潮州打冷相信大家食得多,不過,真正傳統風味的潮州菜大家又試過未?BeautySearch 今次終於品嚐到蝦子餅口中真正的潮州家鄉風味。蝦子餅是潮州人,經常埋怨在香港沒有機會嚐到他的家鄉風味,直至近期,給我們巧遇上《好蔡館》! 《好蔡館》位於太子廣東道尾,裝修雖然不屬華麗,但十分整潔,格調是街坊菜館,具有點點中國風味。Menu 也屬簡單設計,沒有華美的包裝,簡簡單單以文字為主,中間加插了點點相片,攝影技巧也屬一般,卻有莫明的吸引,令人唾涎三尺。由於是潮州菜,今次就由蝦子餅發板啦!不過,蝦子餅較少決定這方面的安排,最後,只選了二人套餐 B ($168),套餐中包括:飯前小吃「麻辣牛𦟌」、老火特色靚湯「咸檸檬炖鴨湯」、「潮州蠔烙」、高湯時菜「葱油清湯菜心」及白飯兩碗。為了貼近港人的口味,「麻辣牛𦟌」除了採用秘製鹵汁醃製外,還添加了麻辣成份,牛展鹵得相當入味,爽口並帶少許嚼勁,可惜加了麻辣,BeautySearch 只能淺嚐,但蝦子餅倒覺得麻辣度恰到好處,食落醒神開胃,而我,當然還是比較喜歡傳統的鹵水牛𦟌。當日的老火特色靚湯是「咸檸檬炖鴨湯」兩盎。材料非常足,而且唔油膩,清香的檸檬味帶著淡淡咸味,味道清新又特別,而且既清熱又可滋潤喉龍,剛巧這幾天BeautySearch 有幾聲咳,口嚨總是又乾又痕,喝後倍感舒緩,的確不錯,大家不妨一試。「潮州蠔烙」是店主推介,難得的是現時大多數店子都因成本或方便問題而轉用雞蛋,這裡的廚師卻堅持選用鴨蛋,令蠔烙的蛋味更為濃郁。蠔烙的餅身爽口帶點脆口,沒有像一般餐廳吃到的多油鬆散感覺,而且蠔味香濃又唔腥,而且肥美多汁,原來餐廳選用來自汕尾紅樹灣蠔,由於當地水清蠔淨,所以比較清甜,加上廚師是用紅薯粉不是發粉製作的,所以蛋餅底身較實在,不易吸油,所以做到菜式香濃肥美,有嚼勁又不油膩,絕對值得推介!店主溫馨提示:如果想食蠔烙唔腥,吃時要蘸點胡椒粉加魚露,不但能大大減低蠔烙的腥味,同時,更能提升鮮味喔!套餐還附送白飯兩碗及高湯時菜。沒想到,廚師連清湯菜心也一絲不苟,除了鮮味高湯,還用上經煮理的葱油,令菜心食落更香口。BeautySearch 最愛的潮食,便是「潮式鹵水鴨」,所以,當晚也點選了例牌「潮式鹵水鴨」。廚師源用了祖傳秘方,以清水白鹵湯底代替了花椒百角去鹵製鴨肉,既鹵香又可去除鴨騷味,鴨肉鮮嫩美味,由於鹵水製法不同,不但不會俺蓋了鴨肉的味道,反而更有效堤升了鴨的鮮味。…Read More
