Many people said that it is much more cleaner and safer for a sushi chef to wear gloves when preparing sushi/sashimi. This, however, is the very opposite case.When I got there at 10:30 pm, there was still a small crowd waiting for seats outside, but I don't have to since I was only one person. When seated, noticed that all the chefs wore gloves. Whether they were preparing rice, cutting fish, pressing sushi, washing pans, picking up dirt from the floor, opening and closing cabinets, etc etc.

Whether they were preparing rice, cutting fish, pressing sushi, washing pans, picking up dirt from the floor, opening and closing cabinets, etc etc. The worst part of it was they never wash their hands/gloves afterwards. Imagine, if you were not with gloves, and if you have something on your hand, you would notice and wash them off, but the problem with gloves is that you do not feel anything on your hands. The chefs wore the SAME pair of gloves for the whole evening without changing them.

haha.....wonder how many people would got sick????

I only had an order of hirame sashimi and I lost my appetite totally and called for my bill and left.

Conclusion....wearing gloves would only be clean provided if you change them often and wash them as if your own hands.
