虽然吃碗面得人均一百起步,但好汤好面值得一次,全港太少有这样有追求的创作型面馆了,不愧大围总店连年都入选必比登。·首先是汤底的细琢,会用不同的食材去熬高汤,并根据浓稠度选择搭配阳春面或扁面,而不是一味高汤贯穿所有,鲜浓的汤底让你忍不住端起碗来喝个干干净净。·第二是食材的讲究,鲍鱼海参鱼肚蟹肉鸭肝风干火腿……这些一般不会出现在面馆的食材,却是好汤好面菜单上的常客,有的还会标出产地和等级。·第三是源源不断的灵感,虽然就是一碗面,但这里拿出了想让你吃到各地风味的信心和诚意。从川味到日式到佛跳墙,这些天马行空的搭配在其他面馆哪里找啊?!·【海龍皇湯】藍蟹肉/海蝦尾/北海道魷魚/北海道刺身帶子/廣島蠔肉/蝦頭油/皇湯·【棉花雞】日本地雞肉/魚肚/花菇/雲腿絲/高湯·【蕃茄蛋牛】美國頂级牛小排/燉牛舌/煎太陽蛋/蕃茄高湯·海龍皇湯是热烈的鲜,与面条共同被高汤滋养的是海鲜的盛会。棉花鸡是温醇的鲜,吸饱了汤汁的食材最大程度散发着松韧软。·蕃茄蛋牛的汤底我觉得可以再少点油,不过也还是顶配版的番茄牛肉面了,吃面加个煎蛋,总是能让满足感再多几分。·环境和服务都挺不错的。

剛剛去完旅行,沒有機會好好進補,於是和朋友去了銅鑼灣的一間餐廳,順便交換手信。海龍王湯$146我特意來這裡就是為了這碗湯!湯底濃郁,味道非常重,喝一口就能感受到蝦殼和蝦頭的海鮮鮮甜味,裡面還有海蝦和帶子等多種海鮮。搭配彈牙的上海麵,真係好好掛湯。棉花雞$108這碗棉花雞湯就清淡多了,主要是用冬菇、魚肚、金華火腿和雞熬製的。湯色清透,魚肚特別嫩腍,吸滿了湯汁,最後把整碗湯都喝光。涼拌麻辣手工豆腐$39豆腐切得很薄,搭配熱麵,一冷一熱,口感相當有趣。不過覺得醬汁可以再多一些,這樣會更好味。

由佢大圍舖開張以嚟,一直收藏左呢間「好湯好麵」,終於有機會一試,心情少不免充滿期待!經過一輪內心掙扎下,最後揀咗蟹黃豬豬麵,一上枱已經被嗰陣濃郁嘅香氣迷住,流哂口水🥢湯底— 第一啖湯落肚,瞬間暖入心!湯非常夠熱,係嗰種燙嘴嘅程度🥵 湯表面會見到牛油 浮面 ,濃郁嘅高湯鮮甜得黎又唔會過膩,每啖湯都充滿層次,既有龍蝦牛油嘅鮮美,又帶住豬骨熬製嘅甘香,口感順滑,令人忍唔住一啖接一啖。配料—蝦子 蟹肉 豬肉片 龍蝦牛油,蟹肉肉質嫩滑,吸收湯底精華,入口即化,完全唔會乾柴。蝦子點綴左整體味道,又唔會搶哂風頭,令每一啖都更有層次感,豬肉片層次分明。加上少量蔥花提味,令湯頭更加突出。麵條—預設左係扁陽春,麵煙韌適中,冇過淋亦冇過硬,吸湯能力極高,每條麵都好好咁掛住濃郁湯底。食落爽口之餘仲帶有彈牙感,令人每啖都回味無窮。啲湯飲到一滴不剩。整體感受—一碗麵就好似一場味覺盛宴,每個細節都恰到好處。由湯底到配料再到麵條,食完麵勁滿足。如果你係愛麵之人,真心推介一定要試試!我已經開始諗緊下次要試埋咩新口味,睇下仲有冇其他驚喜!😋🍜

I came at around 430pm so there wasn't too many people. The list of choices were amazing and I decided to Fish Maw Noodles.Although the price is slightly bit expensive, it is worth the price especially taking into account the amount of toppings. The focus of this shop was definitely the soup and the toppings. The noodles are good and remained springy despite I ate them quite late as there was so much toppings. The fish maw was large though it was too slippery for me to hold with my chopsticks to take a picture. There was so much meat as well that it was like eating meat rather than noodles. The soup was rich yet you can finish it with ease.The chilled tofu was pretty and the sweetness was well controlled. I felt the osmanthus could be a bit stronger but overall a nice dessert.Looking forward to trying their other noodles.

之前淨係食過大圍分店 今次去到銅鑼灣分店都係叫番棉花雞湯麵湯底濃度岩岩好 唔會太咸 一啖有少少湯配埋個麵 好好食麵既質感都岩岩好 唔太淋唔太硬棉花雞就正常 不過如果多幾舊雞會更好🙈🙈價錢較進取 不過間唔中食都好開心!
