尖沙咀K11 MUSEA商場8月新開,位置即舊時的新世界中心,我第一時間走入去看看,商場雖然行高格調,但商舖鋪位三尖四角,行人通道時窄時闊,指示不足,加上商場營造深海境界,燈光佈置昏昏暗暗,初步商場感覺普通。由於新開張,每間食店都排長龍,拉麵店多賀野亦不例外,但由於隔壁是一間咖啡店,為免等候人龍阻擋人家咖啡店的大門,於是排隊隊伍要分開兩截,前半截近本鋪,後半截要在電梯旁邊。誤排或插隊的情況不時會發生。我一個人,下午5時45分到達排隊,等了約半小時才可入座。有個情況要講講,就算店內有兩至三個單丁空位,若果你仍未排到隊頭,你表明自己是一個人來,店方都只會空著座位,不會叫你上前入座。多賀野在日本米芝蓮獲得多年餐廳推介,在日本類似食飯喇的評分平台有接近4分的高分。香港的多賀野經營權交給嚐高美集團經營,亦即是樂拉麵Rakuraku Ramen同一間母公司。香港K11這間店子舖面面積約1600平方呎,租約三年,網上資料顯示投資額為550萬港元,可以容納60個座位,圍枱及方枱區有園林景觀,吧枱座位則靠緊半開放式厨房。由於我一個人,被安排坐在吧枱座位,侍應給了一杯半温的水,筷子是一次用木筷子,特别之處是筷子兩端都是削尖了,無論手握筷子任何方向,都可以下筷嚐菜。牙簽放在木製企身豬形牙簽筒。醬料用瓷器盛載,包括了豉油、七味粉及黑醋。我貪吃,事先午飯只吃了一碟腸粉,到了晚上肚餓所以我連點了豚鴨沾麵及栗國塩味拉麵,兩碗麵連加一服務費是$326,米芝蓮級數確實價錢非凡。由於我坐吧枱位置,可以看到厨房之餘亦可以看到出菜位置。我肉眼看見厨房內有六至七位廚工,全部都是用粤語交談,我沒有點炸物小食,但眼見炸似乎賣相非常不錯,很多客人點選。侍應反應快但技巧未熟練,走來走去,日語一三一四歡迎詞不絕於耳。多賀野的厨房運作我認為很像一燈,厨子視乎那一刻哪種麵款多客人點選,厨子就先做哪種,所以會見到出菜處一次過連續出五至六碗同款拉麵。這種做法可以提高效率,出品較快亦滿足大部份客人需要,但缺點是先到的客人未必先得到食品。我的豚鴨沾麵約等候了二十分鐘,栗國塩味拉麵則兩分鐘即到,兩碗麵我是分開兩次叫,非一坐低點菜就點齊兩款麵食。豚鴨沾麵價錢並不便宜,$168未計加一服務費一個沾麵已經是外出兩碗拉麵的價錢,份量適合男仕,味道可以評為良。先說極太沾麵麵條,麵條寬度約有2.5亳米(12番手),份量比我預期多,自家製冷沾麵有小麥粒,當沾上沾汁口內唇有點點麥香,但由於麵條有小麥粒,加上麵條未煮透仍帶硬,食時會感到有麵質有骨,建議麵條宜放在沾汁內多一點時間,那就更加美味,份量和口感我覺得滿意,掛汁度很高,吃得痛快。沾汁亦是頗討好,沾汁濃郁亦帶有層次感,香港很多拉麵店製作出來的沾汁都可以不加湯直接飲用,這的沾汁較濃稠而非太咸,一定要加湯飲用。沾汁由豚鴨雞魚四種材料混合製成,每一種材料都已經獨當一面,多賀野成功是將四種材料混合為一,入口不錯之餘仍分得出四種肉類的味道。可惜的是沾汁內的鴨肉份量稀少,似乎只用來熬湯汁。半熟蛋蛋黃很晶瑩,蛋白和蛋黄白黃分明,半熟蛋有5.5厘米長,蛋味一般。叉燒只是配角,雖肥瘦清晰但沒有特色,約長6厘米,表層輕輕炙過。食完豚鴨沾麵仍覺胃部有點餘位,多吃一碗栗國塩味拉麵。拉麵條是細麵條,寬長大約1.6厘米(18番手),自家製作質感較粗,麵條未算滑口。栗國海塩果然特别,淡淡的海水鹽味貫入口內,舌頭就像海中的鯨魚在暢泳,入口自然,感覺柔和,我整碗盬湯喝光,蛋筍叉燒紫菜只是閒角,不妨一試,較適合女仕,如像我大胃王,宜先吃塩味拉麵再吃豚鴨沾麵。總體印象我認為香港這間分店只是給一點多賀野的印象,始終用香港代理去開店,只見到其外形,但不見其實在,製作一般服務一般,若衝動一點去日本總店再研究如何好食。香港店我會再計劃光顧多一次,看看塩味拉麵再加醬油味感會如何,還有炸和蟹餅,但價錢始終不是一般拉麵愛好者可以承擔。 繼續閱讀

香港人一向生活忙碌,所以有時放假都會喜歡去逛下商場,買點小禮物犒賞一下自己。講到近期最多人談論嘅商場,相信非 K11 Musea 莫屬。其實自從這個商場 8 月尾正式開幕後,這晚還是首次到訪,原來整個商場設計是以大自然及城市景觀為背景,入面除了有多個本地及國際品牌進駐外,還有不少特色餐廳。行完商場,又是時候去搵食。今次揀咗間來自日本的人氣拉麵店「多賀野」。據說麵店曾經連續 4 年獲得東京米芝蓮推介,亦曾在日本食評網 Tablelog 奪得 3.99 高分,所以吸引了無數海內外傳媒爭相報導。因為怕人多,特意揀了個早段時間到訪,所以不用排隊便可直入。店舖地方不算很大,但以拉麵店來說,也絕不算小,裝潢風格優雅。打開餐牌,餐廳主要供應 4 款湯麵和 3 款沾麵,另外亦有定食、多款小吃、飲品及雪葩。我哋揀咗多賀野醬油拉麵 ($128) 同 3 款小食,據說醬油拉麵是餐廳嘅招牌作,配料除咗有三大塊叉燒外,還有一隻溏心蛋、筍、蔥同紫菜等。先嚐一口湯底,醬油味很濃,但濃得來不會好鹹,清澈又不油膩。拉麵每日於店內新鮮自家製作,咬下去相當煙韌,而且掛湯能力頗佳,細嚼慢嚥後更散發出陣陣麥香。叉燒味道唔錯,不但肥瘦均勻,而且入口有油脂香,如果可以稍加火炙,應該食味會更佳。溏心蛋亦很有水準,夠曬流心,蛋黃醬味道很濃,而且蛋白亦很滑。小食方面,一口氣點了三款,包括有自家製蟹肉薯餅 ($68)、自家製黑胡椒炸雞及日式煎餃子。薯餅一客有三個,每個外形都脹卜卜。一啖咬下,外層的炸衣好脆,內裡非常幼滑,加上入面的蟹肉,入口帶啖啖海水味,十分鮮甜,但又不失薯仔香!至於自家製黑胡椒炸雞  ($52) 食味亦不俗,外層的炸衣看似很厚,但原來咬下去非常脆口,入面的雞肉很嫩滑,有肉汁,一點又不油膩。不過個人覺得最大嘅亮點就是伴吃的他他醬,入口帶黑椒的微辛,令炸雞倍添滋味。日式煎餃子 ($58),餃子一碟有五隻,隻隻外形都好飽滿,外皮煎至金黃帶焦色。咬開可以清楚見到入面嘅餡料,菜多肉少,非常健康,正合我意。肉餡鮮嫩兼富肉汁,吃時建議蘸一點餃子汁,食落感覺會更加濕潤,好吃之餘,又更惹味。總括來說,這間拉麵店環境不俗,由拉麵以至小食,味道也挺不錯,加上餐廳來頭不小,如果是繁忙時間到訪的話,相信排隊是免不了的。 繼續閱讀

以招牌醬油拉麵及人氣熱賣的鹽味拉麵風魔東京的多賀野,早前終於進駐K-11 MUSEA這個新開的商場. 憑著清透而層次豐富的湯頭,每日新鮮自家製的拉麵,連續奪下多年東京的米芝蓮殊榮,成功吸引大量食客的朝聖。衝著這殊榮,當日,足足排了大半小時才輪到我們。栗國鹽味拉麵 - $128據稱每日耗費長時間熬製成的高湯湯底,混合沖繩海鹽調製成的鹽味醬汁,看似清澈,入口後卻有著豐厚、多層次的味覺感受。麵條相對於其他餐廳,比較幼身,麵條柔韌性夠好,咬落有嚼勁,不糊口,帶有少少麥香。薄切的日式叉燒,入口感油香十足,肥而不膩。芝麻辛辣拉麵 - $138相對於鹽味拉麵的清淡,這款中日混合版的辛辣拉麵,就是對味蕾的衝擊。四川版的日式拉麵。味道較為濃郁,帶少許嗆喉,可以一試。吉列炸蠔 - $78大大隻炸蠔,熱辣辣,入口酥,脆,鹹,香,咬開還有汁,極力推介,必食。鰻魚定食 - $148肉質豐厚的鰻魚,入口就化開,滑嫩軟糯,油脂香味十足。整體來說,價錢相對於一般街外拉麵來講,比較貴。但唯一這個高級的商場,還可以接受,性價比合適,下次可以再來,試試沾麵如何… 繼續閱讀

Takano Ramen (多賀野) is more than just another ramen shop from Tokyo. It's legendary. In Tokyo it's only open until 2 PM and there are queues at least 1 hour long. It's a small shop run and owned by a husband and wife for the past 20 years. Mentioned in the Michelin guide for 4 years running, top 10 ramen shops in Ramen Walker and the top 1000 restaurants in Tabelog with a rating of 3.9, this is more than just a regular ramen. And we had to go try it out!Located in the new K11 Musea, we arrived on opening day at exactly 6 PM and were the first diners in. When we left, an extremely long line started.The interior is a far cry from the original Tokyo shop. It's beautiful and chic. There is eve a few tables with a tree in tmiddle.The noodles are all made in house.The menu is also beautiful. No vending machine ordering here. Menu is in English and Chinese. They offer 7 different types of ramen.They also serve snacks.Boyfriend decided to get their signature. The Takano soy sauce ramen ($128). The broth had a delicate balance of pork and chicken with hint of seafood. It was not too salty and rich in flavor. Not too oily as well. The noodles were fantastic. Chewy with a good bite.  One of the best noodles I've had in town. The egg yolk was beautifully runny and a bit on the salty side. The only let down was the charsu which was a bit rough on the tongue.I had the chasu and duck tsukemen ramen ($168). This included duck meat that was found in the broth. Unlike other places that offer tsukemen, this broth wasn't overly salty. It was still concentrated but not too salty. But after I finished my noodles, I asked for a dashi broth to dilute to drink it and it became even better. Somehow adding the dashi much improved it and I drank all the soup. The noodles were definitely the star here. Wonderful and chewy. Great texture and bite. Even the bamboo shoots were quite good and I rarely rave about the bamboo. Again the only disappointment was the charsu. They were definitely not one of the better ones I've had.Over all, the ramen was excellent. Though pretty expensive at near $200 a bowl. Compared to Tokyo where it's only ¥700! Service of the ramen was extremely slow but we were warned ahead of time by the staff as they explained it was their first day and still working out the kinks. They apologized ahead of time for the inconvenience. This was forgivable and appreciated for the notification. I'm still pondering if I'll be back. I love the food and service was excellent. But wow ... expensive. I think the price deters me a bit from returning. But I may ... maybe. 繼續閱讀
