午膳於灣仔永華,當然要試試馳名竹升麵。一碟雲吞撈麵,要$65,其實幾貴。不過,計及當中有雲吞八粒及麵底量多,頓時覺得價錢合理了一點。雲吞蝦與肉的比例約一半半,口感比平時吃的實在,蝦夠鮮,調味OK。竹升麵麵質明顯比一般麵有嚼勁,人手手打出來的麵顯然不易模仿,質素是血汗換來的。

永華麵家 Wing Wah Noodle Shop, really needs no introduction. It is one of the last surviving old school Cantonese bamboo pole egg noodle shops in town. For Wanchai, I suppose this is as good as it gets. It certainly does not hurt that it has the endorsement of many media personality types (including Chua Lam, Craig Auyeung and many more lesser known folks), from the professional bloggers to the amateur foodies, to international visitors alike. Heck, this place is even Michelin recommended.

But certain segments of Hong Kong people are weird. Some latch on to tradition because they want to be rebelious (while some really do appreciate the committment to quality), and others forsake tradition in favor of quantity and value (while pursuing lesser quality inadvertenly). Or some just do not understand or appreciate the craft altogether.

Then there are these so called "won ton noodle soup" enthusiasts, who keep chasing the perfect won ton, only to be utterly disappointed. 

I will say this....I'm pretty sure Wing Wah's won ton noodle soup is not going to be my style.
And I probably would not recommend going here for that (and if you do end up enjoying it, more power to you).

But in reality there are many other noodle dishes you can truly enjoy here.

I think many have said it already, but if you really want to have a true taste and apprecation of the texture of the bamboo pole noodles here, lo mein (broth on the side) is really the way to go. Whether it is beef brisket, or the sweet/spicy/mildly sour pork strip noodles, or shui gow, or prawn roe. 

During my Dec 2013/Jan 2014 visit to Hong Kong, I have had the pleasure of visiting 4 noodle shops...Ho To Tai (Yuen Long), Mak An Kee (Wing Kut Street), Lau Sam Kee (Sham Shui Po) and Wing Wah. The conclusion is that each has their own strengths and weaknesses, so if some won ton expert were to do a tasting, he or she will be disappointed.
I will say that even at their worst, any one of these shops are far far far superior to anything in North America. It's amazing how people complain, yet don't appreciate the fact that those living overseas just simply do not have anything close.

You arrive and tell the cashier how many people. As always with prime real estate, sharing tables with strangers is going to be the norm, unless you have enough in your party to occupy all the chairs. If you are holding seats for a friend, they usually will leave you alone but it may be better to place an order anyway.

The noodle soup bowls are definitely on the smaller portion side, and with Wanchai real estate skyrocketing, the prices are not coming down anytime soon. In fact the prices are considered very high, almost catching up to Mak An Kee (Wing Kut Street) Central, and I thought HK$56 for a bowl of won ton noodles in California was ridiculous. With the cost of living increasing and people's salaries not keeping up with the rate of inflation, I totally sympathize. But if you choose to splurge, at least the lo mein portions are a lot bigger by default (they give you additional noodles, more than a noodle soup bowl's worth).
And if you are super hungry, I believe choosing wide egg noodles will not incur a surcharge (but check before you do so).

On every table is a pickled daikon jar. You don't see this in many noodle shops anymore (and definitely not overseas). Cubed crunchy vinegar (maybe a little sugar?) marinated turnip/daikon cubes with a little jalapeno/chili (very faint presence). The crunch factor, texture, and sour/sweet balance is out of this world. For me this stuff is gold and addicting.
It is said that these pickles were put in, not just to whet the appetite, but because of the alkali water in the noodles...and thus a little acid helps neutralize or counteract. Remember you acids and bases lessons from high school chemistry? :-)

Shui gow - the ones here seem to lack some bamboo shoot flavor, perhaps not quite as much pork fat. They are fairly decent but I much prefer the ones from Lau Sam Kee, which are by far more superior and tasty (perhaps even more umami from LSK's soup base). The broth here lacks dried tilefish flavor, and seems more like an animal carcass/bone/protein based stock? Could be wrong on that

Beef brisket - perhaps there is some inconsistency with this, but the one time I had a beef brisket noodle soup, was really really good. Nothing like rich braised/stewed brisket juices merging with the broth

Ja Jeung noodles - Selected the wide egg noodle option for lo mein, and I must say this was probably the best ja jeung meen in town (then again I only had Good Hope noodle's version which I did not enjoy as much). The addition of mushrooms was very interesting. Luckily the temperature of the meat sauce was just right. A very pleasurable bite down to cleaning up the entire plate. Definitely Cantonese pasta bolognese al dente!

Yes it was a little bit painful after paying the bill, but I really wonder...will Wing Wah still be around once the noodle master goes on permanent retirement? Doesn't really matter what the others say....this place is a historic culinary treasure. Quality may be inconsistent with different visits, but it is always an enjoyable stop and snack for me whenever I visit HK.

去灣仔, 一定係食永華吧?食完就知咩叫真正既雲吞麵.永遠都係好多人好多人, 永遠D人都係好專心咁食.等個麵出現之前, 就梗係食佢枱面既醃蘿白啦! 夠酸夠味夠醒胃.食雲吞麵主要3樣野. 湯+麵+雲吞.湯底, 唔洗講野, 又濃又甜! 食完係一定會飲晒佢!竹昇麵, 夠彈性, 無鹼水味, 一流!雲吞, 細細粒, 但包得好好, 皮薄, 餡正, 啖啖蝦肉, 好好味!係就係相對貴左D, 但絕對值得!

上班天, 由中環坐兩個站往灣仔跟老婆仔食lunch。入到去第一個感覺是一家50年老店, 卻沒有香港的傳統卡坐。叫了筋腩撈面、豬手撈面, 味道不錯, 但份量不多, 卻收65蚊一碗, 仲要冇o野飲, 實在有點過份。看見其他客人食的湯面, 份量少得驚人, 用來盛載的碗只比一個普通家用飯碗大一點, 卻收40多元。再看看餐牌, 飲品沒有跟餐(即係冇套餐), 一杯熱飲也要23元。這樣也算了, 其中兩個樓面, 態度極之囂張、不可一世!!我一坐下不夠一秒鐘, 個收銀兼樓面已很不客氣地, 命令我: "坐埋少少, 拍返入啲"。接著有一個國內客坐下, 問果個樓面有冇套餐, 點知佢唔知係聽唔明定係廢事答, 沒有回應個客, 只係用手指一指張餐牌中較平的湯面, 個國內客只好叫了碗混沌湯面。再過一會, 另一個樓面拿著碗混沌面, 問我有冇叫了混沌面, 我搖頭說不是, 接著坐在身邊既客人應了, 那男人卻責怪我: "明明有, 又搖頭!" 。簡直無理取鬧!幫襯佢, 不算好味得獨一無二, 卻收得咁貴, 仲要受佢氣, 貼錢買難受。港島區做撈面做得好的面店多的是, 大部份還比佢平20元一碗呢!以後也不會幫襯佢, 去中上環、銅鑼灣

每次看到食店的"隱閉"式門面,都會有點望而生畏,永華的茶色玻璃門也不例外,每次經過也看不到店內的情況。門外張貼的大小食評和介紹亦無提及食物價錢,心想麵店即使如何貴,總不能比高級餐廳或大酒樓更高昂吧﹗與友人膽粗粗走進去一試,還不過是茶餐廳或麵店格局。坐下細看餐牌,才知此店是1950年開業的,而且只此一家,絶無分店,內心頓時生出一份敬意,也慶幸自己踏出了這一步,沒被那道茶色玻璃門嚇怕了。雖然某些特色食品如竹笙和柚皮要售百多元一碟,但其他大路食品如雲吞麵只需$36一碗,不算太貴,當然份量不多,像麥奀的細細碗,雙拼則賣$55一碗,因為碗較大,麵的份量也較多。撈麵則是餸和麵的份量都最多,故此是$62一碟。如果胃口不算大,單吃一碗$36的雲吞麵便能嚐到永華的招牌食品,老實說以現時食材成本之高,已非"食水深"的價錢。再者在這裏可免費嚐到特製生醃酸蘿蔔,且絕非一般貨色,白蘿蔔完全沒苦澀味,既爽脆無渣,也清甜醒胃,辣度適中,作為餐前小吃或餐後消滯食品,均十分合適可口。主食方面,既然店子以雲吞竹昇麵起家,也聽聞這裏的炸醬麵很出色,就先嚐這裏的炸醬麵和淨雲吞。淨雲吞跟雲吞麵價錢相同,二人吃就保證不怕雲吞不夠

主食方面,既然店子以雲吞竹昇麵起家,也聽聞這裏的炸醬麵很出色,就先嚐這裏的炸醬麵和淨雲吞。淨雲吞跟雲吞麵價錢相同,二人吃就保證不怕雲吞不夠分了。由於炸醬麵的湯最先來,率先呷一口清湯,也不肯定是否如店子標榜的是以鯊魚骨熬製,但味道的確有魚湯的鮮味,加上湯是另上的,沒有任何肉或油在內,十分清純,反觀淨雲吞的湯免不了有一點油分,湯的魚香味也給雲吞皮和韮黃的味道蓋過了。說回炸醬麵的味道,雖然麵條外表倒跟橡筋有一點相似,吃起來很彈牙,硬度是有嚼勁的,並非未熟透那種硬度,對我來說口感很好,因我不喜歡吃腍腍毫無咬勁的麵,或許那就是竹昇麵和機製麵的分別吧﹗可惜炸醬用的豬肉硬硬的,即使有不少肥肉,吃起來還是又乾又"鞋",可說是浪費了本來不錯的醬汁和麵條。

雲吞是小巧的顆粒,蝦肉與豬肉比例均勻,有傳統大地魚的香味,但同樣用了肉質不佳的豬肉,咬了數下還是實實的,幸好牙齒還算強而有力,不然早就把豬肉吐出來了。

想不到牛筋腩麵倒給了我們一點驚喜,是唯一稱得上與竹昇麵條是天作之合的食品。最難忘的是第一口咬下牛筋時那豐盈的口感,入口滿咀是膠質,差點以為自己在吃花膠。過往吃過比較美味的牛筋大多只能說是煮得夠火喉,滑而腍,這裏嚐到的卻是截然不同的另一種美味感覺,想必是有其獨特的選料和烹調方法,才能做出如此膠質豐富的牛筋。

喜歡吃中式糖水的食客,也許會跟我一樣被餐牌上各式各樣的糖水吸引了。本想來一碗合桃露,可是看到紅荳沙標榜以舊陳皮作材料,心想嚐嚐這款最傳統而又最普通的糖水,回歸基本,也許更能了解廚子的功力。多年前就曾聽聞有名酒家的舊陳皮紅荳沙索價百多元一碗,關鍵正是那塊陳年果皮。這碗紅荳沙更像紅荳湯,一點紅荳也找不到,故此光亮如鏡面,但又不能說是用料不足,因為細嚐之下,不難發現紅荳已徹底溶掉了,整碗紅荳湯十分調和,亦沒有劣質果皮的苦澀味,是一碗佳作。

I gotta say I was a bit disapointed.  From the outside, the old school 招牌 that looks like it's been there since 1950 was what attracted me in.  Prices of course have to go up, but I was still kinda shocked at the 73 HKD paid for the combo wonton+pigs feet 撈麵.  At least the pickles are free right?  They write down the amount on the ticket right away, so that's what I saw before I got the food.  Onto the food.  The noodles are, like many other reviewers said, beyond chewy.  And I'm one that likes

The pig's feet was pretty good though.  Well cooked and all.  It's not bad, but I would not say it's the best.  For the money, I think I would be well served going to 麥文記 and getting a small teeny bowl of wonton noodles with a huge plate of pigs feet for a little bit more.  And the noodles don't have a hint of 鹼水味.  I might go back and try the other things, since considering the exhorbitant rent prices around there, the prices should be higher.  The lady was very annoying though, when she kept on asking me what I wanted to get when I told her I'm looking.  Then pretty much throughout my meal she was complaining loudly about one of her lazy coworkers.

今日蘿拔仔放假, 黎開灣仔交文件. 難得路過, 等唔切蘿拔妹就要去試一試呢間”永華麵家”, 話晒之前都心思思左好耐想食呢間開業悠久既面店, 佢既雲吞面我望穿秋水…今日點都要一嘗心願!一入鋪面, 環境整潔, 燈光略暗, 散發出一股老店先有既味道, 坐既唔係圓枱, 而係一張張長枱同卡位, 同一般茶餐廳無疑. 坐落呀姐即刻招呼我, 諗都唔洗諗就同阿姐講話要一碗雲吞面. 順手就打開枱面既醃蘿白樽, 夾出數塊醃蘿白準備品嘗. 醃蘿白醃得夠酸, 夠晒開胃.唔洗5分鐘, 雲吞面已經現身係我眼前! 細細碗但係香氣四溢! 第一啖試既唔係雲吞,唔係面,係個湯!因為實在太香喇! 一飲, 不得了! 湯底濃郁甘甜!大地魚既味道係我口裡面回甘, 我同隔離枱既一位女士食完既時候都差唔多飲晒咁濟! 再講佢個竹昇面, 非常有彈性, 而且一啲鹼水味都無. 雲吞粒粒紮實, 咬落去啖啖蝦肉, 食完我只可以話呢碗雲吞面係雲吞面界絕對無得輸!食完已經忍唔住同蘿拔妹滙報戰況, 準備下次一齊再黎試埋其他野食!

憂心了幾天而不知帶這位美國回來的朋友吃什麼, 什麼文華東方酒店、什麼美利堅、什麼什麼…….什麼也不必; 一句竹竿打造的麵條店………人家老遠回鄉而指定的食店, 那有不從的原因!!!! 只是60、70年代的室內裝修, 三碗雲吞麵, 果然名不虛傳 ; 麵條爽口彈滑柔韌感重 、大地鮮魚肉豬骨清湯底 、雲吞皮薄蝦及碎肉鮮甜 。遠方回來的朋友疑問了雲吞麵 “碗” 為何那麼小, 果然好問題!!!  廣州雲吞麵是也, 古代達官貴人的小吃而非正餐; 一口一啖的散尾雲吞, 那正是 “小” 原因。 再來一碟蝦子芥蘭, 芥蘭清甜蝦子濃郁; 更不失香港人的面子。

。遠方回來的朋友疑問了雲吞麵 “碗” 為何那麼小, 果然好問題!!!  廣州雲吞麵是也, 古代達官貴人的小吃而非正餐; 一口一啖的散尾雲吞, 那正是 “小” 原因。


再來一碟蝦子芥蘭, 芥蘭清甜蝦子濃郁; 更不失香港人的面子。

Please read the other reviews for expert opinions. I'm a relative n00b when it comes to wonton noodles, though I do love them dearly.The noodles here are toothsome and hearty. They don't overcook in the broth, and they have a good flavor. The broth was alright an the wontons were OK, but the noodles are the real star of the show here. The noodles here are toothsome and hearty. They don't overcook in the broth, and they have a good flavor. The broth was alright an the wontons were OK, but the noodles are the real star of the show here. A-

Of course, my favorite thing at wonton noodle shops is the beef brisket noodles. I don't know if this is true, but someone told me that 'brisket' is an incorrect translation, and that the meat is really from a different part of the cow. Looking at the picture, might it be skirt steak? Are there meat parts experts reading this?

Once again you get the great noodles. But you also get a nice, flavorful, beefy, fatty broth. What's more, this broth lends itself well to an amazing condiment that you find at these noodle shops. If anyone knows the name of the orangeish-brown spicy paste, please let me know. Personally, I prefer both the broth and the spice paste at Mak's (Mak's is significantly hotter), but this was still pretty good. B+

Yay! Vegetables. Far more than I can eat, of course, but nicely cooked and very tasty.

Overall, I thought the noodles here are the best of any such place I've been to. That's a top priority. Second priority is the broth, and I think I've had better elsewhere. The wontons and pieces of meat are just afterthoughts for me-- here, they were serviceable. A-

一直久聞大名,惜未有機會光顧,今日終於和老爹去拜會了。永華麵家是頗具性格的,名氣大,但全港僅此一間,絕無分店﹗永華麵家最教小妹欣賞的,是免費任食的餐前小吃醃蘿蔔粒,爽口酸甜醒胃,超正﹗據聞,不少食客更是為此而慕名前來光顧的。永華麵家的麵標榜是手打竹昇麵。一試,麵條確實沒有鹼水味,細長幼滑,確是銀絲全蛋麵,卻略嫌浸腍了,嚼勁不足。若論爽口彈性,小妹及老爹均覺得麥兆記的麵條更佳。鮮蝦水餃麵有三粒餡料十足的水餃,大件多餡薄皮,爽口的木耳絲混合原隻冷凍蝦及細碎肥瘦肉,鮮味和咬口十足。用蝦殼及大地魚等新鮮材料熬製的湯底加了大量的蝦籽、韭黃碎及蔥粒,鮮味十足,更添清香,讓人欲罷不能。鮮蝦雲吞麵有五小粒的的骰骰,豬肉與蝦並重,蝦鮮與肉香相輝映。一口一粒,略嫌不夠也。個人而言,小妹覺得水餃較雲吞出色也。永華麵家的另一特點就是有中式糖水供應。見鄰桌一人要了一碗具行氣活血、滋陰養顏的桑寄生蛋茶,我哋又受不了誘惑,要了一碗share。桑寄生蛋茶色澤深啡色,帶微微中藥味,幸味道甘甘的、易於入口。據聞此茶有消脂去滯的功效,最適合飲食肥膩、缺乏運動的小妹飲用了。八成熟的雞蛋也頗為入味,一人分一半,混合桑寄生茶同吃

Just so into the old HK style recently....I used to be a frequent customer here and re-visited this little old shop again today. I think more than 90% of my visits I ordered the same thing -- wonton noodle. Same. People may suspect it is paying too much for just a wonton noodle for $34, but you would soon be pleased by it from your first bite. The wonton is small and it's just right for a bite size. People may suspect it is paying too much for just a wonton noodle for $34, but you would soon be pleased by it from your first bite. The wonton is small and it's just right for a bite size. The pork, shirmp and fat are in right protion. 


Then, the star -- noodle. 
It's famous bamboodle, every bite you dont only appreciate the al dente but also the sweat and effort behind it. 
It's very different and dente in mouth from all other noodle shops out there. So, $34 worth it! 


Friend complained that it's 
too small, not enough for a man as a regular dinner. Yes i do agree with it and i think im paying more for the quality here instead of quantity. I'm fine for the portion anyway as i dont eat too mich at night. 

Note to you that the pickles is free and taste good too so dont miss it!

作為竹昇麵表表者,永華麵家的確吸引了一班擁躉,自己亦曾光顧了好一段日子,但及後覺得水準跌了,唯有慢慢減少。但始終心懷店內的醃蘿白,酸甜爽口又任食,真令人食指動;今次入去有點本末倒置的感覺,而事實上,雲吞麵比起之前的確回復了最佳水準,麵條爽身柔韌,鹼水味全無,雲吞金魚尾相當對辦,再一口口吃蘿白,真的暢快。

當我吃完一粒又一粒,吃得津津有味,搭檯的外國人,用廣東話問我這是甚麼?接下來,他有樣學樣,霎時間,面前的醃蘿蔔,成為兵家必爭之地。

雲吞呈小散尾,份量當然不大,餡料豬肉蝦肉均等,我最喜歡,不是說我不愛鮮蝦大過天的雲吞,只是有得選擇的話,我還是偏愛傳統的豬肉蝦肉五十五十。

雲吞湯味道清香,鮮甜,很柔和的感覺,沒有出現一些過鹹,或下了胡椒的一點辣味。

本地的廣東麵店,都會做炸醬麵,但風格不盡相同,簡單去拿三間麵店的炸醬麵作個比較,好旺角麵麵店,與永華,三間各有不同,好旺角濃甜得近似北方風味,麵麵店則較直接,用上余均益辣醬已是皇道。。

永華的炸醬,肉絲與菇絲的配搭得宜,辣度是循序漸進式,越吃越辣,餘韻悠長。也沒有很多地方,保留著大碌竹壓麵的傳統了,有得吃,就要吃,早晚會絕種的手藝,我們只能及時行樂。

麵條不及麥字頭的幼身,質感煙韌,爽滑,彈牙,不含鹼水味,掛滿炸醬的香辣,不消一會吃得碟底見天。
