Had a great lunch at Tin Long Hien on a wednesday afternoon. I had a noon reservation but i ate too much for breakfast, so called to change it. The person on the phone immediately assisted and moved it to 1pm. Upon arrival, the hotel service was phenomenal - giving directions, assisting with elevators, and the restaurant staff was exactly the same. 今天天陰陰,朋友生日挑了去Ritz Carlton 102樓天龍軒飲酒。早一星期訂枱忘了預訂window table ,幸好昨天看看open rice 大家留言立即轉到窗邊枱雖然今天天氣不太好,看到無邊際海景也感輕鬆愉快。打開menu ,價錢又真的挺貴,平均每款點心約$90一碟,不過來了也不打算吝嗇。我們點了蝦多士、黑豚叉燒腸粉、蝦餃、冬菇燒賣馬拉糕、蛋白炒飯同上湯莧菜。每款點心真心做得很好,也嘗到選用上等材料味道,尤其是叉燒腸粉值得下次encore .還有推介點xo 醬,不喜歡太咸又太油膩醬油的我就喜歡這乾身口感。慢慢品嚐看看風景談談天過了一個愉快下午。

打開menu ,價錢又真的挺貴,平均每款點心約$90一碟,不過來了也不打算吝嗇。

我們點了蝦多士、黑豚叉燒腸粉、蝦餃、
冬菇燒賣馬拉糕、蛋白炒飯同上湯莧菜。每款點心真心做得很好,也嘗到選用上等材料味道,尤其是叉燒腸粉值得下次encore .

略甜的醬汁包裹著原隻鮑魚,上面有燒鵝片及木魚絲,以酥皮撻盛載。底層酥香可口,

這個是一客一隻的龍蝦餃,size比蝦餃大—倍多,厚薄適中的外皮呈橙黄色,面是結實彈牙的龍蝦肉餡,其實吃來味道跟蝦餃相去不遠,只是口感的對比則較強烈,可以一試。

壽桃

訂座的時候—併訂好的壽桃,在我們order甜品之後送上,給母親一個驚喜。雖然壽桃表面只有淡淡的粉紅色,而且裡頭蓮蓉餡料較少,幸好吃起來仍不失鬆軟香甜,最重要是生日吃壽桃寓意健康長壽。

居高臨下的美景,賣相精緻的點心,加上貼心的服務,如此種種,米芝蓮二星美譽實至名歸。

唯一美中不足是假日中餐廳的午茶分兩個時段,11:30-13:00及13:30-15:00,短短的個半小時的確有點急趕,未能完全慢下心情好好享受這段「飲茶」時光。

儘管如此,這一天我還是能夠隱隱約約感覺到個性內斂的母親從頭到尾都是喜滋滋的好心情,希望她真的喜歡我為她安排的這餐生日茶聚。

哇! 哇! 哇! 唔知以為自己做左富2代,從未食過咁正既中菜,所有野都超好食,仲要環境超舒服,服務更加唔駛講啦! 本來落地玻璃有夜景,可惜當日超大霧,不過當食物一到枱,已經咩都唔理,只係掛住留意d食物,不過有返咁上下質素,價錢同樣有返咁上下,唔好講咁多,去片啦:

屋企人團年,一行人訂左天龍軒廂房午餐,一於雞年食餐好,寄望新一年有好開始!廂房位於餐廳最尾處,自成一角,可以獨享海景!樓底超高!盡顯架勢!房入面仲有一個樓底咁高的酒櫃,影相做背景一流!黑豚肉叉燒,好大舊,肉質好冧花膠雞湯餃子,湯底清甜,餃子皮很薄,不過略為普通木魚鮑魚酥,特別的配搭,酥皮很脆,鮑魚很入味,值得一試!花雕酒蛋白蒸蟹鉗,一定要點!侍應一拎入房已經傳入很大陣花雕酒白,蛋白滑如豆腐,又充滿花雕酒香,蟹鉗大大件又不會'鞋口',必點!另外點了炸釀蟹蓋,雖然有好多蟹肉絲,但撈埋沙律醬喺入面我就覺得麻麻地酒砵焗蠔,又係必點!難得大大隻蠔食完冇漏的感覺,醬汁入味!最後點了蝦子海斑海參煎黃麪,又係推薦!一睇材料就知富貴高級,麫脆,足料,魚滑,正!記住去廁所對出走廊影相,好有架勢呢!

It was not very easy to get a table at the two Michelin starred Tin Lung Heen these days, at least not during the weekend but I wasn't going to leave no stone unturned. These pineapple buns were so tasty. Always love them when they're crispy on the outside and moist inside. I had a little trouble tasting the char siu because of the flavorful sauce but yes that was a solid start.

Steamed golden shrimp dumpling with bamboo shoot (龍軒筍尖蝦餃) ($90) - I never go yum cha without my har gau so that was a no-brainer for me. The bite sized shrimp meat was nicely wrapped in a thin and delicate wrapper while decorated with the ubiquitous gold foil on top. Pretty decent but somehow not as good as it was last time.

Soup dumpling with fish maw and bamboo fungus in supreme stock (龍軒瑤柱花膠灌湯餃) ($115) - One of my favorite dishes here. The broth made with fish maw, bamboo fungus among other quality ingredients was so good that I could never stop drinking after my first sip. Don't get me wrong, the dumpling was good too but make no mistake about it, the soup was the focal point of the dish.

"Dragon and phoenix" pork dumplings (龍鳳燒賣皇) ($102) - Okay, I made that English name up all by myself coz it's not printed on the menu. But that's a direct translation from the Chinese name.

This is pork dumpling done two ways, in a nutshell - Steamed pork and scallop dumpling with coriander and steamed pork and prawn dumpling with caviar (香茜帶子、黑魚子蝦球).

Braised e-fu noodle with fresh abalone, ginger and spring onion (薑蔥鮮鮑燴伊麵) ($262) - Everyone seems to want a bit of noodle to go with all the dim sum so I just randomly picked one out of the list. Braised e-fu noodle is always a safe bet since it meshes well with pretty much anything (in this case, fresh abalone).

Dessert was complimentary thanks to the good guys here. I always loooove their chilled sago cream with mango and pomelo (楊枝甘露) so that was just the perfect icing on the cake.

這裡不便宜,但以如此環境及食物質素,就絕對物有所值。蝦餃外皮夠煙韌,蝦肉爽甜新鮮,而且仲有五粒,冇得彈菠蘿叉燒包咁多個點心,最失望是這款。雖然菠蘿包裏面真係有菠蘿,但其實整體味道唔係好夾和牛腸粉比較特別係用鮮和牛粥腸粉,和牛很嫩很鮮味叉燒西班牙黑毛豬,肥瘦適中,肉質很淋,入口有溶化於口中的感覺。厚切可以大啖大啖肉蝦多士蝦夠鮮夠彈,多士一點油膩感覺都沒有,食咁多件都唔會覺膩灌湯餃湯底鮮甜,用料矜貴,有花膠、蟹肉等

weekday真系令人覺得時間過得好慢吖,上班似條蟲,落班就似條龍,都無知點樣講自己先岩,落班之後時間就開始飛快咁過,成日都一下子就過咗成2粒鐘。七點左右我地系天龍軒度,最近真系十分之缺能量,為自己點咗一個東坡肉,希望可以加下油!天龍軒嘅東坡肉好似藝術品咁,造型就好藝術,味道更加之好食喇。東坡肉肥嘅地方就感覺好霖,而且東坡肉有小小甜,顏色非常之深,暗色調,關鍵系都無咩油,仲有瘦嘅部位我更中意食,好好味。我地仲點咗一個燒買,幾入味蝦,都幾唔錯下,一份裡面有幾隻吧,價錢還可以。東星斑咧,我就感覺唔出有腥味,去腥嘅方法實在係太強大辣,魚肉好嫩喔。

Yes, my little nugget is finally 100 days old this week! I decided to throw him a small party inviting all our close friends and relatives along but first up, we needed to come up with a venue.There's obviously no such thing as a perfect venue but we wanted something closer to home so the nugget doesn't need to travel very far for the party. Thanks to the help of the team here at Tin Lung Heen, we had a wonderful time. The never-ending parade of delicious dim sum started with this baked crab meat tart with onion and cheese (洋蔥芝士蟹肉撻). The combination of crab meat, onion and cheese was sweet and flavorful, perfectly complementing the crisp, flaky pastry.

Pan-fried bean curd sheet with garoupa, shrimp and fine herbs (香草星斑蝦肉腐皮卷) was another beautiful bite-size dim sum with garoupa and shrimp harmonizing each other perfectly under that crispy sheet of bean curd.

And who can resist the house specialty - barbecued Iberian pork with honey (蜜燒西班牙黑豚肉叉燒)? I have always got a soft spot for fatty char siu (肥叉) in my heart and this is brilliantly executed. Tender and succulent. I certainly won't mind having an extra piece.

But the star of the afternoon belonged to this soup dumpling with conpoy and fish maw in supreme stock (龍軒瑤柱花膠灌湯餃).

We are all accustomed to seeing the dumpling(s) as the focal point of this famed Cantonese dish but not this afternoon though, as the supreme stock and fish maw have totally stolen the spotlight. The soup really blew me away with its richness, sweetness and volume. I thought the dumpling, working well in a supporting role this time, also delivered. Like I said, it's the best dish of the afternoon without a question.

At this point, we have switched back to dim sum and it's another trio which has come to impress us. I wasted no time checking out the steamed golden shrimp dumpling with bamboo shoot (龍軒筍尖蝦餃) in the middle and it was again perfect. Perfect in its bite size the way it should be.

But that was just the beginning. I thought the steamed pork and scallop dumpling with fragrant coriander (香茜帶子燒賣皇) was even better with the delicately sweet scallop leading the charge in this one. I tampered with the seasoning a bit by adding some XO chilli sauce on top and the result was heavenly!

Equally enjoyable was the baked barbecued pork bun with almond flake (西杏酥皮焗叉燒餐包), a dish that I thought Mott32 does a marvelous job with but this one managed to top it with the almond flake topping. Another masterpiece.

Finally, we are ready for our main dish and it's a pair of sautéed prawns skewed with chopped Jin Hua ham and vegetable (金腿碧玉簪蝦球) taking centerstage. The bouncy texture of the prawns was very nice and the savory flavors were wonderfully enhanced by the bits of finely diced Jin Hua ham.

If there's one area that needs a bit of reinforcement, it's probably the dessert department. This trio of sweetened red bean cream with vintage tangerine peel and lotus seed (陳皮蓮子紅豆沙), chilled hawthorn and preserved plum jelly (山楂話梅一品糕) and coconut red bean pudding were drawing mixed reviews from the crowd. Personally, I'm giving thumbs up to the coconut red bean pudding (left) and thumbs down to both the red bean soup and hawthorn plum jelly.

It was an afternoon to remember. The incredible view from 102nd floor, impressive parade of dim sum, impeccable service and of course, the company of our beloved ones. I hope to do this all over again for the nugget's first birthday.

Special Thanks to my foodie friend Fishie who is kind enough to lend me some of her food pictures. Most of mine looked awful but I do have the perfect excuse as I was too busy flying around the place entertaining our guests.

係高空一邊欣賞美景一邊品嘗點心絕對係意見賞心樂事。天龍軒不但環境優雅,而且食物賣相亦做得十分精緻。我叫左幾款我比較中意食既幾款點心,其中我比較喜愛鮑魚燒鵝酥, 特別之處是用紫菜包住食,而且醬汁味濃,餅底酥脆,可惜燒無咩鵝味道。呢款蝦餃賣相精美,面頭貼上金光閃閃既金薄,裏面新蝦新鮮爽口,但皮有點偏厚。另外呢款叉燒包外脆内軟,裏面叉燒同醬汁分量恰當,而且上菜時仲熱辣辣,好好味~ 巨型燒賣有兩款蝦和鮑魚,一籠只有兩粒,用料新鮮,不過如果多於2人的話分量的確唔係好足夠。天龍軒屬於高價位點心,我覺得食物質素合理,而且再加上可以欣賞維港美景,尚算ok。

話時話,我以前因為經濟多方面的原因,所以一直都覺得無可以允許自己太過浪費金錢系食飯尼一方面,今次系因為嫲嫲生日,我們決定去天龍軒度慶祝一下。天龍的位置還是很容易找到的,我們因為知道嫲嫲平時不敢食很油膩的東西,但係都還是點了東坡肉,因為尼個對佢有好大嘅意義,東坡肉雖然一份不多,但係口感好,連嫲嫲都話天龍軒嘅東坡肉很好味,仲話味道非常正宗,連平時無點食肉嘅細妹都話不怕油膩,甜鹹適中。西班牙黑豚肉叉燒,本身系不知道什麼肉質來的,後來經過介紹先知道原來系用黑豚肉做成的,肉質和口感都覺得是超一流的,讓我們幾個真係食到上癮吖,果然價錢真係王道,平時食嘅叉燒真係無得俾咯,黑豚肉叉燒認真唔錯。海膽羹聽人介紹說很正,果然是沒有令我們失望呀,因為系用海鮮切丁嚟做主要材料的,仲有其他海鮮的搭配,在味道上面可是十分夾吖,而且海膽也是令我覺得好新鮮。
