立体派拉麵是我有bookmark的一家拉麵店,但一直未有特意前往。剛好這次和朋友在上環處理事務後,便行過來立体派拉麵吃晚餐。店舖門口在一條小巷,我們都錯過了路口,走回頭幾步,到了路口,下幾級樓梯才到達拉麵店。主餐牌分別有5款拉麵及1款沾麵為常設選項,當中的特級白湯拉麵和九味醬油湯拉麵均是主廚推介。選了前者,是曾經獲獎的一款拉麵,湯底以有機飼養的京都丹波地雞及籠目昆布精製而成,先試湯頭,濃郁鮮味,清爽不油膩。配料有低溫慢煮叉燒及溏心蛋,3大片的叉燒肥瘦相間,口感柔軟,有微微炙燒香氣。溏心蛋的蛋黃呈橙紅色,富蛋香,稍嫌略略熟了一點,不夠流心。拉麵麵條彈牙又掛湯,份量十足,吃完一整碗拉麵好夠飽肚!火炙豚肉擔擔沾麵,朋友選了Level 2的辣度。沾麵汁是以濃郁雞白湯與芝麻味增醬熬製而成,而辣醬是以秘製辣椒油混合3種辣椒所製,我和朋友都覺得Level 2的辣度已好夠辣!沾麵的麵條較為粗身,口感煙靭又掛汁。4大片的叉燒,味道微甜濃郁,但口感沒那麼柔軟。唐揚脆炸雞,炸雞大件,脆漿厚薄適中,新鮮熱焫炸起,皮脆而肉嫩多汁,微微鹹香,擠些檸檬汁及沾些蛋黃醬就更為滋味!店門隱蔽的一家拉麵店,由麵食以至小食都很好吃,份量又夠飽肚,值得再來試試。…Read More

見到網上有介紹呢間日本過江龍拉麵店《立体派》嘅雞白湯非常出色,就決定嚟試吓。睇番網上資料,佢個雞白湯係用咗日本米鴨、京都丹波地雞、昆布、日本各地近四十種味噌等材料熬製而成。淨係睇介紹已經好吸引,所以趁收工就即刻走去試下呢個咁利害嘅拉麵。佢店嘅位置唔易搵,我行咗唔少冤枉路先搵到,嚟到都唔少人等位,但為咗食呢個好期待嘅拉麵,唯有耐心等候。等咗15分鐘左右終於有位坐,我點咗招牌嘅《特級白湯拉麵》同一份《唐揚脆炸雞》。到拉麵上桌,第一時間就係試佢個湯底係咪真係咁正。立体派嘅雞白湯相信係我飲過最正嘅湯底,味道非常濃郁,濃郁得嚟亦帶清甜嘅雞香味,而且麵係掛汁,麵嘅軟硬度適中,最後要飲哂個湯,先對得住呢個咁出色嘅拉麵。《唐揚脆炸雞》皮脆,雞肉嘅肉質鮮嫩,冇果陣雪藏味,但始終雞白湯拉麵嘅鋒芒太勁,少少後悔唔叫多個麵試下,雖然感覺上係有少少誇張,但始終唔係經常嚟嘅地方。…Read More

由兩位日本拉麵大神林隆臣和松村貴大所創辦的立体派在香港開業一段時間,但人氣依然強勁,大排長龍,相信一眾的拉麵迷和我一樣,想一嚐傳說中的創意拉麵。店外牆壁上繪畫多幅壁畫,當中更有兩位立体派的創辦人肖像,而這些壁畫均出自於藝術家Sergei Rozhnow之手,未吃拉麵前可以跟壁畫合照打卡消磨時間。立体派店內奉行簡約風格,以木材為主調,感覺自然輕鬆。看看拉麵的餐牌,一共有六款拉麵可選,當中兩款廚師推介甚為吸引,均由兩位創辦人創作而成。海體醬油湯拉麵映入眼簾的是琥珀色的湯頭,淡淡的醬油香撲鼻而來,第一口湯先嚐到微微鮮鹹,不一會口腔又有一番醬油的甘甜,湯底味道無窮變化,不少得九種特級醬油彼此互相融合的功勞。至於麵條亦是一大特色,口感極為煙韌彈牙,比一般拉麵更具嚼感,原來拉麵都是立体派自家製造,整碗拉麵製作真的一絲不苟,別具心思,令人驚喜連連。拉麵配料方面,有筍,京蔥及汁煮厚切叉燒。原條的汁煮厚切叉燒極有厚度,光是份量已引人注目,叉燒經醬油慢煮後醬香徹底滲透當中,非常入味。肥瘦相間的叉燒軟腍不膩,入口即化,口齒留香。傳統關西風關東煮湯底零味精,全是天然的鮮美,獅子狗煮得恰到好處,彈性十足,蒟蒻更是爽彈無比。雞蛋和蘿蔔吸飽湯汁,清甜味美,這就是簡單的日式美食。唐揚脆炸雞蠻大塊,外層炸得金黃酥脆,有股特別的香氣,而內裡雞肉滑嫩極致,肉汁豐盈,在口腔流竄不絕,擠上檸檬汁的脆炸雞倍添可口滋味。特級白湯拉麵有別於常見的豚骨湯底拉麵,使用鮮雞燉煮出濃郁的雞湯,如同牛奶般的雪白湯底,令人食指大動。湯頭蘊含著雞肉熬出的濃郁鮮味,不會膩味,而浸潤在雞湯裡的拉麵很有彈勁。另外拉麵附上三片的低溫慢煮叉燒粉中帶白,足見它的細嫩,肉味濃重,脂香無窮。…Read More
