逛完MILK MART III,向蘇豪方向走找地方吃晚飯,結果光顧了店面紅噹噹的築地EbiKin拉麵,Ebi日文即是蝦。看餐牌上的價錢好像有點貴,但原來免收加一服務費,所以其實跟一般拉麵店差不多。蟹湯拉麵暫停供應,跟蝦子餅一人一碗海老拉麵($110)。上面那幅相拍不到雞肉,所以再拍一張。蝦湯非常鮮甜,據說每天用上40公斤蝦頭來煮湯,還有甜蝦、豬蹄、雞腳和蔬菜,真材實料熬出來,難怪這麼鮮甜香濃。日本拉麵多數配叉燒,這裡用上雞胸肉,吃起來沒那麼肥膩。聽到鄰座的太太說北海道牛乳布丁($30)十分好吃,蝦子餅也給窩夫點了一個,牛奶味很香,布丁滑滑的,真的很好吃。…Read More

豬骨湯底既拉麵店開到成行成市睇雜誌介紹宜間蝦湯底拉麵好似幾特別所以尋晚收工去試一試可能d人去哂附近d酒吧飲酒吹水星期5晚7:15pm左右竟然唔係太多人拉麵店內地方寬敞 唔似一般拉麵店咁好迫睇下menu一場黎到 我就揀左最貴既海老拉麵等左陣拉麵就到喇海老拉麵入有1隻開邊蝦、3片燒過雞肉同半隻蛋當然最緊要係個湯底湯底果然好suprise好重蝦膏味 好濃 鐘意蝦既人一定好鐘意但又唔會好似豬骨湯底咁杰 所以唔會好膩最後我食完個麵仲飲哂d湯至於麵 就有3種軟硬可以揀 我就揀左普通餸果方面隻蝦比平時食到既淋身d 唔知係咩品種 味道都幾甜雞肉係用燒過既雞胸肉 外面少少脆 入面有d"鞋"蛋就正常 同普通拉麵店既一樣總括黎講  宜個麵最緊要既湯底我比佢好高既評價如果係蝦既愛好者 或者食厭左豬骨湯底既拉麵店既人一定要去試宜間!!…Read More

「最後の一滴まで食べて頂ける逸品です」自稱正到忍唔住要飲晒最後一滴湯云云。你信唔信?最近才發現無名拉面舖面早已改頭換面,變左做呢間築地えび金海老そば 專門店。大大隻字聲稱自己用50隻甜蝦新鮮熬製(香港FB更話用到70隻)。最鍾意咁有自信的餐廳,睇黎值得一試! 「そば (soba)專門店」呢隻字令我一度誤以為係食蕎麥麵,睇餐牌先知原來係主要食湯拉麵(有一款沾麵)。下午一點黎到門口,已有一條小小人龍,,等左約莫10分鐘入得。等待期間在門口睇定食乜,節省了不少點餐時間。由於新裝修關係,店裡明亮舒適,座位不算少。我們被安排坐bar檯位置,對正拉麵師傅,正好俾我監察一下拉麵的製作過程。坐下來,我二話不說:「海老拉麵,唔該!」有得揀麵質和麵類,為試真味,我全部揀晒普通。落好單後,我面對面地好好地觀察一下廚師們,目測全部是香港人。拉麵湯底用料甚豐,見師傅一次舖開4個碗,手持罐逐碗的撒粉落醬下配料,手法熟練,同時見到師傅身後有個烤爐,開了邊的海老正在裡面平舖地烤著。看得我心癢癢的,非常期待是日餃子售罄,揀左小食先行列陣。吉列蠔($45)4隻吉列蠔放在吸油紙上,紙上回滲的油份不多,顯示他炸的技巧不錯,炸得外脆內嫩,中間的蠔身鮮嫩多汁而不腥,炸粉份量恰當,外層熱而中間非常燙口,應該是即叫即炸。在我食過的吉列蠔當中,佢算是炸得相當不錯,看得出用料不差,水準甚高。熊本雞肉腸(天草大王雞使用)($38)5條雞肉腸做得不錯,外皮脆身,感覺有點像台灣豬肉腸的質感和味道,雞肉是經過調味的,本身脂肪比較亦絕對不低,有輕微咸味,味道不錯有特色。海老拉麵($110)期待已久的拉麵終於出場啦!「噢~!薯該以~!」(日本腔)貌似不錯,熱騰騰冒著蒸氣,海老拉麵有蝦(海老)、雞肉、玉子、香葱、萵筍、干蔥頭。海老已經肚朝天躺在碗的一隅,我急不及待地把它從殼中拔出,蝦肉彈牙帶烤熟的微焦香,蝦頭香濃鮮美,奈不住吸吮一口。好正!親愛的玉子半熟的狀態更顯嬌艷欲滴,咬下帶甜香。綠色的萵筍出奇地爽口掛湯有驚喜。雞肉嫩滑,結構好像瑤柱般直紋節理,但切片的橫切面紋路極少,簡直像親吻你的舌頭般完全貼服。配料非常出色,湯底呢?一湯匙的油光粼粼,啡橙色的深不可測呷一口,咦?一大陣攻鼻的鹼水味!而且比較咸。初初以為是未攪和湯粉、味道未均勻所致,但是攪動一下,仍是一樣的咸和澀。細味之下,的確帶蝦的鮮味,但比例是9:1。鹼水味佔了9分。要我的大腦和舌頭把鹼水味撇開一邊,才能嚐出湯中蝦味,感覺就像在剛裝修完、充滿天拿水的房間吃飯,一邊要強遏著鼻子,但又想要嗅出菜香的感覺,實在有點困難。夾一箸麵,色澤鮮黃,咬落帶韌勁,有彈性。但是鹼水味濃得太過份,比雲吞麵更濃,掩蓋晒成碗面,再有鮮味都吃不出來。這個味道令我有點失望,多好的一碗麵,多好的配料,認真嘥料!同行者有叫「蟹湯拉麵」($95)和「麵鼓拉麵」($90),「蟹湯拉麵」和我的海老拉麵一樣有強勁的鹼水味,而麵鼓拉麵則是無鹼水味的。由於麵底大家一樣,因此推算,鹼水味緣自湯底,而非緣自麵身。非常介意鹼水味的話,建議揀麵鼓拉麵。…Read More

睇左雜誌報導話新開了一間築地長龍蝦湯拉麵店, 咁一於去潮聖先。真係無介紹錯, 蝦湯味濃, 好味! 而沾麵更係必食ITEM! 每碗蝦湯用平均70隻蝦頭餚製, 難怪咁香濃入味!係香港既拉麵店通常都係豬骨湯底, 油淋淋咁。而Ebi Kin 拉麵店係用蝦湯底的, fit 晒追求健康既lady 日本人唔食淋麵, 一淋就"張" 住,呢間拉麵店係碌麵的時間上控制得唔錯。 我個人比較愛吃粗麵, 而我點選的沾麵的麵條是最粗的。另外朋友叫了粗麵配普通硬度的日式香蔥拉麵,  另外一位朋友叫了海老拉麵的幼麵硬麵質, 大家按各人自己的喜好去點選麵的粗/ 幼及麵質的硬度,最後我們一致認為蝦湯味濃,好味呀!我叫的是Ebi Kin 沾麵,湯底有超多櫻蝦干,湯內仲有甘蝦肉, 好有嚼口!湯味香濃! 仲有貢筍,好爽呀~索索聲。職員推介我試的! 麵條係最粗的,配普通硬度就最prefect match!小食都好有特色,我地叫3個人叫了兩款小食:餃子的賣相好有趣, 煎得好靚, 而且好香脆,真正的皮薄香口, 點些日本醋真的好好吃!日本豬腸煮物, 好地道Feel!  有紅蘿蔔, 白蘿蔔, 豬大腸!超足料, 好抵食!…Read More
