爐端燒一向是「田舍家」的主打,不過香港店與東京六本木總店一樣,只會在晚市供應。這夜與朋友又上來ICC Sky Dining 101樓,目標就是要去「田舍家」吃爐端燒~最近這幾次來都剛好天色都有點矇矇。這日走進餐廳,就被窗外美麗的維港兩岸景色吸引了。夏日日照長,已經晚上7點多但仍有藍天,一路吃、一路從101樓高空看著窗外天色漸變黑和燈光亮起,感覺真好。沿著走廊一路走,就會來到爐端燒房。一拉開房門,就立即感受到與外面餐廳完全不一樣的氣氛。這房跟足日本最傳統的爐端燒格局、佈置,開'3面台',約20多個座位圍著台坐。台上有一排2個火爐,由2位穿著傳統服飾的日本師傅整晚跪在台上面主理燒烤,相當型(亦佩服師傅的好腳骨力,體力和耐力 )。師傅會用長長的木槳將燒好的食物送到食客面前。至於爐與我們食客枱之間的台就擺滿各式各樣食材。種類選擇豐富,既有擺在眼前各款爐端燒用的海鮮,肉類和蔬菜,亦寫在牆上的'menu'字條,當中亦包括不少前菜小食與刺身。這裡大部份食物都是以一件件/隻隻order,就算人數不多時都可以多吃幾款。大家如果看到想吃的,只要跟師傅講就可以了。每當人客點菜後,日籍師傅會用日語大喊confirm order,氣氛熱鬧。加上這爐端燒房的佈置,真的差點以為自己身在日本呢。而且吃到一半差不多約8時左右,師傅們會示範傳統用木槌在大木桶中樁年糕,又邀請食客一齊樁年糕。各食客無論試樁年糕的、抑或只影相拍片的,都玩得好開心。互動一番過後全場氣氛熱鬧起來。之後我們每位都會有一粒剛才新鮮做起的日式年糕,質感相當煙韌,感覺真的比平常吃到的不一樣呢。這夜我們就先點份「燒雞泡魚味醂乾」 ($130) 小食,配瓶日本釀製IPA啤酒Ozeno Yukidoke ($98)。金橙黃色的啤酒入口清新,帶頗香濃的啤酒花及麥香,並且不算很苦澀。另一款小食「炸豆腐」 ($85),外層薄脆的豆腐仍相當嫩滑,兼帶豆香,大推介。「田舍家」的刺身向來夠鮮美,水準很不錯。這晚在開始吃爐端燒前,我們亦先從牆上的'menu'選了4款刺身。白身魚平正,相當爽口、清新。厚切金目鯛刺身食起來更美味,很爽甜。而平貝甜嫩,亦同樣很美味。不過說到吃得最滿足的,就是中拖羅吞拿魚腩刺身。粉嫩色的拖羅軟嫩香甜,油脂甘香,味道香濃而不過膩。開始吃師傅在我們面前即席預備的爐端燒食物啦。長木槳上先有新鮮熱辣燒起的「雞翼」 ($50),燒得皮香脆而肉仍juicy,輕輕用鹽調味,好吃。「鱈場蟹蟹腳」 ($980),師傅預先細心地剪開來一邊的殼,食起來更方便。啖啖肉,相當鮮甜呢。「燒廣島蠔」 ($200),肥肥白白的蠔,味道甜美,連一向偏愛體積較細小蠔的我亦覺得不錯。這個「雞肉串」 ($75)亦是不容錯過。雞肉燒過後仍保持肉汁豐富,質感爽彈,配著加了同樣的微甜燒汁燒的大蔥,味道很夾。接著就輪到田舍家最受歡迎的爐端燒「喜知次」啦 ($1680)。喜知次燒得火候剛剛好,皮香脆而魚肉肉質極軟嫩香甜,充滿肉汁和魚油,滋味得很。「宮崎A5和牛牛柳」 ($1800),牛柳燒得外微焦香,而肉心仍是粉嫩色。一入口牛香濃郁,油脂甘香。每片牛柳吃起來都肉質軟嫩juicy,幾乎差點溶在口裡。吃點配菜沙律和醃菜平衡一下,再繼續吃,轉眼整份燒和牛牛柳就給我們吃光光。大滿足呢!另外我們再點了些燒蔬菜,「日本小芋頭」 ($120),「蠶豆」 ($110),「洋蔥」 ($65)和最愛的「南瓜片」 ($65)。南瓜入口軟綿,味道甜得自然。塗點牛油再吃,多份鹹香,更軟滑。「北海道海鮮蒸飯」 ($980)。在我們面前,除了爐端燒外,還有這大蒸鍋。這客用小木盒上的蒸飯上面蓋滿鮮甜無比的蟹肉,三文魚子和海膽,單單賣相已經夠吸引!吃之前撈勻,每口都是鮮甜,粒粒飯粒都很均衡入味。其實雖然已經吃得很飽,仍忍不住要把整碗飯吃完。最後吃份水果拼盤,最愛甜蜜多汁的蜜瓜。這夜的「田舍家」爐端燒聚,輕鬆好玩,真是氣氛一流,讓我們彷如身在日本。「田舍家」作為城中的高檔日本菜,這頓爐端燒晚餐人均約$3000,不便宜。但無論食材,師傅功架以及環境服務,還有那從101樓看出去的開陽璀璨香港夜景,仍是讓人覺得物有所值,相當滿足。…Read More
