I think, sometimes, people to judge a restaurant' service has to be fair. If they are asking something unreasonable, it is not considered as bad service when they don't get what they want.In fact, restaurant offers set is for people who could take the set as it is. If someone doesn't like anything inside the set, he should make separate orders. I guess that the restaurant will be glad to do that. So, I think this comment is not a fair one.
