小弟我食過咁多間拉麵店,我敢肯定旺角區最好食嘅拉麵店。撲一,為咗呢篇食評小弟親身分別嚟過五次(即係排過五次隊)食哂我最期待嘅拉麵(當中海老拉麵食過兩次),小弟呢邊食評係誠意之作係開始之前,我想讚一讚店員小姐,有一次我漏咗把遮喺入面,佢都幫我keep住,勁窩心,係招呼客人排隊入去之前,好有禮貌,會預先俾定菜單排隊嘅客人睇入面舖頭唔算好大,目測可以坐到大約20人,如果夏天會比較熱,因為冷氣唔算好夠麵底嚟講有兩隻:白麵(博多),比較幼身,硬少少,適合配濃湯黃麵(東京),粗少少,比較滑,口感好啲,適合配淡湯第一碗海老拉麵好好味呀,所以我食過兩次,個湯幾濃,非常重蝦膏香味,上面亦有啲櫻花蝦乾,將成個蝦湯嘅鮮甜升華到另一個層次,非常濃郁,因為濃郁所以我選擇咗黃麵,隨湯附送一隻蝦佢有得俾你揀厚叉燒/慢煮叉燒,今次我揀咗厚叉燒,簡直完勝慢煮叉燒。我覺得海老拉麵係撲一代表作。同場加映唐揚魷魚,油溫控制得啱啱好,外面卜卜脆,入面非常Juicy,用嚟佐酒一流!想講最特別係個綠色醬汁,雖然唔知咩嚟,食落去好好味,好特別特,有冇朋友仔知道係咩醬?第二碗蟹膏拉麵同海老拉麵不相伯仲叮噹馬頭,要我揀邊碗係冠軍?真係係好困難。相比起海老拉麵,蟹膏拉麵比較清淡,一如既往,清淡嘅湯,就係配白麵,但如果你哋想濃少少,不妨將上面嘅蟹膏同蟹肉碎,撈勻落啲湯度,將成碗湯嘅蟹味昇華!好似食緊隻蟹咁隨湯附送一個蟹鉗仔,老實講,冇乜味⋯今次我試咗慢煮叉燒,俾我揀100次,100次,我都應該要揀返厚叉燒,簡直係完全兩個境界,每個人都有唔同嘅口味,可能有啲人鍾意食慢煮叉燒多啲。同場加映冷凍廣島蠔,一啲都唔腥,而且非常鮮甜,個醬汁有少少辣,用嚟作為開胃菜一流,唯一缺點係限定期間發售,所以朋友仔見到呢個食評嘅時候,應該冇得食強烈要求撲一將佢列為常規菜式第三碗魚介拉麵一飲啖湯,超濃郁鰹魚香味,口感有些少流沙質感,應該係鰹魚粉,非常重成本點解會有一塊慢煮叉燒,一塊厚燒叉燒?因為師傅話嗰塊厚燒叉燒,份量比平時細,所以送一塊慢煮叉燒俾我,好佛心有良心特別嘅係竹筍吸收晒啲鰹魚味道,而且非常爽口,上面嘅木魚片撈埋啲湯飲,木魚mix鰹魚,味道非常好。同場加映黑松露魚餅,作為小食係非常高分,魚餅炸到好熱,而黑松露醬係凍凍地,黑松露配魚餅真係第一次食,呢個組合意外地夾,出乎意料好食最後一碗豚骨拉麵豚骨拉麵港人至愛,但點樣可以喺云云豚骨拉麵之中脫穎而出?撲一拉麵做到。其實個湯底做到好香豬骨味,再加少少豬油脂肪,令到成件事好「豬」就得㗎啦,起碼有人會記得你,比其他豬骨湯特別,啲湯再配埋啲脂肪,好順滑,用條脷頂一頂,啲豬油香出晒嚟總括嚟講:撲一拉麵全部菜式都係高水準水平,個人認為唔應該賣呢個平民價錢添,不論係師傅對客人嘅態度,因為塊叉燒份量少咗,加多另一塊慢煮叉燒俾你作為補償,淨係呢個做生意嘅態度,喺香港仔邊度搵?似日本嗰啲匠人精神,而且侍應小姐都非常有禮貌,價錢平,不在話下,食物嘅質素先係重點。佢係香港所有拉麵店之中,係我心目中嘅top 1。我好少會讚到一間拉麵店咁好,亦都花咗好多心機去打呢篇食評,我唔係打手賣廣告,一蚊都無收過,撲一拉麵,你值得的。Hong Kong deserves the best last forever.…Read More

下班經過這間店,平日的晚上,店外總是排滿人,這次約了友人一起試試這間拉麵店的拉麵。店內有吧台座位和普通座位,位置不多,牆上掛了少許裝飾,晚上十分熱鬧。點了一碗海老拉麵($90),選了普通的濃淡度、慢煮叉燒、木耳、軟麵。個人覺得選「普通」的濃淡度,味道已很足夠,因為拉麵本身有大量櫻花蝦,櫻花蝦的鹹度也會增加整體的鹹度。慢煮叉燒是薄片的,有點像薄火腿,頗軟滑又帶點微微煙韌。木耳非常爽脆,配另一種爽脆度的櫻花蝦很適合。麵條還可選東京黃麵和博多白麵,這碗博多白麵的比較爽口,有點像平時吃的幼麵而沒有皂水味。爽口海老放在拉麵中間,配上鹹湯頭,整體味道濃郁香口。至於蟹膏拉麵($92),選了濃湯、厚燒叉燒、芽菜、普通麵硬度和東京黃麵。蟹膏拉麵的味道相對柔和,友人比較喜歡這款。一點蟹膏配一口湯喝,蟹味更鮮。厚燒叉燒厚度足,除了能嚐到叉燒扎實的口感,還嚐到入口即溶的嫩滑,在味道和口感上都比慢煮做得出色。東京黃麵與博多白麵的口感差不多,掛上湯底後,東京黃麵的味道更出色。看見附近的人大多點博多白麵,似乎兩款也有其特色之處。小食唐揚魷魚($28),小食份量適中,魷魚本身非常鮮爽,搭配酒類一流,建議可減些少用鹽,配同是鹹味的拉麵吃便會更適合。…Read More
