「生舊叉燒好過生你」,這是小時候聽過媽這樣說、繼而鼻酸,再而流淚的刻薄說話。這諺語源於燒味是奢侈品的年代,做一塊叉燒可能貶中帶褒,雖然食物的價值比人低,但做叉燒已是當時比較矜貴的食物。燒味依然在現今社會出現,但隨著物資愈見豐盛、食材選擇較以前多,價錢變得親民,不其然比降格,變相令人聽到那諺語會更為反感。我說,若然來世要做叉燒,做新桂香的叉燒也不錯;半肥瘦、皮光肉滑的體態,足夠羨煞旁人。在這現實的今生我要努力瘦身,但如果來世做叉燒,像這裡的好,是招徠垂涎的半肥瘦。我不是柴灣人,港島東是甚少涉獵的。出於偶然的機會,要到柴灣的工廈做體能訓練,順道慕名一訪傳說中的新桂香。找來了甚少露面、自稱為柴灣地頭蟲的友人,帶我坐在街頭吃個馳名的燒味飯。假若與他素未謀面,從其文筆想像不到正是坐在摺枱另一端的隨性型男生。不像一樂和鏞記般做燒鵝做到上米芝蓮,但新桂香憑叉燒成功攏絡街坊的心;雖沒有堂皇的門面、裝潢十年如一日的簡樸,無虛名和光環都一樣以實力派自居。多數燒味店都不設堂食,向來都是買走的多,這裡有三四張摺枱已算不錯。一半於店內,一半在店外,店外的街道不是大街,吃塵的情況不嚴重。恰巧有位可以堂食是個bonus,不然我真的考慮把飯盒帶到附近的公園吃,想起這畫面都覺得自己很麻甩。這畫面沒有實現,晚上7時左右到達,幸還有座位、幸還有只賣剩兩三條的叉燒。主婦們買菜時間已過,進來斬料作菜的人不多,但不排除有「臨急抱佛腳」的人來買燒味救急,欲免向隅,建議晚上七時前到訪。控制飲食的我不想吃米飯,問店家有沒有瀨粉、米粉之類。「只有飯」,好,免為其難的豁出去;特意著師傅要少飯,但少飯是比「大漢份量」少,仍是我眼中的正常飯量。碟頭飯有單拼雙拼,$38至$80不等。相信未有羅列全部的配搭,但某些部位較貴,如雞/鴨脾、乳豬、燒腩,逢拼上這些食材都會相對較貴。最普通的一碟叉燒飯,承惠四十大元。燒味來說不算很便宜,不過與現時的茶餐廳價位相若,實不為過。不知這裡的豉油雞、白切雞有多大,我亦不是斬料常客(只是因為家中的菜不是我買),$200/隻好像有點貴…光顧什麼碟頭飯也好,都有例湯送。簡單、沒什麼味精的霸王花豬骨湯,清新淡雅,放上不少豬肉豬骨煲,甜味和肉香自然不扭捏。和茶餐廳的比較,當然是燒味店的例湯較信得過,至少不用質疑骨和肉從哪裡來。不是燒味店會特別對此恩惠之物大費周章,只是出產肉食的,自然有很多頭頭尾尾可以順道拿來煲湯。唾手可得的豬肉豬骨,造就了味道真確、近乎無添加的例湯。一客叉燒燒肉飯,一客叉燒燒鴨飯,雙雙奉桌。前者是正常飯量、正常叉燒,後者是少飯、偏瘦叉燒。一條青菜都沒有,就是坦蕩蕩的肉和飯。嘗試在邪惡晚餐之中找點變奏來安慰自己,瘦點的肉、少點飯,還是逃不過沒有菜吃的事實。「又要威又要帶頭盔」,又要吃又要怕胖。女生就是這樣忸怩,嘲笑我兩秒好了。燒味份量不少,大方的放上大於手掌面積和體積的,置於飯面。旁邊的飯仍見雪白,淋上醬汁的位置在燒味下方,撥到一旁並稍作拌合,米飯的濕潤度便來得剛好。叉燒燒肉飯 $44友人說燒肉表現平平,皮夠脆但瘦肉位太少,但叉燒是如期望中的好。一天能賣上二百條叉燒,絕非浪得虛名。沒有特別要求下,給予半肥瘦的叉燒,為數七至八片,夠拌飯。不見俗稱「火雞位」的燶邊,但在燶邊附近的偏肥而爽口的部位仍在。表面醃得深紅,顏色只滲透到肉裡的幾毫米,中間仍保留粉嫩明澈的天然淡肉色。蜜汁沾得均勻,不甜膩不粘牙,但蜜香豐腴。粼粼的深紅下,肉質紋理細緻,夾雜著均勻的脂肪層,好比在西餐廳吃的黑毛豬的完美肉質。這裡用上新鮮脢頭肉,鬆化而肉香滿滿。最邪惡的莫過於蜜香緊鎖上下的兩端脂肪組織,咬下盡是甜美的脂香,比燒肉那相對味寡、平平無奇的脂肪層,引人入勝得多了。叉燒燒鴨飯 $44 (少飯+偏瘦叉燒)偏瘦的叉燒當然少了那邪惡的半透明脂肪,肉質的紋理更見密集,雖不及剛才的人,卻附上美味如燶邊但仍是瘦肉的「轉角位」。角位較其他部位燻得深色,但不見焦黑,蜜味特別濃郁,可見火喉掌握準繩。焦黑的地方不要吃,媽叮囑過,因會致癌。拿著兩片叉燒做個對比(筷子夾著的是正常叉燒),兩者的肉紋很明顯的不同。雖然瘦得幾乎看不到脂肪相間的紋理,咬下更是軟腍富肉汁,潤澤不乾,咬斷時不用拉扯,真章在此,同樣黯然消魂。如果你認為哪裡的半肥瘦叉燒都不會壞到哪裡去,偏瘦的部位相對更顯功架。沒有脂肪的幫助下,本身的肉質和燒成的火喉註定成敗。所給的燒鴨部位半好半壞,五件中有一兩件只是皮和脂肪,沒什麼肉。最多肉的兩件,皮下脂肪很薄,所帶的瘦肉腍而不霉,肉質略嫌偏乾但還可接受,著職員給我酸梅醬蘸一下。或許切得薄碎了點,每件像是「方塊酥」般放進口,理應富肉汁的口感未能盡顯,是一大可惜。整體來說,燒鴨不過不失,未至於令我後悔不點單拼叉燒飯,但必定是叉燒吸引得多。飯底做得不錯,飯粒爽身富米香,配合甜度恰到好處的醬汁,不禁一口一口的送進口而不自覺。醬汁沒有放得太多,以免浸腍飯粒。份量剛好,上面的肉已很好拌飯,不致淪落到要單靠醬汁來熬過去。口中嗒著蜜味滿溢的靚叉燒,在路旁的摺枱上啃燒味飯又怎麼樣,不失儀,這就是吃燒味飯的風味。任「慢煮」、「黑毛豬」等進口技術和食材大行其道,新桂香的靚叉燒自有承傳人、自有留人處。從以前的桂香到現時的新桂香,照顧著柴灣街坊和肉食老饕的胃口,純青的爐火依然不滅。吃整碟肉和澱粉質,罪過罪過,那刻我很想吃到一條青菜。吃肉時想菜,吃菜時想肉,就是不斷的迴轉、重覆著。口中說不,但我還是想肉的時間較多,特別是這家的叉燒。…Read More

我今年未到四十,但今日用左超過四十蚊,食左個燒味飯。燒味店並非身處商業區,位於柴灣既住宅區,咁岩lunch經過,於是去買外賣。中午時份,不論堂食定外賣,都幾多人。點左個叉燒燒肉飯,原來$42雙拼送例湯。叉燒燒肉飯+例湯大約5分鐘既路程番到食飯既地方,打開飯盒,盒飯依然燒騰騰。叉燒係我鐘意,無肥膏果隻,厚道適中。再試埋燒肉,啖啖肉加少許肥膏。燒肉既靈魂 - 皮,雖然經過五分鐘路程,但仲係脆皮。燒味飯汁雖然已經幾多,但係部分飯仍未沾到。另一美中不足既地方係唔記得要薑蓉,令今次食既叉燒燒肉飯未能錦上添花。其實一般街坊燒味飯都係$30附近,價錢親民。而呢個開價$42既街坊雙拼飯價錢略高,雖然質素的確好一點,但如果價錢可以回落番$30附近,相信一定更客似雲來。…Read More
