Mooncakes are Chinese pastry traditionally eaten during the Mid-Autumn Festival in Chinese community. People usually enjoy it with a cup of Chinese tea.

Ingredient and Portion
(120 piece)
Pastry Ingredients:
Plain flour 600g
Thick sugar syrup 380g
Lye water 6ml
Oil 245ml

Fillings Ingredients:
Salted egg yolk 1piece(10g)
Lotus seed paste 1 piece(20g)
Mooncake pastry 10g
Method
1. Mix the plain flour, thick sugar syrup, lye water and oil into a dough.
2. Chop up the lotus seed paste into small pieces and then put the salted egg yolk into small cube of lotus seed paste.
3. Roll out the dough and separate it into small portions. Flatten the dough and wrap up one portion of fillings (the lotus seed paste and salted egg yolk) in the center. Set aside.
4. Place the filled packet in the mold, gently pressing to fit into mooncake shape. Invert and remove the mold.
5. Put the mooncake into oven. Bake 5 minutes at 250degrees centigrade. Take out and brush the egg yolk on the surface of the mooncake. Put back into oven and bake 5 minutes more at 190 degrees centigrade until in golden brown. Let cool before serving.
Tips
月餅出爐後餅皮會較為脆身,想月餅皮變腍有如在街發售的月餅,出爐後要等兩天待月餅「回油」。

souling 我的月餅剛烤出來時皮很脆的, 但過了1天皮回油變得很軟, 可是太軟! 軟得咬下去時像泥一般! 為何會這樣呢? 原因會否是烤好後餅放得不夠涼便封入盒子呢? 有沒有方法可補救呢? 謝謝!
