Lately I have been trying to have sushi at least once a week. Had lunch at Fuku-suke today, saw some interesting in season specials on the sushi list (sakura ebi and ark shell for example) so elected to go with the sushi instead of the chirashi.First the decor, the counter seat is very nicely done. First the decor, the counter seat is very nicely done. The quality and finish of the wooden counter is simple but beautiful, much better than many other comparable sushi bars.

While I understand that lunch is not a fair representation, but overall I felt the food is lacking in some aspects.

Since sushi is all about the rice, the temperature of the rice is the main problem as it is almost at room temperature. Not sure why the rice is cooler than normal given I was there right when it opened at 12pm. The seaweed is also slightly soggy, lacking the crispy-ness that compliments things like uni.

Onto the fish, I noticed a lack of silver skin fishes (Aji/Kohada/Saba etc.) on the sushi list, not sure why that is the case. The chutoro is solid, the two tiny cuts Suzuki san made on the chutoro piece was a good call. The ark shell trimmings and sakura ebi was good as well. The botan ebi and uni I felt was disappointing - was not able to taste the sweetness that makes these two things memorable.
