尾崎牛全牛lunch 焦點食評

夏天炎炎,正好和友人相約大飽口福-試試新餐廳, 為繁鎖的生活加一點甜。這家新餐廳在米芝蓮guide有介紹,而餐廳位於酒店內,門面十分沉穩低調,差點兒找不到。室內採型格黑色為主調,主要是bar 枱為主,另設有房間。午餐定位由$288-$980, $288是澳洲和牛丼,$328/$368則是4/5 course meal, 而$620或$980則供應尾崎牛。有聞尾崎牛全球每月只有三十頭供應,十分少有,而且肉質奇特,所以我們全部都選了中價的$620有尾崎牛的Marble set試試看。這Marble set 是一全牛宴,有六個courses連咖啡。Ozaki Beef tartar- (3/5)造型精緻,但份量很少,味道方面,very tasty !尤其配以三種不同的法式芥辣,既清爽又幾淸新。Double boiled beef soup(4/5)牛骨湯好鮮,用小杯盛着。這湯一點也不油膩,十分清而濃郁,用上牛前腿肉煲24小時,果然夠 鮮,正!Chawamushi (4/5)蒸旦很滑溜,如豆腐花一樣咁滑!這蒸旦用剛才的牛骨湯蒸旦,味道很鮮美,而表面上的海膽味道唔太突出,甜味唔強,但沒有腥味。Ozaki beef steak(5/5)尾崎牛真的好吃,油脂比一般和牛少,牛味濃但肉質沒有因為油脂少而韌,反而十分嫩滑。這近崎牛配上海鹽、黑椒汁或喜馬拉雅岩鹽,三款之中,配黑椒汁最為突出。既香口又唔搶了牛的味道,原來這醬汁是米芝蓮名廚小西充所創。可是份量真的很少,連三安士也沒有,沒法大朵口福。Japanese fried rice(4/5)炒飯很香,粒粒分明而不油膩,當中有醃菜同炒,配以漬物同食,簡單而味美。Japanese tea creme brûlée (4/5)這甜品是三款之中最出色的,既有綠茶香而旦十分滑,一如燉旦的質感。加上脆脆焦糖表面,既甜美又不會太甜膩,正!本想食一半留一半給honey, 但食下食下,自己ko哂了。Green tea icecream with red bean(3/5)這綠茶雪糕沒有特別,而紅豆也是standard 貨式。味道可以但不突出。yuzu sorbet(3/5)這是最light 的甜點,是自家製,味道很清新,幾適合炎炎夏曰。Cappincino (4/5)這cappuccino 好滑,泡泡輕身而幼滑,咖啡甘醇而濃香,奶同咖啡比例剛好,推介!總結: 味道十分不錯,服務一流,唯份量偏少未能𣈱快大飽口福,女仕吃,份量剛夠,但在座兩位男士也食唔飽想找下場再食。食品質數高,但性價比偏低,比星級餐廳pierre或Wagyu takumi 還要低。若果下次份量有所調正,或許會再試試。 繼續閱讀

I have been to this restaurant for lunch and dinner. There are set menus for lunch and also for dinner. For a first visit, I suggest you go for lunch as the sets are much cheaper. If you opt for the $368 set lunch, that will give you a good sample of what dinner will be like. Dinners are a lot more expensive. Around $1,600.Marble serves primarily beef dishes, but it also has chicken and seafood. The appetizers, soup, main courses are all very delicious.The price is high because of the quality of the ingredients. But if you want to treat yourself to a nice meal with good service, I suggest you go to Marbles. 繼續閱讀
