A wonderful experience with french fuison cuisine, Maison ES is a hidden gem that is located in the corner of Wan Chai, Hong Kong Island. After open the entrance door, the staffs broght me into the reserved seat with warmth welcoming. The decor was like a French mansion which is decorated in Art Nouveau style, composing antiques and botanical ornaments. Moving in the food and beverage, they are helpful and knowledgeable to introduce the lunch menus and contained with huge variety of cuisine I interested. Beginning with spot prawn, chef is skillful to merge with shrimps and scallops into umami flavour, emphasising harmony of ingredient. It is delightful to present an appetising texture whereas I never expected the taste of okra emulsion. Forward to the second plate, it is delightful for silver pomfret fillet to demonstrate the culinary skills in various flavours, sweet soy sauce, firefly squid, etc. Impressed in the tender mouthfeel of pomfret, Maison ES is successfully fascinated me either artistic sense or cuisine. Last but not least, the degustation menu included fluffy brioche and sourdough, but also rich flavours of beverage.
After serving dessert and sparkling tea, it is little bit disappointing for the panna cotta in lack of sweetness. It is matter for the food paring to represent the characteristics of ingredient. However, it didn’t perform well. Fortunately, Osmanthus Gold Oolong was a refreshment to save the narrative of degustation menu, featuring terroir and fizzy feel.
Overall, Maison ES did its endeavours on the warmth hospitality but also the excellence of culinary art. Encountering orient and occident, cuisine could be defined as innovative thoughts in the progress of cuisine.
