石燒牛扒係香港掀起一股熱潮,陸陸續續有好多間主打石燒牛扒既餐廳開業,今次嚟到荃灣試下呢間「牛県」。環境店舖不算大,坐位較逼,但食物上枱速度都可以。餐牌石燒牛扒分六款,分別係平鐵牛扒、上腰西冷、牛橫隔膜腹肉、牛側腹扒、小牛柳及日本A5和牛腹。本身想試日本A5和牛腹,估唔到餐廳已經售罄,就試左牛橫隔膜腹肉及牛側腹扒。牛橫隔膜腹肉(200g) $128揀左紅酒牛肉汁,牛橫隔每隻牛只可以切岀一塊牛橫隔扒,味道會較濃郁且柔嫩,切落去牛肉容易離刀,肉質帶少許沙沙口感,口感頗鬆化,加少少粗鹽調味,更加美味,油分較多,係鐵上彈油情況較厲害。+30可以五選三,分別係飯、湯、沙律、薯條及汽水中選,要左薯條、汽水及飯,可惜薯條油溫唔夠,有啲生。牛側腹扒(200g) $128呢份就加左沙律及汽水同揀左阿根廷青醬,牛側腹屬牛胸及牛腹之間既部位,帶脂肪,肉質會較有咬口,比起牛橫隔膜腹肉口感較厚實。羽下牛扒(200g) $158餐牌上冇,而係店內手寫既限定款式,羽下牛扒係位於鞍下既下部,因為牛肉既油脂分布猶如羽毛,所以被稱為,所以有呢個名稱。口感同無骨牛小排相似,食落較多筋,但牛味係三者之中最濃,不過牛橫隔膜腹肉比
