幼年時爸媽已帶我幫襯林記了,印象中由 $8 蚊碗飯食到依家 $14 蚊,由大埔臨時街市轉到依家新街市。依家仲係 $14 蚊碗,真係好平好抵!全港 no.1 既林記排骨飯去了那裡呀?新明發升到 Top 1 !最初走到新明發,但東主有喜休息七天,唯有走黎林記食啦!過份的增磅日,紅洋蔥小籠包晚餐、after 5 生蠔加三多炸雞髀宵夜,臨瞓前還要整碗林記排骨飯,要操多幾日消脂先得喇!每朝街市熟食檔都人山人海,等位是必然的。林記又平又抵又唔太差既經濟點心同蒸飯,當然坐無虛席啦。剛才食個撈麵仔點夠我食喎,走黎排隊加多個排骨飯就差唔多!飲酒到清晨五點多暈住飄到林記嘆早飯呢!琴日朝先飲通宵再黎宵夜,今日又黎清晨五點幾醉昏昏食排骨飯,想肥死人咩!咸水角,外脆內嚥韌,香口就香口,但一咬噴由,少許肉碎作餡,味道還算可口。鮮竹卷,唔似蠔汁又唔似上湯,界乎兩者之間。腐皮夠軟棉嚥韌,吸得芡汁透徹,整條塞入口不讓半滴精華流失!肉鬆菜蔬融會,卷內蘊藏大量可口汁液,一咬爆汁,有如洪水般滋養味蕾,滋味無窮。山竹牛肉,結實牛肉球混上時蔬、香蔥,但青味使我吃不消,因我什麼都要走蔥的呢!淋下大量喼汁,不停打滾讓肉球均勻地沾滿再豪邁地整粒塞入口,塞得嘴仔滿滿,感覺良好!大部份蔥味已被濃濃喼汁味道所掩蓋,強烈酸咪咪甚是開胃醒神,啖啖肉不錯的選擇。鵪鶉蛋燒賣,馳名招牌菜,肥豬肉混在瘦肉之中,比例恰到好處,豬油豬膏甘甜但不油膩,強力的催化劑使到味道更香濃出眾。不知道何解肥豬肉跟鵪鶉蛋十分相襯,古人的智慧結晶嗎?蛋黃香、蛋白滑彈、肉球多汁嚥韌有彈性,滿分無法挑剔,一口品嚐多種味道與質感,無比幸福。豉汁蒸鳳爪,沒有油淋淋,亦沒有厚厚而杰撻撻的醬汁包實,清淡蠔油豉汁來得更清爽舒服。炸爪皮爽肉彈,損損腳指瘦瘦臉頰,有得食又有得運動消脂,一舉兩得。四寶雞紮,芋頭不合我胃口,用蟹柳或火腿更好啦。點解無魚肚既?路上跌左嗎?大陸大紅色塑膠蟹柳,最討厭的強國出產,甜味重到濁,質地膠而鬆散。我要日本北海道牌架!連百佳、惠康都賣大陸翻版北海道蟹柳,包裝一模一樣仲印埋日文,勁難食呀!要去街市、大昌先買到正版啊!雞柳結實醃味濃,啖啖肉濕潤多汁。掉丟芋頭,大大啖狠狠地一口咬下三種食材連嚥韌微爽腐皮,百花齊放,多種味道互相輝映,這樣才是食雞紮的真髓,拆開續款食又點會係紮呢?炸春卷,好粗啊!切開原來得少少雞絲餡啫,春卷皮就大量。雖然有點燶,都炸得乾身不油膩,掉落喼汁打滾一翻,酸酸甜甜脆卜卜都使人滿意。鵪鶉蛋燒賣,馳名招牌菜,肥豬肉混在瘦肉之中,比例恰到好處,豬油豬膏甘甜但不油膩,強力的催化劑使到味道更香濃出眾。不知道何解肥豬肉跟鵪鶉蛋十分相襯,古人的智慧結晶嗎?蛋黃香、蛋白滑彈、肉球多汁嚥韌有彈性,滿分無法挑剔,一口品嚐多種味道與質感,無比幸福。豉汁蒸排骨,排骨飯只得四五點排骨點夠喉呀,叫多碟先得。質素跟排骨飯的排骨同出一轍,豬肉味濃而香甜,鬆軟滑溜氣味吸引,滲出清淡豉椒味道點綴一下更是美妙。乾蒸燒賣,豬肉達人!排骨係豬、鵪鶉蛋燒賣係豬、乾蒸燒賣都係豬,全屬招牌菜,頂級味道、頂級滋味!食肉獸星座的我對於啖啖肉既燒賣當然愛不釋手,連食一打都面不改容!原粒入口,彷似灌湯一樣爆開,微量肥豬肉增添口感,天然豬油贈送甘香味道,既清爽又不油膩,大愛。排骨飯,無論何時何地都要用油紙墊住食,古祖食法!先將飯倒在油紙上翻滾,再淋上自家調配甜豉油,不停攪拌直至均勻,每粒飯都要添上顏色方算大功告成。飯粒抱著排骨掉進口中,腍濕爛而且飯香欠奉!質數下滑,低於水平,失晒水準。排骨肉少骨多,幸好味道超卓,可口香甜,軟棉滑滑。上品排骨飯既飯粒要乾身嚥韌飽滿肥嘟嘟,飯香撲鼻,排骨肉多骨少,半肥瘦鬆軟香甜沒肥膏,肉連飯淋上清爽芬芳甜豉油同吃,天上的味道!依家有油紙供應既飯店少之又少,現今年輕人對油紙功能沒半點認識喇!可以吸收多餘油份、水份及蒸氣,使到飯粒保持乾爽,當然如果蒸到碗飯濕淋淋又腍劈劈的話,油紙都無用武之地喇。如果用油紙捲住排骨飯放涼,數小時後才拆開品嚐,味道更濃更香甜呢!…Read More

星期天,難得約到個朋友肯早起身黎食早餐,但都已經成十一點幾喇 ~ 林記係大埔幾十年老店,老大埔唔會唔識 ~ 佢地既排骨飯我由幼稚園食到依家,超乎想像地好味 ﹗而點心質數雖平平,但價錢非常實惠。但服務就唔好要求太高喇,始終係大排檔麻,就算連食客都粗礦啲架 ﹗今次我朋友仔就比個粗礦既七八十歲阿婆嚇親,所以未能用心享受食物,急急食完就想逃離現場。話說食食吓野,唔聲唔聲有個阿婆突然坐落黎搭枱,口黑面黑粒聲唔出,大大力洗杯、酙茶,搞到氣氛異常,又騷擾到其他食客,食得唔舒服囉 ~蟹黃燒賣,懷舊點心,用料同賣相都保持幾十年前做法,撲實簡單不花考,所以價錢依然好抵食。豬肉實淨肉味濃,無加肥豬肉、蝦或係冬菇,單靠靚豬肉本身既甜味同香味已夠。感覺似豬肉球加左少量蟹黃作點綴咁,所以只係豬肉味道,但美味。四寶雞札,有蟹柳、雞柳、芋頭、火腿,質量依仍穩陣大路,一分錢一分貨,以咁平既價錢,已係物超所值。雞柳嫰滑又入味,火腿爽口帶咸香,只係每次腐竹都蒸得太乾,保持水份口感要滑會好食好多,而且無魚肚既四寶雞札始終有點怪怪的,我都明白受成本所規限。排骨飯,招牌菜排骨飯 ﹗到現時都全香港都無一間能跟佢匹敵 ﹗由飯、豉油、排骨,色、香、味都比間他食肆羸九條街。飯係由幾種米混合而煮成,每間老店既配方都唔一樣,口感、乾濕、軟硬、味道同飯香都絕對唔一樣,商業秘密。食依個飯有個重要技巧,就係要用吸油紙當碟墊住食,油紙可吸去多餘既水蒸氣、水份、豉油同油份,另到飯粒更乾爽,味道係濃郁。排骨半肥瘦又啖啖肉,肉味非常濃郁,仲帶有種特別既甜味,質感鬆軟棉棉。林記既排骨飯,排骨同飯係分開各自蒸的,當有 order 時,才將排骨舖上飯面,黎保持飯粒乾爽。見飯粒一粒粒分開而豐滿,口感嚥靭,飯香非常,加埋香甜既豉油,完全無位去扣分 ﹗…Read More

由幼稚園食到依家,街市都搬左兩次喇,幾十年黎質數都會有上有落,時好時壞,但好采有 80 % 時間都係頂級排骨飯既,近日絕對係超水準表現。飯一定要用幾種米混合煮成,比例同埋用啲咩野米絕對係商業秘密。林記啲飯又香又嚥靭、乾爽又有趙口,排骨香甜嫰滑,且啖啖肉,甜豉油清香甜味,撈飯一流。加埋傳統既煮法,用薄薄瓦碗蒸飯,而且飯同排骨係分開各自蒸架 ﹗另外,用油紙做碟,吸去多餘水份及油份,更令味道同口感提升 ﹗依度既排骨飯係我心目中,係全港最好食,全港第一位 ﹗排骨飯,主角,必食。阿林排骨飯返左黎喇,之前層經好爛食,飯差、排骨差、豉油差,但依家終於回復當年頂級水準喇 ﹗排骨香甜鮮嫰多汁,豬肉味濃,醃得夠入味,口感鬆軟,啖啖肉,好好好正。飯香、乾爽且一粒粒分開,飯粒之間有空間,更能提升飯香及乾爽度,而且淋豉油時能完全滲透,唔會癡埋一舊,似啲就係精髓。豉油非常清香且甜甜地,恰到好處、非常配合 ﹗一流享受 ﹗春蛋燒賣,係林記招牌點心,豬肉香又彈牙,而且口感實淨,真材實料。佢真係可以蒸到每次都無水架喎,係一滴都無架喎,真不知為何,一定要試試。四寶雞札,削左啲,腐皮蒸到乾晒身,唔滑又乾爭爭。配搭清爽,雞柳、火腿、珍珠筍及芋頭,依家唔係食芋頭最好既季節呢,唔係當灶時候,雖然我一向都唔食芋頭。但用上珍珠筍,可以帶黎一啲清香感,減去一點點油膩或啖啖肉感覺,都幾好味。干蒸燒賣,樸實大膽,返樸歸真,豬肉就係豬肉,無肥膏無蝦仔,就係咁簡單,來一籠豬肉燒賣,再畫龍點睛加點蛋黃點綴,絕呀 ﹗唔洗驚,雖樸實,但都幾好食既。食完埋單,咁既陣容都只係 HKD50 蚊,抵到您唔信 ﹗講緊既係免茶錢,兩碗排骨飯再加三個點心呀 ~…Read More
