呢間真係Bookmarked左好耐喇😍趁年尾又係時候獎勵自己🥰見到佢地最近推出左table menu,以懷石料理作為套餐🍱感覺就好似去完一轉溫泉旅館食晚餐,份量同樣屬於重磅級😝🍱釧のコース料理懷石料理套餐 HK$1680+10%/pp🌿靖魚卷用左已調味嘅酸青瓜及海藻沙律伴碟,靖魚卷中間加左茗荷,令菜式增添芳香尾韻,係一道令人難忘嘅開胃菜🌿螯蝦他他首先最上層用左Cristal Caviar做點綴,螯蝦就用左他他做法,入面加左青檸汁做調味,中層紅色部分就用左水果蕃茄,而最底層就用左蝦湯去做左個Panna Cotta嘅口感,食嘅時候可以一羹舀到落底,整體味道濃厚,加上甜酸口味,層次感非常豐富🌿刺身拼盤分別有鮮白子、池魚及中拖羅!建議先食鮮白子,上面配有帶點微辣嘅蘿蔔泥,底下則配上帶有酸味嘅水雲醋物,可攪拌後一齊食用,味道非常清爽!池魚肉質爽滑,由於本身魚味較濃,可配上薑一齊食用!而中拖羅油脂感重,味道較濃厚而且入口有溶化嘅感覺🌿毛蟹師傅將毛蟹蒸熟後將蟹肉拆左出黎,上面配左鮮甜嘅赤海膽,另一部分就係蟹腳,食落去啖啖肉,上面加左蟹膏做點綴,旁邊配有蓮芋,可將紫蘇花拆出黎配上蟹肉一齊食用會更具香氣🌿八寸「八寸」原本嘅功能係下酒,所以多數喺刺身之後先上菜,八寸料理多數以山珍搭配海味嘅形式,將代表季節嘅食材放成一盤,視覺效果非常豪華▫️真丈加了蝦肉去製成,食落有d似薯蓉嘅感覺▫️龍蝦膏伴水雲水雲帶有微酸,旁邊嘅龍蝦膏味道非常香濃,雖然外表mushy,但食落口感軟滑得黎亦帶點嚼勁,超有驚喜▫️伊達卷加入左日本新年おせち料理定番嘅伊達卷,味道鹹甜適中,口感有d似海綿蛋糕▫️蝦卷熟蝦肉內配有明太子,味道帶點微辣▫️燴牛小排口感軟腍且牛肉味濃,配合水菜及蘿蔔泥一齊食用有助平衡肉味🌿公魚天婦羅配鬼ひも川烏冬公魚天婦羅入面用左山椒調味,另以魚骨醬配上白布烏冬,味道極濃厚,帶有一點像蝦膏嘅鹹味,白布烏冬非常掛汁🌿野鴿清湯配鴿肉餃子鴿髀用左餃子皮包住一齊炸香,可直接食用!另外鴿湯就先將鴿肉燒炸過,再加入洋蔥、大蒜、甘筍、菇等蔬菜去調製,最後用蛋白雞肉去做吊清,將湯內嘅雜質清除,兩款菜式剛好平衡一下油膩感🌿鹿兒島A4牛小排結合左日本傳統朴葉燒與鐵板燒嘅一個做法,肉質柔軟又Juicy,可配合旁邊嘅南瓜、洋蔥、豆苗、Wasabi及蒜片一齊食用🌿燴鮑魚飯師傅先將鮑魚precooked,再將鮑魚肝拆出黎配合日本米一齊烹調,煮至Risotto般口感後再以檸檬汁、檸檬皮及麻油去調味,最後加上黑松露醬及已預煮嘅鮑魚落去燴一下就完成!整個燴飯充滿香氣,口感非常creamy,雖然此刻已經撐腸拄腹,但為左唔好辜負師傅嘅心機,仍然趁熱努力食!🌿豆乳奶凍及黑芝麻朱古力甜品真係好有驚喜!豆乳奶凍外脆內滑,豆乳味突出,外層係焗脆左嘅腐皮,內裡包住豆乳奶凍,並加入黑糖及醬油調味,味道甜中帶咸,底層配有胚芽,可混合後再食用!而黑芝麻朱古力亦非常有特色,充滿黑芝麻香氣,為整個晚餐劃上完美句號!套餐整體份量非常多,我地兩個女仔真係食得有d吃力😂相信男士都一定會滿腹而歸!…Read More
