Summary: Consistently interesting food elegantly prepared. Focus on aged/cured/fermented food, but appealing dishes even if you’re not a fan of fermented vegetables or cured meats. Not the cheapest place, but the uniqueness (and taste!) of the food justifies it. I’ve been here 4 times now – 2x for lunch (this review is on lunch), 1x for Brunch, and 1x for a Wine Pairing Dinner. I’ve enjoyed every meal (least impressed by brunch, and most impressed by the Wine paired dinner), but I’ve avoided writing a review because still couldn’t get figure out how much I actually liked the restaurant. They change their menu constantly (I haven’t seen the same menu items more than once), and I’ve felt my experiences there have been a bit disjointed. The wine dinner was terrific but many of the wines we were supposed to taste were changed last minute, and I constantly had to check which wine course we were on. I also enjoyed brunch, but the food was a bit of a mixed bag (try it anyway), and not everyone loved their main course. For the price, which will run about HKD 300-400 per person for dinner, and around 200 for lunch, some consistency should be expected.

Today’s lunch:
Pate - was great but if you’ve tried a good pate you know what to expect

Tartine with Ricotta Cheese – so-called friend devoured the whole thing without letting me try, but she liked it

Sausage and Shrimp –a modest name for a delicious dish. Two giant shrimps cooked with spicy sausage on a bed of brilliant vegetable ragout. The ragout made the dish for me: tomatoes, eggplant and other earthy vegetables simmered down in olive oil, but still maintaining their flavour and veggieness. The shrimp and sausage soaked in what is essentially chunky veggie gravy you’d think would be too heavy, but was simply delicious.

Wagyu steak done two ways – grilled and braised. Friend said grilled was better (of course) but I tried the braised and was delicious if you like this style – meltingly soft and juicy.

I like 12000 Francs a lot. I want to love it but it’s like that almost-perfect movie with that one annoying scene you just can’t get past. I love their insane wine list, the fact that I never have to wait for a table, and that their dishes are consistently interesting and usually delicious. I hate that their service can be all over the place, that some dishes are just fine, and that I can’t be sure what I’ll get if I bring guests. In fact, one friend tried it without me and said it was one of the worst lunches he ever had at this price point.

Bottom line though, is that I LOVE fermented/cured/aged foods, so I have been secretly willing to give this place as many chances as it needed to impress me. After this last lunch, I think I can finally declare that even if the food and service can range from just fine to great, the inventiveness and execution of the dishes are a cut above the regular standard of mid-high range HK western food, and deserve to be tried.
