We need 2 to 4 weeks booking in advance if we wish to dine at 8 1/2 Otto Mezzo Bombana in Hong Kong, but not in Macau (by luck) during this Easter holiday.Chef Riccardo specially made a 5 courses vegetarian menu for us which was amazingly delicious! From the gorgeous presentation of each dish to gustatory delights! The garden salad seems like a simple plate of appetiser yet by using fresh ingredients and adding salt, lemon and olive oil, we could taste "Spring" on each bite, simply mesmerising.

This is most probably the best tomato salad we've ever tasted so far. Chef also brilliantly turned a morel mushroom dish into a savory meaty work of art.

And thank you to excellent customer service team! 👏👏👏Marino the GM who welcome each guest like his own house guest, Nancy Wang the restaurant manager who has so much energy! 一行七人到這裡午餐,可以因為人多的關係,所以早幾天按餐廳要求付了 $2000 訂金。Cocktail 叫了 Apple Mint Cooler ,淡淡青蘋果夾著點薄荷香,好清新。首先來了餐前小食及麵包籃,麵包微暖又鬆軟,跟著是煎帶子,生熟剛好,皇帝蟹意粉,意粉帶點麵包香,主菜是和牛五成熟,煎得外脆但內裡肉質入口即溶,十分出色,甜品是榛子卷,榛子味濃。最後來了杯 expresso double ,香濃淳口,奉送小甜點的檸檬小餅好清新、士多啤梨白朱古力撻也不賴。

The crab starter was way too creamy with the crab over cooked with no freshness at all. People here are arrogant and not helpful at all. Did not finish most of the dishes, not because we were full, but because the dishes were disappointing. Raised the concerns to them with no response from the kitchen or chef - aren’t they supposed to come to at least listen? The best part of the dinner...olive oil...

今個復活節假安排兩日一夜,主題為食之短遊。大約一至兩星期前網上預訂,方便快捷可靠。出發前一天餐廳打來確認預訂,貼心。是日晚上八點,在 Galaxy 找了一會才找到餐廳。原來 Galaxy 已擴建了很多新店鋪。來到門口,比想像中平實,沒有香港的奢華。餐廳面積不大,是晚不爆場,感覺舒服良好。服務一流,侍應細心和醒目。食物質素亦非常滿意。這次我們沒有叫 degustation menu,單點兩個 pasta 和一個藍龍蝦主菜。餐廳最後亦送上免費甜點。圓滿的一個晚上,就此結束,我兩口子不亦樂乎。下次再到澳門,定必回去。

I have dined at the 8 1/2 Hong Kong before and therefore, prior to going, I very much looked forward to experiencing the Macau venue. We opted for the a la carte menu instead of the set menu. Of the two complimentary dishes provided before or appetizer, I really enjoyed the asparagus parfait. 平日的中午,餐廳食客不算多,walk-in 也沒問題。當然,除非像我這樣事出突然,來這等高級餐廳,預約也是一種禮儀。也要慶幸當日穿著平民裝而未被拒進場;不過聽說澳門的高級餐廳總是寬女士而對男士要求更高,如果大家打算帶另一半去吃,最好也留意 dress code。

氣派,由進門一刻感受到。雖然甜魔媽媽是當日第一位食客(之後更有幸包場半小時!!),場內座位亦一早安排好,但也先被領到入口位的 Lounge 先就坐。其實這樣也好,可以通過別致的吊飾,以特別角度拍下餐廳優美的環境以及氣質的裝潢~

這就是當日我用餐時的景致,很美!而場內多位侍應(外藉為主)不但樣貌姣好,笑容可掬,又宛如懂得讀心術並隱身術,用餐時他們會自動「隱身」讓食客看不見;但一有需要手都未揚,他們又會細心出現,服務水準極讚!事實上,甜魔媽媽點菜也是參考他們意見~

當然,元兇之一是先上的麵包籃。籃中三款麵包及兩款脆餅,水準都嚴重超班,當點上香醇的橄欖油及意大利黑醋,是近年吃過最美味的麵包籃,印象中唯有 Robuchon 可以媲美。當朝沒吃早餐的我,用了超大的念力,才令自已每款只吃一個就停下手來!

無論中湯西湯,我都喜歡熱的,稍為熨口更好,所以馬上趕緊喝:湯的熱力令海鮮變到七成熟,鮮嫩滑溜的質感很讚;但更妙還是那質感輕薄、鹹味不重又沒多少忌廉味的海鮮湯,非常清澈又鮮甜,純美有如天生麗質、不施脂粉的青春少艾!

吃完主菜忍不住對侍者講,我很飽了,需要20分鐘休息一下。她爽快的答好後,又細心追問是否需要提早將咖啡/茶奉上,以助消化,不過那刻我連飲品都飲不下。其實原因之一是前一晚才吃完 buffet,消化力較差,但另一方面這裡的午餐實在很足量!男士來也不怕吃不飽。

廿分鐘過去,侍者笑問我是否可上甜品,肯首後店方才將這 "Latte" & Strawberry 奉上。其實按常規我應該選 Chocolate Variations,不過我相信侍者的推介,而且這雪糕、鮮莓及輕忌廉組合的甜點,明顯較為清新。成品也很美,味道雖沒前三道菜的驚艷,但也不錯我收貨了。

餐飲我選了 Mocha,以店方標誌的紅杯呈上,未喝先惹好感。雖然一呷之下,朱古力咖啡香氣與甜度均較低,不是我最愛的版本,但勝在味道醇厚,亦特別適合這天吃太飽的胃口。

這兒裝潢頗華麗,空間感十足,也想不到兩人能夠坐四人枱,跟一般意大利或法國餐廳一樣他們都有提供午市3-4 course Lunch Set,價錢約MOP380-MOP520,要注意一點Lunch Set並沒有包括甜品,所以如要吃甜品需要加MOP80,餐牌雖有列明但筆者認為可以做得更好。

到餐湯環節也是有兩款餐湯領選擇,對另外一款清湯沒太大興趣,既然用上店舖名稱來作餐湯名,那應該有一點的招牌保證味道,就來一個海鮮湯 (8½ Seafood Soup Shellfish Fresh Herbs “Trombetta" Zucchini),這一個海鮮湯用上了不同的貝殼類堆砌而成,職員先把食材如蜆肉和帶子等放在碗上,然後灌上海鮮湯,海鮮湯味道是有一點像龍蝦湯,帶絲毫酒味,味道清中帶甜並不算太濃烈,食材組合簡單得多非常豐富,不會令食客失望。

因其中一個餐有多一個意粉類,其實兩款選擇也是差不多,當然就是看名字吧,當然要吃較名貴的一款-龍蝦意粉 (Homemade Chimaera Spaghetti Lobster Seafood Jus, Citrus)。意粉用上了番茄醬做,由於經烹調筆者是會吃的,醬汁味道很濃,像是自家製,龍蝦肉份量不少肉質夠滑,最有趣的是意粉,眼看跟平常的一樣,但入口覺得像吃正方形形狀的意粉,是有一點古怪,意粉質雖然還算彈牙,但同時口感有一點過硬,整體筆者認為不需要加這個意粉,除非下一次的意粉是Carbonara。

進入Main Course又有機會同時吃過兩款,首先是筆者的和牛紅酒汁配薯蓉 (Wagyu Short Rib Plums Red Wine Sauce Whipped Potato),雖然文字上寫是Short Rib,但餐廳預先已把骨除去,所以大家吃到得都是和牛的肉,和牛肉質非常腍,肋骨雖是最瘦得部分但也帶了一點的脂肪,煎得很入味,唯一不知道的是否因為紅酒汁的關係,和牛味道是有一點偏鹹,令和牛扣了一點的分數,但薯蓉真的非常好吃,一來夠細嫩,吃起來夠滑夠Creamy,雖然有一點膩,但筆者是絕不介意多來好幾份。

第二款Main Course為金頭鯛青瓜蓉配時蔬(Golden Bream Trombetta Zucchini Puree, Spring Vegetables),筆者認為這一個Main Course比和牛的有過之而無不及。餐廳把金頭鯛煎好,再配上大量的蔥花,非常香口,金頭鯛帶上一點的魚皮,夠原汁原味,肉質十分新鮮嫩滑,配上蔥花更能帶出它得獨特鮮味,豐富了不少口感變得不單純,青瓜蓉也不過不失,筆者覺得兩款Main Course不相伯仲,質素很不錯。

來到甜品環節,其實筆者選錯了,應該選Fine Cheese Selection,卻選了這一款朱古力雜薈Chocolate Variations,這一款朱古力雜薈非常大堆頭,有筆者最愛的慕絲、有朱古力脆片,朱古力雪糕及朱古力雪葩,整體甜品不太甜且朱古力味味道濃郁,而且像把不同冷熱程度的朱古力放在一起令食客感受不同的溫感,除此之外甜品還送上三款的甜點,有棉花糖,果仁朱古力及葡萄粒,個人比較一般特別是棉花糖,味道甚至有點突兀接受不了。

最後當然要來一杯咖啡作結,作為這種高級的西餐廳來說,這一杯咖啡可說是一絕,它比平常的咖啡來得十分濃郁,令筆者喜出望外,不知餐廳用的是那種咖啡豆呢?真很少喝到這樣的咖啡。

餐廳總算沒有令筆者失望,但也沒有遠超期望的感覺,可能因為名氣實在太高所致,它是好吃無容置疑,但相對Tasting Room By Galliot那種一嗚驚人,這裡顯得高貴隆重,傳統和有歷史。

另一個頭盤是 一顆來自日本九州既旦煮成溫泉旦配上伊比利亞火腿,水牛芝士,小小的蕃茄,及一片烘脆了既麵包,先吃一口濃郁既芝士加上香濃旦味既旦汁, 極上滋味, 火腿跟脆包沾上旦汁同樣美味,而最平凡的小蕃茄吃下去原來不平凡,吃著是香甜的,茄味濃濃的. 不得不佩服廚師的選材和心思.

湯方面我們也點了同一款的8 1/2 Seafood Soup,這個Seafood soup絶對值得一提.

隨後waitress拿了一壺熱騰騰的海鮮清湯倒進盤裹,用湯的高溫把龍蝦灼熟,真是很讚!! 這個seafood soup看上去沒有很濃郁的感覺,相反看上去是淡淡的,但味道卻很鮮甜,相信是用了很多lobster 去煮成的,味道真的很突出,滲出淡淡的甜,是真海鮮湯的鮮甜,吃一口湯中的龍蝦, 龍蝦肉給湯焯到剛剛熟, 所以肉質很爽而且鮮,真是十分欣賞!

高潮來了,我們點了一份Main Course 和一份Pasta,
Main course我們選了Wagyu Shoulder Cut和牛肩肉,配烤蔬菜(薯仔,蘆筍,紅蔥頭及車厘茄).

點了五成熟的M9級和牛,外層煎得有點脆所以特別香口. 內裹的肉質十分鮮嫩,而且很juicy,濃濃既肉汁,均勻的油脂這就是M9了,真是一試難忘!

另外的Pasta,我們選了Homemade Chitarra Spaghetti 配上龍蝦肉及以龍蝦頭熬煮的醬汁和柑橘. 聽聞這款意大利粉的做法是將麵糰壓成長方形,再用類似結他弦缐的工具上壓出一條條既扁意粉,所以叫做Chitarra Spaghetti.

這個自家製的Spaghetti,麵條比平常在意大利餐廳吃的偏硬一點,但口感很煙韌,有回彈力. 而且每條意大利麵都均勻沾上香濃的醬汁,帶著龍蝦膏的甘香, 柑橘的清香只有淡淡,自然的融入醬汁,再配上鮮甜爽口的龍蝦肉,真是非一般的味道!!

之後就是女士們最愛的甜品時間了. 我們每個lunch set也加了$80MOP一人選了一份甜品.

先來的是Chocolate Variation,賣相很吸引!!! 這個朱古力甜品分別有朱古力mousse, sorbet, crumble同cremoso. 那個on top的薄片很香濃,我很喜歡. 另外就是那個朱古力sorbet,軟棉棉的口感,不太甜,mousse 非常幼滑,還有朱古力脆脆,整個甜品都是朱古力, 但是廚師用上了不同濃度, 不同口味的朱古力,不同質感的配合起來,令整個朱古力甜品不是同一個味道,好想再叫一份自私吃.

另外一個甜品點了Lattle & Starwberry,個人認為相比Chocolate Variation,這個甜品顯得不是太特別!! 但味道我還是喜歡的,因為我超愛吃berries的甜品.

那個latte ice cream的味道挺特別,如果味道再strong一點就更好了. 內裏有點新鮮的意大利小草莓和脆脆然後上面就是香濃的奶油,旁邊放了一塊小蛋糕.配上一起吃下去的口感挺特別的.

再接下來是餐廳送上的小甜品,有果汁啫喱糖,杏仁朱古力和杏桃味的棉花糖.

這款朱古力很香濃幼滑而且杏仁味很突出,個人比較喜歡. 另外那個杏桃味的棉花糖也很特別,入口質感很軟棉,味道酸甜很突出,和柚子味很相似.

我們點了一杯black coffee. 這個紅色咖啡杯很可愛,上面印有餐廳名和Lego. 這杯即磨的咖啡質素也很高,香濃幼滑,after tastes 很強,吃飽喝一杯black coffee簡直是享受!另一杯我們點了English breakfast Tea,茶包也太可愛了吧!頂部還有一片小樹葉,真的很精緻! 對於這一間餐廳午餐時段人均大約$600的價錢,可以享受這米芝蓮的美食, 筆者高度推薦.

揀這間餐廳,因為她的香港總店是「米芝蓮指南」中唯一一間在意大利境外的三星意大利餐廳,即使只是澳門分店,質素也應該有保證。在出發到澳門前的兩天,透過餐廳的官方網站訂座,果然是高級餐廳,既有電郵、也有手機短訊確認訂座。餐廳位於購物中心一樓的正中央位置,左右兩傍都是其他名牌時裝店鋪,如果不小心留意,很容易錯過。

踏入餐廳內,心底裡不禁「嘩」一聲,果然是高級餐廳的裝修風格。雖然不是金碧輝煌,但卻極有品味,將優雅及藝術結合在一起。靠近門口正中央的這一個酒吧,酒架用上了金光閃閃的雕通花鋼架,配上射燈,非常搶眼。

最令人驚喜的卻是靠向餐廳座位區的另一面。雖然是同一個金屬酒架,但放置了很多色彩斑斕的仿酒瓶玻璃擺設,在燈光的折射下,額外耀目……筆者馬上聯想到水都威尼斯的玻璃工藝品。

四款蔬菜皆是相當普通的農產品,味道並沒有太特別的地方,但卻顯示了米芝蓮星級餐廳廚師炮製這道菜式的心思:雖然材料簡單,卻願意花四倍時間去分別獨立烹調每款蔬菜。

M9和牛已經切件,每件皆呈現漂亮的粉紅色肉心,外圍表層則煎得焦香。為了達致這個效果,必定要先煎香原件和牛至五成熟,resting 收乾血水後,再將頭尾部分切走捨棄不用,只保留中間最嫩滑的一截,才能切成三件大小均一的和牛,將M9和牛的質素進一步發揮出來。

午市套餐尚有兩款主菜,分別為  amberjack(琥珀魚)及 artichoke(雅枝竹),皆不是我倆喜好;比較有點失望,竟然沒有餐廳馳名的自家每日新鮮制作意大利麵條。所以,從主餐牌選了 Chitarra Spaghetti (MOP380)。Chitarra 是意大利麵的其中一種款,名字來自製制作的用具,有點像一個結他的弦線音箱;制成之後的意大利麵表面帶有很多微細的孔洞及坑紋,掛汁效果特別理想。配襯意大利麵的食材為皇帝蟹腳,並已經去殼拆肉,最適合我們這一類鍾意食蟹、但又嫌麻煩、不喜歡拆蟹殼的懶人。

與處理海鮮湯的安排一樣,餐廳也為我們將這一碟麵條分成兩份,方便我們二人進食;更難得的是每一碟麵條都舖陳得非常漂亮,而且還差不多是一模一樣!麵條堆成一團放在碟子中央,上面放了很多拆成細絲的皇帝蟹肉,麵團周邊則擺放了切成細塊的皇帝蟹肉,賣相已經令人垂涎三尺。之後,還要看著侍應將一小瓶滾熱的海鮮醬汁淋在麵條表面,更加想馬上大快朵頤。

捲起一圈麵條,上面掛滿了鮮甜濃郁的海鮮醬汁,同時又黏附著一絲絲的蟹肉,實在是難以形容的好味道。皇帝蟹肉本身肉質固然鮮甜;自家即製的新鮮義大利麵條更加是與别不同,絕非坊間其他意大利餐廳所採用的預制麵條所能嫓美。食過「米芝蓮」星級意大利餐廳的意大利麵,才真正領略什麼叫做 al dente,這種不全熟的麵條煮法,原來一定要配合新鮮即製麵條,才能做到硬中帶軟,又兼有煙韌、回彈的複雜口感。

可以一次過品嚐四款不同甜度、可可濃度、質感的朱古力甜品,這個價錢並不過份。以中央的一抹 cremoso 最香濃、可可含量最高。左邊的 crumble 固名思義最香脆。中間的 mousse 最幼滑、甜度最高。右邊的 sorbet 最冰凍、最軟綿,質感介乎雪糕與 sorbet(雪芭)之間,始終不是水果,沒有果汁成份,很難造到 sorbet 的冰沙效果。但整道甜品仍然完全滿足了我倆作為朱古力迷的口腹之慾。

一款則在甜品餐牌選擇了 Modern Tiramisu (MOP150)。之前曾在某餐廳試過 Tiramisu Decompose,將 tiramisu 的主要材料以原貌呈現,雖有創意,但不用太講求技巧。這個 Modern Tiramisu 顛覆了傳統的制作方法之餘,又不失 Tiramisu 的精髓。

手指餅 Savoiardi(意大利文)浸透了咖啡酒,非常軟腍。單吃酒味很濃烈,若配合底層的咖啡奶凍則剛好中和。起初還以為奶凍層太薄,但原來廚師刻意經營。如果奶凍太厚,冰凍奶味會掩蓋咖啡酒香;現在則奶味、酒香平衡,恰到好處。Mascarpone 雪糕很軟滑,奶味不太明顯,更能突出Mascarpone cheese 的淡香。甜度剛好,並沒有過份甜膩。

Almond Chocolate 的杏仁香脆,完全沒有膱味,只有杏仁的獨有香氣。Apricot Mashmallow 甜度適中、質感軟綿,杏桃的酸甜味道也相當突出,如果沒有侍應簡介,還以為是柚子味。最喜歡的是酸甜平衡的 jelly drops,blood orange 的天然深橙紅色混和了 strawberry 的鮮紅色,形成這粒軟糖的吸引顏色,而且充滿了天然果汁的味道。

三款小糖果,三種截然不同的口味,全部自家制作,又用上天然材料,實在是對糖果愛好者的恩物,也為這頓午餐畫上完美句號。雖然今次只是輕嚐午餐,但已體驗到 Bombana 的創意,改天一定要到香港的「米芝蓮」三星【8 1/2 Otto e Mezzo Bombana】品嚐 Bombana 的心思。

我特別喜愛海鮮,所以挑了較清怡的 Marinated Scallop Capaccio 作頭盤。薄身的帶子不失鮮甜綿密的特質,當然魚子的馥香與鹹度,與及椰菜花檸檬菜泥的提味,將帶子的鮮味和清新的感覺更形突出。

特別一提魚子是來自意大利一個位於米蘭和威尼斯之間的小城市 Calvisano,每年以 Calvisano 品牌出產多於20吨的魚子,不會使用循環的魚缸水,反而會為鱘魚魚缸提供穩定的地下水,所以被注重食材的Umberto Bombana 看中,背後必定有原因的!

主角的鵝肝厚薄得宜,入口即感到其軟潤和濃香,油脂恰到好處,令人沒有過膩過的感覺。重點不單令人放在鵝肝上,所調配的醬汁亦郁香豐盈,原來是用了意大利種植的 Piedmont Hazelnut 烹調,與鵝肝非常匹配,我們更捨不得將滋味浪費,靈機一觸,馬上用麵包沾上,連醬汁也給吃光!

對於「8 ½ Bombana」手製意大利麵條的聲名已久聞多時,這次造訪當然不能錯過,因此額外點了一份 ''Nepolitan Ragu'' Pappardelle。餐廳非常細心,預先將麵條分成兩份,各以自製 Ricotta 芝士及蕃茄作點綴。

試了一口 Ricotta 芝士非常幼滑,充滿芝香,隨即將芝士與麵條伴勻。入口先是極為挺身、具豐富嚼感的麵條,與及濃郁豐香的蕃茄醬汁令人有著不能形容的驚喜,而和牛牛肉與及黑毛豬豬肉隨著醬汁送入嘴巴,在蕃茄汁重重包圍下,嫩滑又富彈性的肉質依然表露無遺!味道實在來得太美妙了,根本不會察覺澱粉質的存在!

我的主菜亦是意大利麵 — Fresh Chitarra Spaghetti。Chitarra 是結他的意思,也是意大利多款蛋麵條的一種,做好的麵團要放到仿似結他弦線的小木箱切開。

Chitarra 的質感很特別,有著如蕎麥麵的回彈力。醬汁不但濃香,且帶有突出的香草味道,配有帶子、龍蝦、小龍蝦和海鯛魚,每一款海鮮均新鮮、嫩彈及甜美,令人難以抗拒!

Veal Combination 是煎牛仔肉和燜煮牛臉頰的組合。牛仔肉沾上薄薄的麵包糠煎製,面層香脆,內層牛味濃郁;而牛臉頰則以紅酒浸煮八小時,香濃滋味的醬汁襯托著軟腍潤滑的牛面頰,兩者不同的烹調帶有著極端而不同的風格,老公和我同樣也較喜愛牛味濃郁的牛仔肉。

接近尾聲,「8 ½ Bombana」送上柚子味棉花糖、榛子提子朱古力和啫喱糖。這一系列的糖果對我來說也特別的甜,尤其是特別的柚子味棉花糖,口感軟滑、柚子香氣雖極之濃厚,不過甜度也同樣突出;在幼滑的朱古力裡,夾雜榛子和提子,為朱古力平添不少層次感;而果味自然、酸甜的啫喱糖是我最喜歡的!

自選了兩款甜品,首先是 Crispy Pear Tart,賣相相當反傳統,完全看不出梨子來!

其實梨子是大配角,記憶中只有兩至三塊切成三角形的,而主角卻是清香的梨子雪糕、每日大廚新鮮製作的檸檬味 Ricotta 芝士、香脆的榛子 Sables 和咖啡味道的慕絲。梨子粉絲或會有點點失望,不過多元化的配角們確實有著獨到之處,看您如何取捨!

入口薄薄的手指餅如海綿般吸收了濃郁的咖啡味,加上面層的咖啡奶凍和 Mascarpone 芝士雪糕,整體瀰漫著香濃無比的味兒!

雖然僅是午餐時段,到訪「8 ½ Bombana」可體驗到大師級的用餐環境、服務和食物質素,實在是難得的經歷。我們特別喜歡手製各款的意大利麵條、Ricotta Cheese 和醬汁的運用,滋味實在難忘,下回或會選擇晚餐時段造訪,期待到時可有更多難得的體驗。
