相信許多人都知道荃灣吃雞煲有一家是很出名的,有天在朋友口中得知還有另一家好評甚高的,就是這家炎鍋堂,勇於嘗試的我當然要去品嚐品嚐。這邊一條街全是食市,我去的是晚市時間,非常熱鬧。進到店內看到非常多食物的圖片貼在牆上,單是牛類已經有十多種選擇,來看店家對用料非常講究。有電視送飯是常識吧,除了牛肉外還有其他菜式,熟食/打邊爐配料都有,還有看得出非常整潔,牆上沒半點油積,通風系統亦做得很足。每天的廚師推介會寫在板上,留意到椰皇10蚊個,與百佳的價錢一樣,相當抵飲!!我們懶得太細緻選擇,直接點了香焱一品麻辣雞鍋+小拼盤,再另加其他想吃的小菜和肉類。雞鍋外形特別,外圍有一塊目測大約有一隻手掌闊的燒烤板。是不黏鍋的質地,清洗得很乾淨,像全新一樣~雞鍋是放置在中間,這樣就可以一吃3味了!開始時先吃雞鍋,為免愈吃愈辣,我選了少辣少麻,把香菜與雞拌勻,焗大約1~2分鐘便可以開動了!雞件多肉少骨,麻辣很野味,相信吃得辣的話把味道加強應該更爽!邊吃雞鍋邊先把烤板先準備一下,不用另外加油,因為我點點了西班牙黑豚腩肉,豚肉的油份很香,留來燒一會的牛肉更有風味!由於腩肉相對比較油膩,我會包生菜加調味醬一起吃,生菜新鮮爽脆,加上腩肉油甘香,感覺好有韓燒風味。店內有3款不同的調味鹽,我特別愛蒙古鹽口味,很像某些串燒店會用的調味料,最野味之選!再來就是主打牛的部份,燒的話會比較香口,厚切日本A5肉眼和牛在剛剛的的豬油上香煎大約10秒已非常足夠,油香令牛肉煎得更增添一份焦脆感。 喜歡的話可以不用燒太熟,5成左右剛好,看出一點嫩粉色的就可以了。肥瘦勻稱,看得出肥糕的紋路,咬下去完全沒有一絲牛根,每口都是嫩嫩的牛肉!最好吃的就是這道日本飛驒牛,不是每處都能吃到,剛好老闆說今天進貨才有幸相遇,比起和牛更加軟綿的肉質,能形容成溶化在口中的牛肉,實在是必吃之選! 厚切極級黑牛小排也絕非等閒之輩,雖然沒有前者兩款牛那麼強大,但牛味重,肉質嫩,同樣是一流之作!價錢比較化算,絕對抵食~還有法國鵝肝亦是最吸引我的,從來沒有自己煎過鵝肝。一邊煎一邊看著鵝肝油溢出,有總莫名的興奮~配上多士吸吸多餘油份,同樣亦品嚐其油份的甘香,鵝肝外層焦脆,裡面是溶化的鵝肝醬似的,好滿足的滋味!還點了海鮮小拼盤,桶蠔吸了雞鍋的麻辣味特別好吃~這道手工脆豆腐很多地方都可以找到,但這家是我吃過最好味的,外層的脆漿薄薄一層卻十分鬆脆,包覆著入口即溶的豆腐,香蒜+椒鹽味很足,加上價錢實惠,鐵定要吃!燒魂豬頸肉是最後一道菜,可以包在菜中吃,或是配飯真的一流,有點微微的煙燻味~試過這裡的牛肉後回味至今,一鍋三吃滿足晒全家人既要求,要香口有香口,要嫩滑有嫩滑,招呼周到上菜又快,食物質料要求高,絕唔會為塞飽肚而吃的一餐,想不到會在荃灣找到這家講究味美的食店~!…Read More

收到荃灣友通報,有間雞煲冒起咗,忍唔住要去試一試水先朋友太了解我喇,竟然幫我訂定位,唔駛我排隊等,去到直入就得喇室內嘅環境都算唔錯原來呢度唔只雞煲噤簡單,鍋邊仲有燒烤位,見店員仲有俾埋啲醬我地點嚟食添!叫咗個招牌香焱一品麻辣雞鍋,第一次食親野,試住水溫要小辣先!原來小辣都辣到噴火真係好彩之後仲要「畢」起啲辣椒同八角先得!細細炒起嚟聞到都攻鼻呀,食落雖然辣到紅都面晒,都好鬼過癮如果雞肉再滑啲就完美喇 不過因為太辣喇,所以今次打邊爐叫唔到蔬菜類喇,如果唔係就會辣到顛!朋友話識食緊係要食日本飛驒牛喎!雖然未食過,但講到噤,點都要叫一叫嘅!飛驒牛好薄身加上火力夠,好燒幾燒就食得比較起點醬包生菜,我更鐘意原味!夠味同有夠「稔」呢個厚切極級黑牛小排不得了!最鐘意燒到半熟,啲肉仲係粉紅個時,好嫩口,油又香!真係燒到唔停手燒牛又點少得上級牛舌呀?薄切嘅牛舌真係輕輕「辣一辣」就食得喇,爽口又香口 唔鐘意叫丸而愛叫手工鮮蝦滑,一滑兩食,煎又得,淥又得!煎到微「濃」,當蝦餅噤食!蝦滑好彈牙,又有啲蟹子「卜卜」聲打邊爐仲叫咗日本廣島蠔,鮮味又大隻!小小腥味都無鮮蝦水餃,夠大隻!皮薄啲就仲好!鹽酥鮮魷,真係一個亮點!炸粉薄,炸得惹味!鮮鮮又唔會太老!今餐食到飽一飽要捧住個肚走呀…Read More
