To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 隨著時日的流逝,秋天這樣奢侈的天氣漸漸在香港消失。事實叫人惋惜,但亦正因如此,我們更要把握機會享受秋天為我們帶來的美好事物,例如是美味的蟹粉菜式!之前經過上海姥姥的分店,發現他們正推出期間限定的蟹粉菜式,而且價格相對宜人,便決定在這天下班後與女友來一探究竟。【一品海膽蟹粉拌麵】是次用餐的頭號目標,絕非這道海膽蟹粉拌麵莫屬。一道拌麵同時有著海膽和蟹粉兩款珍味,極為吸引。在質素方面,海膽的色澤金黃,形狀也相當完整,吃下去味道甚是鮮甜,份屬新鮮,而且用上大片的加拿大海膽,口感和味道便顯得更為突出。另外,蟹粉的份量也不少,而味道也十分咸香鮮味,兩者與微硬的麵條混和在一起,平衡取得剛好,大讚!【黑醋骨】黑醋骨的醬汁和肉骨比例適中,肉骨不會太過乾身,而醬汁又不會多到蓋過肉骨本身的味道。而且醬汁的酸甜度恰到好處,配搭口感微脆的肉骨,讓人越吃越多,越吃越滋味。【奶油津白】奶油津白的味道清甜,而且一點也不會油膩,雖算不上特別出色,但在吃過較飽滯的蟹粉拌麵和較濃味的黑醋骨,來一道中和一下正好適合。【奶黃南瓜餅】奶黃南瓜餅的賣相精緻可愛,外皮應該加入了南瓜蓉做成,但嚐下去南瓜味卻不明顯,唯口感煙煙韌韌的,十分可口。蒸熱後的奶黃呈半流心狀態,甜而不膩。【蘆薈桂花丸子蜜】整道甜品的份量十足,一整碗都是蘆薈和丸子。而丸子蜜的味道入口清甜,桂花的香氣更讓人有一種特別舒適的感覺。即使多吃幾口感覺甜了一點,還是叫人忍不住大口大口地吃。【鮮檸香薑蜜】味道以檸檬和蜜糖為主,薑味較輕,是以三者配搭得宜,特別適合在街上抵受寒風後,喝一杯來暖一暖身子。比起薑味濃烈的選擇,我更愛這樣的配搭。餐廳的絕大部份食物,均以較平民的價錢提供,當中以期間限定的海膽蟹粉拌麵、甜品和飲品最為突出。然而,食物的質素卻並沒有因此而變得馬虎。一向甚少踏足大型連鎖式餐廳享用晚餐的我們,是夜嘗到了不一樣的驚喜。證明我們只要願意用心發掘,定會找到民間的美食。…Read More

秋風起,又到食大閘蟹的季節。有聞【上海姥姥】的蟹粉小籠包甚有名氣,放工相約好友三五成群到西環【上海姥姥】食個飽。在西環鐵路站B出口直望就會見到餐廳,它的外牆比想像中摩登,灰色的牆身配上大大的玻璃牆。入內見到有一曲尺形的Bar枱,餐廳周圍用上掛燈大燈飾,時尚的裝潢有別於平時見到的上海餐館。途中見到有外籍人仕在用餐。Bar枱對望玻璃窗櫥可以見到廚房內的情況。有幸的話可以一覽師傅的表演,外國人應該比較喜歡坐Bar枱吧,可以一睹中國式廚子做菜的光景。我們一行幾人坐下便開始點菜,席上有公筷提供,服務體貼。頭盤先來兩個姥姥精選冷拼,每個拼盤可任選三樣頭盤。比起點全份,精選冷盤可以點多幾款,每樣試少少,可以一次過滿足多人的願望而又不怕從頭盤起就撐飽。當中以這個醉雞最特別,酒味香濃,酒香滲入雞肉中,雞肉嫩滑且酒香醉人。這個水晶肴肉起初我是比較抗拒,因為看似肥膩,但出奇的是食落清爽,完全沒有油膩感,肉淡淡的鹹香味跟湯糕甚為相配。香煎素鵝中夾有冬菇和木耳,在食香脆的素鵝中又有冬菇軟軟的質感,十分過癮。上海菜必食海蜇。海蜇爽口彈牙,晶瑩通透,麻香味十足,也挺不錯的選擇。四喜烤麩甜甜酸酸,烤麩吸收了汁醬,入口香鬆。食完頭盤想喝點什麼,便點了杯雪梨紅棗茶,養生美顏。雪梨味清香,紅棗味濃,甜度適中。招牌小籠包一籠四件,受喜迎程度甚高,一上枱就立即給大家消滅掉,我也不客氣立即給自己夾一顆。它皮薄餡靚,包口是好標準的22摺,咬一口熱騰騰的湯汁一湧而上,肉汁鮮甜味美,沖激著我的味蕾。有別放平時食的薄身蔥油餅,這個是呈水泡狀,金黃色的外皮炸到鬆脆可口,內有香蔥,鬆化程度給它一個滿分。但要襯熱食,因為冷掉外皮會軟掉。原本一籠四件的特上蟹粉小籠包,又是一上枱就給人搶去一個,太搶手了吧!皮薄到透著淡淡的蟹粉黃色,湯汁在皮下躍躍破出,看著就已經令人垂涎慾滴。職員解說同樣是正宗的22摺包法,如此小小的麵粉皮可摺出22摺,廚子技藝高超。小心夾起包子,皮雖然薄薄的,但夾起也不穿底,韌道十足。吃下餡料肉鮮甜美,蟹粉的甘香一湧而上,必食之選。席上有人提議點個黃金蝦球,我心生暗喜,因為在上海菜中我最愛這個了。舖滿黃黃鹹蛋黃的蝦球,外表已經十分吸引,食落內涵比外表更出色。蝦肉嫩滑鮮甜,爽口彈牙,蛋黃甘香。再來一個黑醋亂。啡色有光澤的外表下是嫩滑肉質,肉感豐富,味道甜甜酸酸,甚為開胃,但因為味道較濃,如果配上白飯麵食更好。重點登場,珍貴的一品海膽蟹粉拌麵。大大個俱中國特色的瓷碗上盛著份量還蠻多的麵,上有非常多啡黃色的蟹粉,和兩舊大大舊的海膽。海膽甘香,甜度十足,它色澤鮮黃而非橙紅,所以應讓不是馬糞海膽,忘了問職員來自那裡,不過算吧,我反正會再光顧這個,到時再問。蟹粉鹹香十足,連著肥腴的海膽一併食,人間美食是也。奶油津白視上海常吃菜式,我最喜歡它那鹹鹹的金華火腿粒,伴菜食一流,如果湯汁可再更creamy一點會更吸引。之後我們又點了一個麵食,師傅即席表演拉麵,見他迅間把大大舊的粉團不停重覆拉摺做成幼幼的麵條,不得不佩服得五體投地。製成品出來了,香鬆的排骨配上麵,十分吸引。麵湯頭清澈,但出奇地味道滿滿,麵身有咬勁,放湯一段時間都沒有軟掉。排骨肉厚嫩滑,外層香脆可口,裡面有黃色的粉醬起初我以為是咖哩,原來是香茅來的,但食落都有少許似咖哩呢。姥姥家鄉粗炒十分大的一碟,夠兩人份,麵炒得入味,鹹度適中,我期望肉絲份量會多點,但味道是不錯。可惜我最近有點實火,不能吃炒的東西,吃兩口就止步了。最後來吃個甜點才完滿結束。蘆薈桂花丸子蜜,蘆薈粒清爽,桂花糖水好清甜!濃濃桂花香我最愛了。丸子又夠咬口。奶黃南瓜餅一籠三件,橙黃色的外皮晶瑩有光澤,咬下煙韌,重點是裡面的奶黃,香濃的蛋黃香令人一食上癮。餐牌上還有大量菜式,可恨自己食量有限。當晚我們一行幾人都滿足而回,要吃上海菜【上海姥姥】是不錯選擇。…Read More
