Click 得入嚟Sushi Saito,都知如果唔係VVIP,就要打電話訂位㗎啦。想share返我個訂位經歷同小tips比大家:因疫情無晚市,所以birthday lunch就要同人食好啲,於是就早3個月訂位,經過不斷嘅努力,由早上10點至11點,用兩個電話分別係咁redial... 結果都係無人聽把心一橫,就決定last moment (約13:55左右) 先打去,奇蹟出現了!一打就通!就係咁就造就咗今次嘅生日lunch啦。可能我比較old fashioned,揀得食江戶前壽司,總覺得稍傅要光頭、指甲要剪好先有保證。除咗service team之外,Sushi Saito嘅稍傳及助手係呢方面都做到好足好整齊,所以我都好期待呢間2星餐廳食Omakase正在可以欣賞師傅嘅手藝同交流。呢位師傅好細心,處理魚時會留意有魚骨;但交流方面,可能佢性格比較內斂,除咗介紹每一道菜式同上甜品前會問大家覺得點、飽未、有無壽司想再添加外,都無乜交流了。不過師傅都nice嘅,臉帶微笑好親和力:)唔識譯呢道菜...lol 個汁味道似中式茨汁,但比較杰身,好易黏住魷魚。味道無乜特別,但都okay。好impressed!一食入口嘅口感好似食A5和牛感入口即溶,但又散發陣陣魚油香味。呢種魚本身易有腥味,但呢件壽司因熟成得宜,所以令佢保存到原有嘅鮮味而冇腥味,抵讚我鍾意食嘅魚芒其中之一,因為佢有口感同帶鮮甜。覺得有啲可惜嘅係無輕微火炙一下,令佢出油再帶點焦香。不過味道都okay。小肌嘅肉質口感我唔太識欣賞,所以無乜comment。拖羅好多人都食過同埋食得多,所以有時真係會食到無乜驚喜,呢度嘅拖羅係有水準嘅,但我就唔會太surprised。至於赤身,熟成過後令佢鮮味大大提升,肉質軟腍好好食。所以每次食江戶前壽司嘅吞拿魚壽司當中,我都比較期待食赤身 (我係咪好cheap lol)。係我期待嘅壽司之一。但可惜唔知係咪青檸汁出事,令件魷魚有啲苦澀味,所以都幾失望...熟成後又係變得更好食嘅魚之一,面頭加上少少蔥蓉令佢變得更加香口。師傅毫不客氣夾起好多海膽,海膽係超鮮甜高水準,應該係極級以上 (忘記睇木板嘅label...);另外,紫菜脆口都令呢件軍艦嘅價值大大提升正常水準嘅一道壽司。清清地,okay。好多爽口食材擺埋一齊,不過無乜特別,主要係用嚟餵飽你。師傅上菜比我時係話egg custard,然後再補多句「tamago」。但一擺入口,同我食開嘅玉子係完全唔同,有驚喜!坊間都有甜玉子,但呢件嘅外表係非常平滑、口感Q彈,味道係近似custard。多汁夠甜,好味!小總結︰成年無得去日本嘅情況下食返啲有質素嘅日本嘢,都算係苦中作樂啦!今次Sushi Saito嘅體驗,除咗魷魚次外,所有食物都起碼有中上水平;而Service方面都做得好細心,會留意你細微嘅需要。不過價錢都偏貴同訂位幾難幾麻煩,所以可能無乜機會再食㗎啦…Read More

剛好和男友一週年,所以就來吃個午餐omakase慶祝一下眾所週知,除非是VIP介紹,否則都要靠每月一次的限定時間電話預約,男友就幾經艱辛加一點運氣成功打通的因此更加覺得機會珍貴。入面是多間小房,是一貫以木為主的設計,當天就坐了共六位客人,大家都有兩個身位距離,安排恰當當天負責招待我們的師傅,非常親切前菜是燒帶子和燒魚,因為上載相片只限12張,因此分享不了壽司環節:比目魚比較小吃沒經火炙的,原來很柔軟,沒有油膩感小肌吃完第一件後,口內還充滿醋飯的香氣,本人覺得有陣稻草的香氣,覺得很特別,有點衝擊的印象,但男朋友卻沒有太大感受。小肌帶點酸,和醋飯有著層次的交合赤身醬漬赤身竟有像魷魚的膠質感,驚喜中拖羅大拖羅兩件都脂香感十足,入口即溶魷魚師傅切的時候把衣去掉,再灑上少許鹽點綴,令味道更鮮池魚比醬漬赤身更驚喜,魚上的蔥醬香氣尤如黑松露醬般,完全填滿你的味覺,非常好吃大蜆肉質飽滿,不過太甜了,有點浸在糖漿的感覺海膽:像雪糕般幼滑海鰻得鬆軟,有點溶化的感覺,幸好沒有如大蜆般甜膩太卷完美的梯形,力度剛好,師傅包得乾淨利落,因為曾經試過自己包,覺得是不容輕視的技巧最後是湯、玉子燒和蜜瓜玉子燒如布甸一樣滑溜有彈性,充滿蛋香總括來說是值得一試的,雖然這個價錢已是一般的晚市omakase價錢,但可欣賞到師傅的刀功和背後準備付出的匠心,令每件壽司如藝術品般,確實是物有所值的…Read More

今次我好認真打呢篇食評,因為呢間係全港最出名同最高級既壽司店之一,亦有唔少人對香港Sushi Saito呢間餐廳有種迷思,包括好唔好食?點樣book位?難唔難book位?值唔值去食?等等既問題。所以我都詳細啲打下我個人既睇法同體驗。香港人喜歡日本菜既程度大概不需我多說,我們身邊都一定有唔少朋友一年飛日本幾次,然後分享美食上社交媒體打卡,但又真心講,日本最top既餐廳從來都係好難訂位,有啲甚至要等上半年以至一年,而且好多出名既餐廳都係日本人先能夠訂位。所以日本著名既米芝蓮三星店 Sukiyabashi Jiro或者Sushi Saito 其實好多香港人都未食過。但對於一部分人嚟講,有時候又唔一定要食最好既餐廳既,唔少人就算去到日本都係食平價壽司店例如美登利,或者去豐洲市場食新鮮刺身同壽司其實已經好滿足。不過無論大家食過好野定係想食好野都好,都喜歡睇其他人既食評去斷定一間餐廳食唔食得過,所以我就中肯客觀咁講多啲基本既information出嚟,再分享我喺香港米芝蓮兩星呢間Sushi Saito用餐既experience。<餐廳背景>Sushi Saito 總店喺日本,日本店2007年獲得米芝蓮一星,2008年榮獲米芝蓮二星,2009年就榮獲米芝蓮最高級別既三星殊榮。Sushi Saito 於2018年喺香港中環四季酒店45樓開設全球第一間海外分店,Saito San既徒弟嚟到香港主理,並榮獲米芝蓮二星殊榮。<訂座>想喺香港Sushi Saito食,有三個方法。一) 你係四季酒店或者引入Sushi Saito嚟香港既Global Link飲食集團既VIP.。二) 你有Global Link VIP 朋友refer你/幫你訂位去食。三) 每個月既一號10am-2pm打去Sushi Saito訂位熱線book位。我之前試過打電話訂位,但打左半日都無人聽,所以放棄左打電話。最後搵一個係Global Link既VIP朋友幫我訂位所以先有得食,哈哈。<Menu及價錢>我覺得一篇好既食評係要有menu比到大家睇下餐廳食咩,不過呢間始終係高級既壽司店,去之前基本上客人都已經知道食omakase,所以去到餐廳內係無一個menu影到比大家睇,但價錢就如下,比大家參考。當中我係食lunch,包括兩款前菜,十件壽司,湯,甜品。Lunch omakase: $1580 + 10%/per personDinner omakase: $3280+10%/per person<衣著>我覺得客人衣著方面smart casual嚟到食都足夠,就算唔係都記得千萬唔好著無袖衫,短褲同埋拖鞋嚟,要學懂尊重場合。女士方面就記得唔好噴太多香水,因為香水既味道會影響自己同其他客人欣賞同品嚐壽司既體驗。<餐廳裝潢>雖然香港店位於五星級酒店內,但四季酒店將45樓一部分隔開並裝修至跟高級壽司店無異,店內採用左日本長野檜木,沉實典雅。食材每日從日本直送,並由sushi chef喺當地市場挑選。引入Sushi Saito嚟香港既Global Link飲食集團從日本奈良挑選日本陶藝大師辻村史朗以及佢兒子辻村塊既陶藝品,除左作為擺設用途亦承載美食,令客人飲茶或者享用清酒時,令客人感受到融合藝術同美食既奧妙。<服務>Service on point. 經理同侍應都有禮貌,除左遞上熱毛巾同埋熱茶之外,仲會不斷幫你更換熱茶。<用餐經驗><師傅手勢和刀工>日本菜最重要除左新鮮既食材之外,最重要都係壽司師傅既手勢同刀工。個人認為以香港嚟講Sushi Saito 壽司師傅既刀工不錯,而且非常專注。而手勢方面呢,師傅有時會同客人交談,看似好悠閒咁,但其實熟能生巧,手握壽司飯力度剛好,亦唔會話太鬆散。前菜Komochi yari-ika前菜總共有兩道,分別係兩道熟食既菜式。第一道就係Komochi yari-ika (子持ちヤリイカ) Pregnant Spear Squid with roes. 即係魷魚同埋佢既卵子,質感幾爽口。Kama-toro第二道前菜係Kama-toro,即係吞拿魚既鄂位,嚐到油香之外,質感非常軟腍。<壽司>其實而家食壽司就算喺日本都已經唔少地方都唔會由白身魚食到紅身魚(即係淡味食到濃味)咁,所以師傅點安排我就照食啦。Kinmedai  金目鯛有部分既壽司店會用火槍輕輕火灸金目鯛,目的為左迫出油份,但呢度無,不過唔係話無就代表唔好,魚既肉質依然夠爽彈。Kohada 小肌如果你唔認識Kohada 小肌,大概你對壽司既認知都係比較少。Kohada 小肌係江戶前壽司不能或缺既一員,呢間肉質幾好之外,醃得唔錯,酸度亦平衡。Akami  赤身吞拿魚赤身,經過醬油漬,唔會太鹹亦嚐到魚既味道。Chu-toro  中拖羅呢件中拖羅當日喺魚既鮮味同油脂甘香程度當中都算平衡。O-toro 大拖羅我好期待既大拖羅,唔算入口即融,但食落都嚐到油脂甘香。Sumi-ika  墨烏賊Sumi-ika 墨烏賊都算唔錯,質感幾爽口。Aji  池魚當日既Aji 池魚好食,蔥我覺得係神來之筆,香味突出但亦唔會蓋過魚既鮮味,亦嚐到油香。香港嚟講算係我食過人生當中最好既一件池魚。Sea Urchin海膽海膽用上北海道馬糞海膽,當日既質素好新鮮,海膽甘潤鮮甜。Anago 海鰻其實質感幾fluffy,呢間主要用鹽去調味,不過我更喜歡令一間加上甜既醬汁既海鰻。Clam 大蜆蜆肉質清爽,醬汁稍為過甜。卷物卷物包括青瓜,海膽,蟹柳等。質感爽口但食完即忘記,所以普通啦無咩特別。Tamago  玉子呢件玉子好食!平滑得嚟,拎起就發現質感好Q彈,蛋味亦都好香甜。麵豉湯真心講,好普通,同其他日式壽司店飲到既麵豉湯分別不大。甜品甜品以蜜瓜作結,坦白講呢件唔係我食過最好既蜜瓜,但基本上都算幾鮮甜多汁。<價錢>Lunch omakase: $1580 + 10%/per personDinner omakase: $3280+10%/per person<總結>呢篇食評我好用心機打,因為好多人都對Sushi Saito有迷思,所以我就將我最真摯既感受打出嚟,畢竟食完都使左一大筆錢。Sushi Saito既價錢我真心覺得係貴,但質素以香港既omakase嚟講又真係算係頭5位最好。當然,心目中有壽司店既質素差唔多但價錢平一半,哈哈。所以我認為如果你願意使錢喺食物方面既,Sushi Saito一試無妨既,如果你真係覺得貴既咁或者儲下錢去日本食好過,哈哈。…Read More

幸運地能夠在Sushi Saito午餐,作為日本米之蓮三星、tablelog 排名第一的壽司店的香港分店果然名不虛傳👍🏻 基本上無論食材的新鮮和味道、醋飯酸度的平衡感、壽司的形狀和飯粒間的空氣感等等都無可挑剔而我最喜歡以下三道壽司:小肌 - 醃的酸度非常平衡,清爽中不失嫩滑鯖魚卷 - 醃得極佳,一丁點腥味也沒有,而又不會太酸,再加上昆布並灑上芝麻,完全能夠享受到鯖魚的肥美。和侍者一談之下才發現師傅還加了少許紫蘇,但是下的份量剛剛好,帶出香氣而又不喧賓奪主玉子 - 看起來完全不起眼的玉子,竟然是今天的最大亮點!從用筷子夾起的一刻而感到這玉子的不平凡,不是軟綿綿而是像布甸,像BB屁股般盪漾🤣,吃下去的質感真的有點像custard,之後跟師傅交談他說saito san也以custard形容這玉子。至於味道更是沒話說,蛋香濃郁而吃下去滿口鮮甜,初時以為應該下了很多材料,後來一問之下才知道師傅只下了蛋、蝦和高湯已能做到這效果,真的教人拍案叫絕,之後念念不忘真的見後悔沒有encore這玉子唯一可惜的是始終身處中環四季酒店,商務色彩較濃,店內氣氛始終教人未能百分百享受壽司的味道,不過我想晚市氣氛應該會較佳。不過瑕不掩瑜始終無損他香港頂級壽司的地位。…Read More
