重要是夠新鮮,味道特別鮮甜,烏冬吸收了蝦和蒜的精華,加上滑滑的口感,叫人吃得津津有味。…Read More

自從港鐵延伸至黃埔後,過黎黃埔行街睇戲就更方便。但又係因為方便左,所以一到食飯時間,成個黃埔都係人。最後我地決定行遠少少,去崇潔街(日本街)呢條食街搵食。行左幾間,最後揀左呢間食好D雞煲小廚。雖然佢地主打雞煲,但我地今日打算試其他小菜先,雞煲留番下次啦。牆上呢幅畫吸引左我嘅眼球,望住幅咁靚嘅畫,心情同胃口即時都提升唔少。呢度有好多唔同嘅套餐同配搭,價錢公度,梗有幾款合心水嘅。另外,亦有多款師傅推介、招牌菜或必食之選,睇完又好似樣樣都啱食喎。最後,我地精挑細選左下面幾款小菜。呢個砵酒美國桶蠔煲,份量認真驚人,隻隻都差唔多拳頭咁大隻架,咬落蠔味十足,而且仲有陣酒香,個個食完都讚好味。之後就係三寶餐,第一寶香蔥霸王雞(半隻)雖然半隻唔多,但勝在隻雞幾有肉地,啖啖肉,啱晒我。第二寶就係薑蔥炆沙巴龍躉頭腩煲,呢個煲未到就已經聞到好大陣香蔥味,一落檯忍唔住即刻夾番舊龍躉先,真係炒得夠香夠惹喎。但美中不足係龍躉頭腩份量唔算多,三兩下就食晒了。第三寶就係馬拉盞黑毛豬炒BB蘆筍,總係覺得馬拉盞似蝦醬,食落味道似但口感又唔同,大家味道都係濃郁,但馬拉盞較有口感,而黑毛豬切得夠薄,再加上鮮嫩嘅BB蘆筍,配搭夠晒新鮮。3寶餐加埋只需$308,我覺得相當抵食。雖然九肚魚賣相看似炸得過左龍,但食落又唔覺OVER左喎,而且椒鹽味夠濃,整體算唔錯了。闊佬炒飯係用石窩上嘅,夠晒熱辣辣。加上粒粒魚籽、帶子等等嘅海鮮,豐富美味。呢個自家制竹蔗茅根水,入面都好足料架,有馬蹄、粟米、甘筍等等,清甜又解渴,飯後一杯啱啱好。…Read More

因友人住在附近而再次來到祟潔街,這條街除了屹立不倒的加太賀之外,也開了不同的中餐西餐,可為「隱世食街」。這次學聰明了,沒有在紅磡站走天橋過來,寧願轉線到黃埔站A出口走過來,節省了走長天橋以及舊紅磡到黃埔的路程,即使轉了線時間也是短一點。雖然是港式小廚,外面還有個魚缸養著海鮮,餐廳裡頭也是乾淨企理。兩邊牆身有西式的油畫,燈泡也是走精緻的洋風,也不忘裝個大電視給客人「加餸」(電視送飯嘛),是骨緻得來帶點地道的親切。餐牌以小店來說都算多選擇,是大排檔的風味,以海鮮和煲仔為主,也有些鑊氣小炒和炸物。點了些海鮮和雞煲,這個時候忍不住要「啤一啤」!大支裝青島可供分享夠實惠,啤酒雪得冰凍,喝下去再回吐一口酒氣,很爽蟶子有例牌或每隻叫,例牌份量會較多適合分享,但是每隻都是中size;而逐隻點的就是最大的蟶子王,店員建議我們二人的話單點兩隻會更好。上來的size果真驚人,單單是殼就有前臂的長度,炒熟的蟶子縮水後仍有整隻手掌般長,$58一隻也不為過。青椒紅椒切碎,炒進香濃的豉椒汁,帶點微辣非常惹味,但又不會濃得蓋過海鮮原有的味道,微辣反而能夠提鮮。蟶子大得來肉質仍爽口柔軟,沒有韌口或痴牙的狀況,味道很是鮮甜。金莎骨賣相精緻,上面的冰糖glazing做得很漂亮,灑上白芝麻及底部用脆餅盛著,端上來還冒著熱煙,有餐廳的擺盤、大排檔的鑊氣。冰糖加鎮江黑醋的比例剛剛好,酸酸甜甜得來黑醋的色水也很足夠。更欣賞它的是醬汁不會多得浸林了炸皮,是將炸好的骨加入鑊內調好煮熱的醬汁快速兜勻才成,時間和火候都要好好把握。金莎骨外層的炸粉不會過厚,也不會剩下一泡油在碟底,隔油工夫和resting時間都做得足。雖是金莎骨,但其實只有小骨,大部分都是肉,很是足料,連骨的肉排肉質也會更爽口。接著是餐廳主打的雞煲,除了這個麻甩雞煲外,也有花雕雞煲、黃酒木耳雞煲等味道可選,款式頗多。點雞煲還會附送一碟生菜,頗為貼心。這個麻甩雞煲分開麻和辣,可選走麻、微麻、小麻、多麻,以及微辣、小辣、中辣、大辣,四種程度,客人可隨自己喜好調較,每煲均有自己口味的特色。因自己不能吃辣,唯有要重口味的友人遷就一下,點了微麻和微辣。微辣其實真的吃不到辣味,但帶少許麻的香濃和惹味,對於不嗜辣的我來說非常恰意,而重口味的朋友在這裡點麻辣的程度可以更大膽。半隻雞份量也很多,雞件較小,所以更入味和容易炆林。雞件在廚房煮得八成熟後,再端出來上爐繼續煮多四至五分鐘便可食用,所以肉質完全不會因煮過頭而太老,仍然彈牙嫩滑。欣賞它的醬汁份量剛好,不會完全浸過雞件,可以當成是惹味小菜送飯,也可以加紅薯粉撈汁當重慶辣粉吃,更可以像平時吃雞煲般加上湯當火鍋,一式三吃。是晚沒有吃火鍋的意欲,我們選擇較乾身地吃雞煲當作小菜,再加一點上湯烚生菜。加了湯後的雞煲底雖然味道變淡,但不會有很多油浮面,因而用來烚菜也不會吸收了之前雞件的油份,非常不錯。最後來到桶蠔煲,相對上較昂貴卻也是物有所值。大量的紫洋蔥切幼絲,煮得剛好熟,不會過軟但已經caramelized,甜甜的非常好吃。 加上帶甜的砵酒,整個醬汁惹味得來也很配合桶蠔的鮮味。每隻桶蠔煮熟後仍有大於整個大湯匙的大小,很是足秤。咬下去桶蠔非常多汁,蠔身飽滿滑溜,鮮甜而不腥。敗筆之處在於稍稍嫌炸粉有點過厚,走油後剩下在煲底的油也有點多。幸好煲仔夠熱,能夠保持食物的溫度。是晚的食物質素真的為之驚豔,能夠在室內有空調的舒適環境享受大排檔的鑊氣和高級中菜的味道,而價錢也相對上相宜,性價比高。…Read More
