經朋友介紹下,來到了這間剛重新裝修的香港醫學會 - 中環會所,品嚐過後,整體感覺非常不錯。首先來的是【潮式凍馬友】,每件馬友切成四四正正,小巧精緻,魚肉富含油香,還於表面放上普寧豆醬及黑魚籽,令味道變得非常鮮美。接著是香脆的【鵝肝花枝球】,足有嬰兒拳頭的大小,炸得外面金黃香脆,內裡則是流心的鵝肝,油香滿溢,蘸上黑松露醬後,尤其好吃。喝上一口【爵士湯】後,即被那濃香甜美的瓜香所俘虜,細問之下,原來是將半個蜜瓜與其他材料燉煮,再將另一半打汁撞入湯中,令湯中充滿果香濃郁而鮮甜的味道,很有特色。其他小菜如【龍舟方脷球】、【三色煎豚肉餅】和【麻婆豆腐拼琵琶豆腐】,都巧妙地融合了行政總廚周師傅的創意,不但保留了傳統的風味,還令口味變得更為豐富。其中尤其喜歡三色煎豚肉餅,在豚肉餅內分別加入芫茜、南瓜及墨魚,做出不同風味的美味來,還以生菜片包來吃,實在令人驚喜 。最後的重頭戲是【芝麻鹽焗雞】,師傅用傳統手藝來製作,經過風乾、烤焗及1肉次淋油,做成皮薄肉嫩,充滿白芝麻獨特香氣的存在,實在出色。另外,【牛肝菌瓦罉炊香苗】也十分美味,口感軟糯帶菇香,令再飽也得吃多兩口。甜品時間,是苗子非常欣賞的【奶酥多士配白芝麻雪糕】,一冷一熱的配搭,別有風味,再加上奶酥多士甜而不膩,又外脆內軟,一口接一口,停不下來。總括來說,這裡的菜式既有傳統根基,又注入了創意元素,非常值得一試。也再次感謝朋友的推介,令苗子又發現了這個不錯的用餐地方。…Read More
