同事仔請食散水飯🍚 估唔到係去鏞記😮 對上一次黎應該係幾年前餐business lunch🤔係老蘭gateway既無敵荀位,一入門就有人招呼🤗 金黃色既牆身裝飾豪氣萬千,呢份氣派歷久常新💖 係右手電梯上到黎一樓坐低,全場坐唔滿,一兩枱係商務客開會,另外都主要係遊客🇨🇳Menu 📙 複雜啲組合多到數唔完,要點菜確實有難度🙄 先黎有出名既酸薑皮蛋 🥚 對半開連紫薑上,光滑既表面帶住流心蛋黃,用酸薑去夾住一啖放入口,咬破薑既微妙厚度,到達啫喱質地既皮蛋,最後抵達中心既溶岩,三層口感係呢道前菜特點💪燒味三併,叉燒🐽 燒鵝🦆油雞🐔, 燒鵝全脆既表皮搭配醬汁,加埋碗小小瀨粉,見到鵝油係湯面水漣漪般散開😮 香香既油汁點亮清湯同瀨粉;叉燒燒得微焦夠香,汁料係表面凝固咗一層透明護膜💗除咗呢兩個菜外,其他都唔算特出😑梅子排骨🐖有啲得意,上枱個梅子醬係分開無放落肉度🤔 肉質還算可以鳳眼果炒蝦球 🦐 ,啲蝦唔算最鮮,未到彈牙,大小亦都唔大一致炸豆腐直頭係失色👊 溫度唔夠之餘,表面亦炸得唔脆🙄兩個蔬菜還算可以,但同外頭中餐館比唔算突出😶埋單四個人成二千幾銀💵 除左裝修,地點,叉燒,燒鵝同個皮蛋外,我睇唔出點解要值呢個價,食過一次就好,要回頭無理由🤐…Read More

Anna Sheong 烧鹅只吃脆皮那就没得顶,吃肉就非常保留, 很老,也许是套餐价格平,所以也就只能这样了。另点了一个芋头油鸭+焖鸡,鸡在里头纯属捣乱充数。这款菜很多粤菜大排档都做过鳙记。所以跑这么远来光顾,留下满满问好...慎入✋

晚餐的地點由尖沙咀到灣仔再到中環,晚餐前我們各自於中環行街。於置地會合後,到中環蘭桂坊晚餐。由之前原本訂位於尖沙咀The Market,轉到中環食牛扒生蠔,到最後,用餐於鏞記。入餐廳後要到二樓雅座,坐低後得到餐牌兩本。隔多一段時間,男待應用國語問”要甚麼的茶?”, 嗯, 真的只做遊客生意嗎?點菜,原來這不止燒鵝貴,其他小菜都以一百起錶。最後點選了:半隻燒鵝: 滿心歡喜的期待換來的失望,感覺真係好差。燒鵝唔熱,只係微溫,皮唔脆,只可以話佢肉質鬆軟。汁不是燒鵝汁,唔夠味。絕對同佢的價錢不成正比,海港酒家或者深井比佢好。椒鹽鮮魷: 可能我地真係唔應該向呢度叫呢一個餸,脆皮唔係全件鮮魷包住,皮還皮,鮮魷還鮮魷。不如將椒鹽都分開上? 鮮魷係大件有味,但你收到一百二十元,不是比這個質素嘛?什菜煲: 有介菜,西蘭花,白菜仔,草茹,蝦米。蝦米好味,不過介菜有苦味。食唔到…另外叫左個瀨粉同河粉配燒鵝! 個粉係最好味,湯底味道濃郁。最後埋單共$568.7,唔係貴,, 但唔值!…Read More

最近拜讀過鏞記第二代主理人甘健成先生所著之《鏞樓甘饌錄》,對飲食知識,獲益良多,對所述之鏞記燒鵝更是垂涎三尺,正是「人生有幾多個十年」,應該要來引証一下。鏞記在我心目中,一點也不陌生,兒時在中環長大,每天都路過,在她方圓一百尺的食肆還有張錦記,京華酒樓,告羅士打酒樓,安樂園餐室,七重天餐廳,新世界餐廳,五華號,甚至荔園燒臘茶餐廳等,至今,祇剩下鏞記。雖然名店林立,但我最常吃的是張錦記的雲吞麵和鴨腿湯飯,荔園燒臘茶餐廳的燒臘飯,何解?一家七口全靠老爸一個,原因不言而喻。這天剛巧是端午佳節,雖則是霪雨霏霏,但要到中環買點東西給另一半,也不得阻延,順道到鏞記吃碗燒鵝瀨粉,要壺消滯普洱茶,侍應先問要大碗$52 或是細碗$38,實則吃過午膳不夠兩小時,要細碗便可。自從到社會做事後,鏞記燒鵝已吃過不下十次,但少不更事,多是牛趙牡丹,囫圇吞棗,今回必定要嗒真味道。根據甘先生之《鏞樓甘饌錄》所載:「在清明節及重陽節前後兩個月內,這日子中的鵝,每頭約重四斤餘,果真是皮香、肉嫩、骨軟、肉汁濃,稱之為最佳鵝季。」幸運地這天正值是鵝季,約等了十多分鐘,燒鵝瀨粉便送到,一陣熱的炭燒肉味撲鼻而來,數件燒鵝整齊排列,伴有菜心一條,燒鵝皮香肉嫩,而近翼的部位脂肪不多,味道因其醃料增加複雜性,入口甘香,確是名不虛傳,吃一箸瀨粉,帶有一股大地魚香,是湯底的香味,想不到連湯底也絕不馬虎,單用這湯底送瀨粉已夠味,配上燒鵝更是無以上之。普洱茶色如琥珀、味甘,正好用來消脂解膩,多喝有益,區區十元茶金,也是值得。經理亦見落力督導侍應,填補服務不足之處,若能壓低聲浪會更好。還有多樣名菜,必定會擇日再來品嚐。正是:「淺嚐鏞樓燒鵝瀨,細啖雲南普洱茶。」…Read More
