Gyojasang is a Korean restaurant in Causeway Bay.Gyojasang has outdoor tables like other restaurants along the food street. And sitting outdoor can be a good idea in this chill but not too cold weather. We are opting for indoor though, as it is equally nice. We start off picking a lychee soda ($48) and a lychee black tea ($36). Then comes the gimbap with sea urchin ($380). The gimbap has a radius that is closer to the typical small Japanese sushi rolls than the normal Korean gimbap. The gimbap is only serving as a vehicle, and it is filled with tartare beef, topped with sea urchin and sprinkled with caviar. In other, more patriarchal, restaurants, waiters may contrive to persuade you to eat the whole thing in one bite, so that you can enjoy the complexity, etc. We are secretly glad that this restaurant has no such standard operating procedures for our palate. The red, orange and green colours of the raw beef, urchin and caviar vertically organized in a cylindrical tower are simply a fascination to look at. Then comes the grilled 1++ Hanwoo ($858). The waiter brings over 16 rolls of 1++ Hanwoo beef wrapped with scallion in them in a big metallic plate. Bringing a gas oven to our table, the waiter cooks the beef in front of us. By memory, 1++ is the highest grade in Korean beef, and should be equivalent to the Japanese A4 or A3 in the beef marbling score, if you are to be scientific. The white marbling is just beautiful. And seeing the beef being cooked and changing colour, listening to the sizzling sound and smelling the beef amid the vapour is pure synaesthesia and joy. As expected, it tastes great. We also try the pancakes ($188). The kimchi flavour is decent. What is most remarkable is the seafood pancake. It overflows with seafood and is thick and chewy. To our surprise, we will actually rank it as high as the urchin and Hanwoo 1++. How can we leave without trying the fried chicken ($178). We pick the sweet and spicy flavour and the cheese flavour. The chicken is slightly smaller in size compared to average. Yet it is quite juicy. The appetiser burrata ($145) with kimchi finally comes. The inside of the burrata is not flowing enough, but the surface is chewy. Mixing it with kimchi is a pleasant surprise. We finish off with the pitaya cheese cake ($72), which is the Japan’s LeTao style with pitaya flavour which is kind of rare. It gives a nice finishing touch.
