灣仔生記飯店係我定期要回味嘅餐廳之一,位置方便,有時即慶約朋友都唔駛咁難就地點。今日就一行三人又嚟翻尋味,嚟到大廈門口仍然放住米芝蓮推介嘅招牌今次星期五去到仍然好多客人,好彩仲有張檯但就要上二樓。今晚嚟到原本諗住一定叫焗魚腸,次次嚟都必食,但今次竟然話要預訂先有,有啲失望,咁唯有試吓新嘢啦。我哋叫咗份前菜炸魚皮、生炒骨、椒鹽鮮魷同豆鼓雞。炸魚皮(4/5)魚皮炸到好脆口,甚至有啲硬,但非常香口,送酒一流。生炒骨(4/5)平時食開咕嚕肉,亦都係生記招牌菜,今次試食生炒骨,認真講句,下次都係叫返咕嚕肉算,味道其實無咩分別,但啲肉質有唔同,啲排骨過咗火喉就有啲韌,都係咕嚕肉用梅頭好食啲椒鹽鮮魷(5/5)老實講,平時嚟生記真係好少食,朋友想叫啲炸嘢送酒就叫咗,估唔到炸得咁酥香,炸粉薄薄哋唔會成口脆漿,非常好味豆豉雞(5/5)平時炸子雞已經攞滿分💯,點知今日俾個侍應說一說叫咗豆豉雞簡直係一個昇華,雞肉油爆得啱啱好,雞肉非常滑身,豆豉味好出,下次嚟一定要再叫…Read More

8/10 plates emptied!這種屹立不倒的老式中餐館如今在香港真是「買少見少」,還能一直維持做菜的水準則更難。生記是住宅上樓鋪,沒人帶路是挺難發現,基本做的都是熟客的生意。我們試吃的是午市特價小菜,每款HKD52,奉送老火例湯(白飯另計,HKD13/碗)。在粵菜方面,推薦有興趣的食友閱讀一下「特級校對」陳夢因寫的《食經》,一定大開眼界,始知粵菜界並不只有江太守、江獻珠等國寶級前輩。在Gang之後的粵菜食評中也少不免時常提到或引用裡面寫的內容,供大家參考。川椒雞球:其實是「雞片」。選料、火候、醬汁和刀功——一道炒菜的四大元素,其中刀功堪稱根基。雞片的每一塊需要厚薄均勻,否則猛火爆炒時受火力不均,每一塊入口就無法維持一樣水準。這道菜幾乎用的都是薄切雞胸肉,但入口的嫩滑會讓人懷疑吃的不是雞胸,而且滑中帶有鮮明的彈性,即使沒甚雞味,口感也足以彌補了。火猛油多,一片青椒入口已經感覺「火候」在舌上翻騰,下飯一流!菠菜豬潤:這裡的豬潤,即豬肝很出名,爽脆的口感令Carly一度感到疑惑且驚訝。一般家庭很難做到酒樓的口感,因為豬潤要「啤水」才能爽脆,把豬潤里的血水沖淨,然後加姜和生粉揉搓后再啤水,炒的時候加點燒酒就更好了,然後再放水和蔬菜一起煮,這樣的口感就會很好。蒸肉餅:家常菜最考究功夫。《食經》有雲:好味道的蒸肉餅要「甘、香、鬆、滑」。「甘」是豬肉的天然甜味,用梅頭肉為之精品;「香」可理解為肉香和豉油、油香的混合;「鬆」是表面緊緻,入口鬆化,因為肉裡的筋都被刀剁斷剁散;「滑」當然指肉質經生粉醃製調味后的嫩滑口感。這裡的蒸肉餅確實非常好吃,四元具備,肥瘦搭配恰當,口感味道都屬上乘。高比話你知:「啤水」就是在煮之前用流動的水一直沖,雖然「啤水」是很浪費水的做法,但是廣東酒樓對於肉類的烹調(特別是肉排)還是堅持沿用來保持完美口感。用靜止的水浸泡三至四小時再用流動水沖刷也可以達到差不多的效果。「文武刀」指同時用兩把刀,左右手一手刀鋒一手刀背地去剁豬肉。用絞肉機絞出來的是肉糜,肉末,口感和人工用刀剁肉差很遠。因為刀剁肉用力不會很均勻,可以控制剁到何種程度為止,而且剁完仍會有粒狀的肉,放鹽之後會起膠,食時才會覺得爽滑。糖醋班腩和生炒排骨:石斑魚屬鱸魚目,所以口感鬆軟,肉質潔白多汁,一直是港人的最愛。脆漿稍嫌厚,但勝在肉質嫩滑,甜酸醬的調味傑出,而且熱騰騰地沾著濃稠的醬汁放入口中,外脆內軟,實在不錯。生炒排骨的甜酸醬其實和糖醋魚如出一轍,排骨微炸后加入鹹、酸、甜均衡的芡汁和青紅辣椒、菠蘿一起快炒,味道不錯,當然如果用新鮮菠蘿會更好。蒸三色蛋:雞蛋、鹹蛋和皮蛋為之「三色蛋」。蒸蛋講究的無非是時間和水份的控制。在這家蒸肉餅都那麼出色的中餐館,蒸蛋當然是不在話下。蒸蛋的表面可謂「蛋光粼粼」,一點凹凸痕跡都沒有,非常平滑,蒸的時間和加的水分掌握得爐火純青,而且沒有蛋腥味,非常好吃。另外我們還叫了粉絲雜菜,芙蓉煎蛋和椒鹽鮮魷。因為對比起上述菜式不甚驚艷,也沒有什麼特色,這裡就不作贅述。總體而言,這是一家很值得定期來訪的餐廳,即使服務不怎麼貼心,但是做出來的廣東菜很地道,午餐性價比也不錯。 …Read More

之前見有雜誌推介,今次就和家人試試這間生記。先說環境,一般酒樓格局;但由於人多,顯得通道異常擠迫,店員在狹窄通道上奉菜,坐近路口要特別小心「中頭獎」。我們一行七大兩小,由於有小朋友對很多食物都有敏感,我們就點些比較家常的小菜,當然也有要一早預訂的馳名鹽焗雞。豆角炒蛋:不知是太久沒有吃過,這道菜竟然意想不到的好味。豆角夠多,蛋也炒得很嫩。 蓮藕炆腩肉:腩肉不肥膩,蓮藕夠淋也很入味,亦是推介之一。 魚香茄子煲:小弟對茄子敏感,沒有吃,但香氣撲鼻,應該不錯嘛。 梅菜蒸菜心:比較特別的一道菜,味道挺好。 :)椒鹽鮮魷:炸得不錯,呈金黃色,味道亦好;不過全碟加起也不夠十件,真是物之罕為貴哩! 鹽焗雞:作為招牌菜,不禁有少許失望。雞味不足,上菜時也不夠熱,而且價錢絕不便宜(近二百五元一隻),敗筆之作。 鹹蛋蒸肉餅:中規中矩,不甚突出,資深「師奶」也能做到。 生炒骨:炸得夠香脆,但醬汁不夠甜亦不夠酸,只有一般茶餐廳貨色。 :(羅漢齋煲:份量足夠,但卻不太入味,不過清清地也可以啦。 :)北菇炆鵝掌:鵝掌炆得夠淋夠入味,不錯的一道菜。 :)楊州炒飯:水準一般,熱些會更好。 白糖糕:略帶酸味,不敢多吃。 :(整體而言,食物質素尚可接受,但價錢頗高,作為「推介」食店,有點名過於實吧。可能是「希望越大,失望越大」哩! :(…Read More
