四川總廚主理 傳統手藝煮出四川六味
極開揚落地玻璃維港海景,主打地道四川菜。曾在四川任總廚的顧師傅,入廚13 年深諳用辣之道,並堅持傳統四川煮法,不折不扣以繁複工序煮出多款四川名菜。首本名菜「水煮魚」以多種香料、辣椒、花椒和陳年郫縣豆瓣醬,將新鮮桂魚煮出麻、辣、燙、香、鮮、嫩六味。同場還有川式海鮮,以講究刀功、調味、火喉逼出海鮮鮮味,難得一遇食到海鮮的鮮甜麻醒滋味。顧師傳亦會不時推出新菜式,將新舊川菜改良煮出新味道。

Taste of Chuan and Yue opened late in 2019 and as the name suggests offers both Sichuan and Cantonese (Guangdong) dishes, a fairly common combination in the city as of late. As far as the Sichuan dishes are concerned, they’re pretty up to standard and would qualify as a fine dining version of an otherwise very down-to-earth cuisine. The only Cantonese dish we've had, however, was somewhat of a disappointment--underwhelming and overpriced. Most Sichuan dishes are fairly large in portion and in my view strike a reasonable balance between authenticity and catering to local preferences for less numbing, spicy and oily food. The menu is somewhat less imaginative, but a few dishes might be surprisingly well executed. Say, for instance, hot and sour chilli fish skin, or Sichuan dried bean curd are both excellent appetizers that are not usually found elsewhere. Spicy Sichuan-style Mandarin Fish was similarly a delight, and come in small and large portions, perfect if you’d like to try a couple more dishes. A typical meal might come down to roughly $400-700 per person (alcohol excluded). The waiter is so rude to us!!! Don’t want to come back again. We booked this restaurant via booking platform which said that we need to return the table after 1.5 hour and I totally understand the rule. However, the waiter asked us to leave ( in a very rude way) when there was no one lining up and many tables available in the restaurant. I don’t understand, how could you be so rude to your customers? Why do you want your customers to leave your restaurant when it is not necessary? Isn’t it internationals manners to treat your customers nicely? 繼續閱讀

《生活·日嘗》- 川粵時光水煮魚無得輸‼️ 期待已久的川菜,就放縱一下食辣野~ 今晚食左4樣野首先上嘅係佢個水煮桂花魚,真係好正🐟,辣得黎又好鮮甜,仲有好多配菜,吸晒啲辣椒同埋魚香,都好入味,我都好少連皮食一樣野啦!😋佢個紅油炒手都有驚喜,自製醬油值得一讚,擔擔麵又好煙韌,佢個花生醬味好重,入口先甜後辣,食整都唔厭🤩 最後食埋個樟茶鴨醬,個皮仲係脆㗎,飽到一個點😌😌埋單每人$300,真心值得推薦🙂 繼續閱讀

誤打誤之下我哋試咗呢一間川粵菜大家無期望會好好食但係又出奇地好味喎剩係食前菜都令我哋好滿意,例如豬耳切得薄薄的非常爽脆,夫妻肺片,一個涼拌粉同海蜇頭都食到我哋津津有味主菜好似酸菜魚,辣子雞,豆腐腦我哋都覺得唔錯。餐廳環境亦都舒服。如果離開銅鑼灣不妨一試 繼續閱讀

First of all, the environment of the restaurant is neat and clean. Seats are comfortable. Glass window makes the room feels bright. The quality of the Sour and Spicy fish was authentic - very similar as the ones we tried in Mainland China. The beef was tender. Highly recommend these two dishes! However, regarding the Dandan noodle and dumplings, it is not spicy enough, even sweet. It is not acceptable when you call it Sichuan food. Overall dining experience was good.
