The taste of freshness from the crab is absorbed into the glutinous rice, making the glutinous rice not as heavy as it usually is. Best eaten during winter because glutinous rice is said to be very warming for the body.
Ingredient and Portion
Glutinous rice 650g
soaked driend mushrooms 5pcs
bamboo shoots 1pc
chinese preserved sausages 3pcs
chinese preserved meat 120g
soaked dried shrimps 1/2tbsp
scallions 5 stalks
meat crab 2pcs, or use hairy crabs if desired
Chicken cube 1 pc combined with 4 cups water
Seasoning
sugar 1tsp
oil 2tbsp
salt 3/4tsp
pepper 1/4tsp

Seasonings for rice:
salt 1/2tsp
light soya sauce 1tsp
Method
1.Wash glutinous rice,then soak glutinous rice in water combined with chicken cube for 2 hours. Drain well, then cook for about 30 minutes.
2.Cut mushroom, bamboo shoots, preserved sausages and meat into dices. Dice also scallions and dried shrimps.
3.Heat oil, fry scallions, preserved vegetables, meat, mushrooms, bamboo shoots and dried shrimps until fragrant, the add in seasonings and stir well. Put in steamed glutinous rice and fry well, add in salt and light soya sauce and stir until combined evenly, and and place in deep bowl.
4.Remove cover of crab, remove internal organs and wash clean. Cut into 4 pcs each, and place on top of glutinous rice. Place the whole of the bowl over boiling water and stea, for about 15 minutes.
Tips
Glutinous rice can be soaked one night ahead.
